Steps:
- Preheat oven to 350F.
- Cream margarine and sugar.
- Stir in eggs.
- Stir in vanilla.
- Combine flour, baking powder, and salt.
- Stir into creamed mixture.
- Stir in the milk until well combined.
- Pour into a greased and floured 13"X 9"X 2" pan.
- Bake at 350F.
- for 25 minutes.
- Combine lemon juice and sugar.
- Spoon over hot cake.
- Bake at 350F.
- for 5 minutes.
- Cut while still warm into squares.
PEANUT SQUARES
Peanut squares are a fabulous recipe made of a slightly chewy, airy cake frosted with vanilla frosting and rolled in chopped peanuts to coat.

Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Spray a 9-inch x 13-inch pan with nonstick baking spray containing flour.
- In a large mixer bowl , beat the eggs slightly. Gradually add the sugar, beating until the mixture is fluffy.
- Add the milk and melted butter and beat well.
- Stir in the flour, baking powder, baking soda, and salt. Blend in the vanilla. Spread the batter in the prepared pan.
- Bake the cake in preheated oven for 20 minutes or until the cake springs back when lightly touched in the center.
- Cut the cake into 2 1/4 inch squares and frost on all sides with the frosting, then roll in the chopped peanuts to coat. You can also roll the little frosted cakes into other types of chopped nuts. Try using chopped cashews or pecans. Toast the nuts first for more flavor and more crunch.
- Serve and enjoy!

- In a large bowl, beat the eggs, sugar and vanilla until thick and lemon-colored, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture. Beat on low speed just until combined. Beat in milk and butter. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Cover and freeze overnight., For frosting, in a small bowl, beat the confectioners' sugar, milk, vanilla and salt until smooth. Frost the top and sides of frozen cake squares; roll in peanuts. Place on wire racks to set.

Delicious served warm for brunch or a coffee break. No butter inside the cake, but after the cake is baked, butter is poured on top and then icing sugar is sprinkled on top of cake with cinnamon. It took me only 30 minutes for this cake to bake so make sure you check after 30 minutes with toothpick.

- Sift together flour, baking powder and salt.
- Beat eggs thoroughly. Gradually beat in sugar, beating at high speed until thick and light, about 5 minutes. Add vanilla. Beat in HOT milk. Using low speed on mixer, beat in dry ingredients, mixing well. Pour batter into parchment lined and greased 13 x 9 x 2 inch baking pan.
- Bake in 350°F oven 30 to 40 minutes or until cake tests done. Remove cake from oven; slowly pour melted butter over top. Sprinkle with confectioners' sugar, then cinnamon. Cool in pan on rack. Cut in squares to serve. Makes 12 servings.

FUDGY CHOCOLATE SQUARES
These deeply chocolatey squidgy sponge squares are gluten-free - try served as a dessert with ice cream

- Heat oven to 180C/160C fan/gas 4 and line a 20 x 30cm brownie tin with baking parchment. Tip the butter and chocolate into a non-stick saucepan and melt over a low heat, stirring every now and then, until smooth - take care not to overheat it. Leave to cool.
- Meanwhile, mix the sugar, flour, cocoa and almonds with the xanthan gum. Stir into the chocolate mixture, then beat in the eggs and add the walnuts. Turn the mixture into the tin, level with a spatula and bake for 30-35 mins until firm and just cooked - when tested with a skewer, the crumb should still be a little moist. Cool in the tin.
- To make the icing, melt the butter in a non-stick pan. Stir in the cocoa and cook, stirring, for about 1 min. Add the icing sugar and milk, and beat well. Pour on top of the cooled cake, scatter with the walnuts and lightly press them in. Leave until set, then carefully remove from the tin, strip off the baking parchment and cut into squares. Will keep for several days in a tin.
