These will be a big hit at Halloween - sticky, crunchy and chewy in one bite

Yield Makes 16 squares or 32 bite-size chunks

Number Of Ingredients 9

150g dark chocolate , broken into pieces (70% cocoa solids is good)
100g unsalted butter
4 tbsp golden syrup
100g Rice Krispies cereal
50g dried blueberry
50g dried cranberry
100g mini marshmallow
50g white chocolate , broken into pieces
jelly snakes and bugs, to decorate

Steps:

  • Line a 20cm square tin with baking parchment or cling film. Place the dark chocolate, butter and golden syrup in a pan over a low heat and stir until melted.
  • Put the Rice Krispies in a large bowl and mix in the blueberries, cranberries and marshmallows. Stir in the melted chocolate mixture until everything is well-coated. Spoon the mixture into the tin and spread out evenly. Chill in the fridge for an hour until set (or make the day before and chill overnight).
  • Remove from tin and peel away paper or cling film. Using a sharp knife, cut into 16 squares or 32 bite-size pieces. Melt the white chocolate in a small bowl over a pan of barely-simmering water, or in the microwave on High for 1 min, stirring half way. Using a teaspoon, drizzle the white chocolate over the squares. Scatter with the jelly sweets, then allow to set before piling onto a serving plate. Keep in an airtight container for up to 2 days.

I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

Number Of Ingredients 11

2 tablespoons butter
3 eggs
1 cup flour
1 cup milk
1/2 teaspoon salt
1 teaspoon baking powder
1 lb monterey jack cheese, shredded (Sometimes I use jack cheese with jalapenos)
4 cups spinach, fresh chopped, cooked and drained very well (I use bagged baby spinach, no washing & cooks in 2 minutes)
3 -4 tablespoons onions, minced
1/2 teaspoon mixed Italian herbs
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.
  • Beat eggs.
  • Mix flour into beaten eggs.
  • Stir in milk, salt and baking powder.
  • Add cheese and spinach, mixing well.
  • Add onion and seasonings, stirring thoroughly.
  • Spread into baking pan and bake at 350 degrees for 35 minutes.
  • Cool 30 minutes before serving.
  • Cut 6 across and 9 down for the perfect sized finger-food appetizer.

1 (10 ounce) package frozen chopped spinach
1/4-1/2 cup cup butter
3 large eggs, beaten
1 cup milk
1/2 lb sharp cheddar cheese, grated
1 cup flour
1 cup chopped onion
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Cook spinach according to package instructions and drain.
  • Preheat oven to 350.
  • Melt butter in a 9x13" baking pan (don't let it burn).
  • Remove from oven.
  • Combine remaining ingredients with spinach and mix well.
  • Turn into pan with melted butter, stirring in butter and spreading evenly.
  • Bake 30 minutes.
  • Cool 5 minutes.
  • Cut into large 3"x3" squares to serve as a side dish or 1 1/2" squares to serve as an appetizer.

Because of the whole wheat flour, I've always felt these squares were somewhat healthy. Maybe I'm kidding myself, but I definitely can say they're delicious, and perfect for any holiday goodie platter.

Number Of Ingredients 6

1 cup whole wheat flour (or use all-purpose)
2 cups oats (not instant)
1 cup brown sugar
1 teaspoon baking soda
3/4 cup melted butter (or margarine, but butter is best)
2 cups mincemeat

Steps:

  • Preheat oven to 375F; grease a 13x9 pan and set aside.
  • In a large mixing bowl, combine the flour, oats, sugar and baking soda.
  • Stir in melted butter and mix together until mixture appears crumbly.
  • Firmly pat half the crumb mixture into prepared pan, then cover evenly with mincemeat.
  • Sprinkle remaining crumb mixture over mincemeat and pat lightly.
  • Bake for 20 to 25 minutes or until squares appear golden brown.
  • Cool before cutting into squares.
