Steps:
- In a cocktail shaker with ice, add the egg white and shake briefly to aerate the whites. Then add the whiskey, lemon juice and Simple Syrup with ice and shake well. Strain into 4 rocks glasses over 1 large ice cube in each glass, garnish with a cherry and serve immediately.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

Making its first appearance in the first published cocktail book, Jerry Thomas' The Bon Vivant's Companion or How to Mix Drinks, The sour evolved from the practice of adding lime juice to rum rations to prevent scurvy among sailors in the British Navy in the 1700s. At its most simple, the modern whiskey sour is simply whiskey, lemon or lime juice (or a combination of the two) and sugar. While there are a number of embellishments modern bartenders might add, the classic whiskey sour remains an iconic cocktail and one worth celebrating today

- In a cocktail shaker shake the bourbon, lemon juice, and sugar. Add the egg white (if using)and ice and shake until the drink is frothy and well chilled. Strain the drink into a sour glass (for the classic "straight up" version) or pour the drink and ice into a rocks glass. Garnish with lemon and a cherry.
FRESH WHISKEY SOURS
Steps:
- Combine the whiskey, lemon juice, lime juice, and syrup. Fill a cocktail shaker halfway with ice and pour in the drink mix 2/3 full. Shake for 15 seconds and pour into glasses. Add a maraschino cherry and serve ice cold.
- Note: To make the sugar syrup, bring 1 cup of water and 1 cup of sugar to a boil, and simmer until the sugar is completely dissolved. Chill before using.
HIBISCUS WHISKEY SOUR
Steps:
- For the hibiscus tea: Boil 4 cups water, then pour over the flowers. Let steep until room temperature. Strain.
- For the whiskey sour: Add bourbon, simple syrup, egg white and 3/4 ounce hibiscus tea to a cocktail shaker. Add ice and shake until frothy. Strain into a coupe glass with a maraschino cherry in the bottom.
COUNTRY WHISKEY SOUR
Steps:
- Add the whiskey, lemon juice, corn juice, agave syrup and egg white to a cocktail shaker without ice. Shake for 20 seconds to emulsify, then add ice and shake again for another 20 seconds to chill.
- Strain into a pre-chilled wine glass or mug, then 'cure' the foam by twisting (then discarding) the lemon zest over the top of the drink.
- Shave a super-thin slice of corn from the cob. Garnish the drink with the corn slice and a drizzle of bitters for a classy, colorful presentation, or sprinkle loose kernels and bitters on top for a country-chowder effect.

Steps:
- First, make the infusion. Tip the tea leaves into a heatproof teapot or jug and pour over 150ml boiled water from the kettle. Immediately strain through a fine mesh sieve into a second heatproof jug, discarding the tea leaves, so the tea doesn't become too strong. Add the vanilla and leave to cool.
- Pour 50ml of the cooled tea infusion into a cocktail shaker, then add the lemon juice, egg white, sugar syrup and a handful of ice. Shake until the outside of the shaker feels very cold.
- Strain the mocktail into an ice-filled tumbler, then garnish with a slice of lemon and a cocktail cherry to serve.
