This Chocolate Puffed Wheat Square is a classic dessert recipe made with whole grain puffed wheat and a sticky chocolate sauce.

9 cups plain puffed wheat cereal ((not the sugar-coated variety))
2/3 cup unsalted butter
1 cup brown sugar (packed)
2/3 cup dark corn syrup
1/2 cup cocoa powder
1/2 teaspoon vanilla extract
a pinch of sea salt

Steps:

  • Measure the puffed wheat cereal into a large bowl and set aside.
  • Grease a 9-inch by 13-inch rectangular baking pan and line it with parchment paper (if desired).
  • In a medium pan on the stove, over medium-low heat, add the butter, brown sugar, corn syrup, cocoa powder, vanilla and salt.
  • Using a whisk, gently stir the mixture together as everything melts and comes to a soft boil.
  • Remove the pan from the heat and pour the mixture over the puffed wheat cereal. Stir everything together very well with a spatula.
  • Press the mixture into the prepared pan and place in the fridge for about 1 hour.
  • Slice and serve, or store in an airtight container at room temperature until ready to serve.

3 cups puffed millet*
1/4 cup plus 2 TB coconut butter**
1/2 cup honey
4 tsp cocoa powder
1/4 cup semi-sweet chocolate chips (optional)

Steps:

  • Line an 8×8 pan with aluminum foil and spray with cooking spray. Set aside. Pour puffed millet into a large mixing bowl and set aside. In a small saucepan, combine coconut butter, honey, and cocoa powder. Heat over medium, stirring continuously. When it starts to boil, remove from heat. Pour liquid ingredients over puffed millet and stir with a spatula. Add optional chocolate chips (they will melt) and stir well. Pour into pan and press down with a spatula. Take a piece of parchment/wax paper and spread over top. Press down hard with your hands or a hard object (like the side of a glass). Chill for at least 2 hours, uncovered, before cutting into squares. Bars should be stored in the fridge in an airtight container. Notes and Substitutions: *I used Nature's Path puffed millet, purchased at Bulk Barn. Any puffed wheat cereal could also be used if you're not avoiding gluten. **Coconut butter: Empty a bag of shredded, unsweetened coconut into a food processor and blend until it reaches the consistency of peanut butter. Scrape down the sides as needed. This takes anywhere from 5-15 minutes. Store it in the fridge and pop it in the microwave in 20-second intervals before using. It's also a great spread on pancakes. 1 teaspoon vanilla extract
3 ½ cups puffed millet cereal
½ cup chopped dried mixed fruit

Steps:

  • Grease an 8x8-inch pan.
  • Combine peanut butter, honey, and salt together in a large saucepan; bring to a boil. Add vanilla extract. Remove from heat and stir in millet and dried fruit. Press mixture into the prepared pan. Refrigerate until chilled, about 1 hour.

8 cups puffed wheat cereal
3 tablespoons unsweetened cocoa powder
⅓ cup corn syrup
¼ cup packed brown sugar
⅓ cup butter or margarine

Steps:

  • Place puffed wheat in a large bowl, and set aside. Grease one 9x9 inch pan.
  • Grease the rim of a medium saucepan to prevent boil-over. Place the cocoa powder, corn syrup, brown sugar, and butter or margarine in the saucepan. Cook over medium heat, stirring often until mixture comes to a full boil. Allow to boil for 1 minute, and then remove from heat.
  • Pour chocolate mixture over puffed wheat, and stir until puffed wheat is evenly coated. Using a buttered spatula, press mixture into the prepared pan. Allow to cool, then cut as desired. Wrap squares individually, or store in an airtight container.

3/4 cup margarine

1/2 cup cocoa
11 cups puffed wheat cereal

Steps:

  • Combine corn syrup, margarine, brown sugar, and cocoa in heavy sauce pan.
  • Boil for 5 minutes; remove from heat.
  • Add puffed wheat; stir.
  • Using buttered pans; pour mixture into greased 13 by 9 inch cake pan. Pat into pan.

1 cup boiling water
1 cup white sugar
1 cup shortening
2 eggs
1 ⅓ cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda

1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cook chopped dates and water over low heat until soft. Set aside.
  • Cream together sugar and shortening. Add eggs and beat well. Stir in flour, salt, baking soda, cocoa and vanilla and mix well. Stir in date mixture.
  • Pour in 9 x 11 inch pan and top with chocolate chips and chopped nuts. Bake until toothpick comes out clean. (10 - 15 minutes)

1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut
1 ⅔ cups sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
  • Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
  • Bake 25 to 30 minutes. Let cool before cutting into bars.

These are very healthy. When I make them I usually eat a large square for breakfast, and then eat a few squares every few hours as snacks. They actually taste like dessert, but they're healthy enough to eat for a meal. This is a revised recipe that I got from the back of Seven in the Morning cereal.

1 cup Grape-nuts cereal or 1 cup seven in the morning cereal
3/4 cup oats (I use old-fashioned, but quick oats would work)
1/2 cup whole wheat flour
1 1/2 tablespoons ground flax seeds
1 1/2 tablespoons wheat germ
1/3 cup pecans or 1/3 cup walnut pieces
1/4 cup mini chocolate chip (I use a little less)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
6 ounces nonfat yogurt (plain or flavored)
1 large egg
1 egg white
1/2 cup applesauce (1/3 cup olive oil can be used instead)
2/3 cup sugar
1 teaspoon vanilla

Steps:

  • Combine all ingredients through the cinnamon (cereal, oats, whole wheat flour, flax seeds, wheat germ, nuts, chocolate chips, baking soda, salt, and cinnamon) in a large mixing bowl.
  • Add remaining ingredients and stir to combine.
  • Pour into lightly sprayed 13x9 dish.
  • Bake at 350 for 20-25 minutes.
