EASY PEASY SPLIT PEA SOUP



Easy Peasy Split Pea Soup image

1/2 pound slab bacon
1 medium onion, chopped
1 carrot, diced
1 celery stalk, diced
Salt and freshly ground black pepper
1 clove garlic, chopped
1 tablespoon ground cumin
1 pound green split peas, washed and picked clean
6 cups low-sodium chicken stock
1 tomato, diced, for garnish
1 lime, cut into wedges, for garnish
Special equipment: Blender or immersion blender

Steps:

  • Slice the bacon into 1/2-inch chunks. Add to a large soup pot and cook over medium-high heat to render the fat and get crispy on all sides, about 8 minutes total. The more brown the better; just don't burn them. They are perfect when they are more chewy than juicy.
  • Remove bacon chunks and set aside on a paper towel lined plate. Pour off all but 2 to 3 tablespoons of fat from the stock pot. Add the onion, carrot and celery with a pinch of salt and pepper and saute until onions are just translucent, about 6 to 8 minutes. Stir in the garlic and cumin and let cook another minute before adding the split peas and stock. Cover and bring to a boil. Reduce the heat and simmer until the peas are al dente (cooked through, but slightly firm and whole), about 20 minutes. Cool for 5 minutes.
  • Ladle out about 3 cups of the peas and carefully blitz the remaining soup using an immersion blender or countertop blender until creamy. If using a countertop blender be sure to only fill it about 1/3 the way up and start on a slow speed, then raise to a higher speed. This method will take a bit longer due to the need to blitz in batches. Pour the soup back into the pot. Return the 3 cups of peas to the soup and stir to combine and heat through. Season with salt and pepper, to taste. To serve, ladle the soup into bowls and top with bacon, tomato and a squeeze of lime.

1 cup dried split peas
1/2 teaspoon dried basil
1 bay leaf
2 cups water
2 cups chicken broth
3 tablespoons olive oil
2 cups chopped onions
1/2 teaspoon cumin seed
salt and pepper

Steps:

  • In a saucepan simmer peas, basil and bay leaf in the water and broth, partially covered, until peas are tender, about 35 minutes; discard bay leaf.
  • Meanwhile, heat oil and saute onion and cuminseed over moderately low heat until onions are golden brown, 35-45 minutes.
  • In a blender, puree soup in batches until smooth; return to pan and stir in onions and salt and pepper to taste.

1 med onion finely chopped
2 stalks celery, sliced
3 carrots peeled & sliced
1 med. yam, peeled and cut into 2 in. Pieces
2 cups yellow or green split peas, ringed and picked over
8 cups chicken or veg. Broth
2 bacon slices or small ham hock
Salt and freshly ground pepper
Garnish: 6 strips bacon

Steps:

  • Heat oil over med. heat in large Dutch oven. Sauté onion until soft. Add celery, carrots, and yam, and sauté another 3 min. Add split peas, broth, bacon or ham hock, salt and cumin, and bring to simmer over low heat. Partially cover and cook 50-60 min., or til peas are tender. Remove bacon or ham hock. Place bacon slices in skillet and cook until crisp. Remove to paper towel and crumble. Purée soup until desired texture. Season to taste Ladle into bowls and top with bacon. May freeze leftovers

SMOKY SPLIT PEA SOUP

Split pea soup recipes are often flavored with ham hocks, but this veg version gets its smoky taste from smoked paprika and chipotle chiles. Sweet potatoes and split peas are good sources of potassium, which lowers blood pressure. If split peas are old(after about 1-2 years) they will not get tender, so check the date. Adapted from Vegetarian Times magazine(Feb. 2010).

1 cup split peas
2 tablespoons olive oil
1 teaspoon smoked paprika (can add more to taste)
1 teaspoon chopped chipotle chile, canned in adobo sauce (more if you like it really spicy)
1/2 teaspoon ground cumin (optional)
1 teaspoon oregano, chopped (optional)
1 large sweet potato, peeled and diced (3 cups, you can use winter squash if you like instead or even carrots)
2 medium onions, diced (3 cups)
3 celery ribs, diced (1 cup)
4 -6 garlic cloves, minced (4 tsp.)
6 cups water (or vegetable stock)
1 (14 ounce) can diced tomatoes

Steps:

  • Soak split peas in large bowl of cold water overnight(some reviewers said they boiled the peas for 30 or 40 minutes rather than soaking and it worked fine).
  • Heat oil in 3-qt. saucepan over medium heat. Add paprika, chipotle, and cumin if using, and stir. Add sweet potato(or squash), onions, and celery, and season with salt and pepper, if desired. Cover, and cook 10 minutes, or until onions are soft and translucent. Add garlic, and sauté 2 minutes.
  • Drain split peas, and add to pot with 6 cups water(I use about 4 cups vegetable stock and 2 cups water). Bring soup to a boil, reduce heat to medium-low, and simmer 1 hour. Add tomatoes, and cook 30 minutes more, or until split peas are tender.

This recipe is adapted from one I found years ago on the Fat Free Vegan blog. I've made it many times, and it freezes well. The mustard seeds are a key part of the recipe. I usually double the garlic and ginger, especially if I have a cold. It's very filling and satisfying because it's so thick and hearty. Naan bread is a perfect accompaniment. Can also be served over basmati (or your favorite) rice.

2 medium onions, chopped (yellow or white)
1 1/2 teaspoons cumin seeds
1 teaspoon black mustard seeds
1/4 teaspoon vegetable oil
2 teaspoons ginger paste or 1 tablespoon minced fresh ginger
2 teaspoons garlic, finely minced
2 medium sweet potatoes, peeled and cut into 1-inch cubes
8 cups water
3 cups dried yellow split peas, picked over and rinsed
1 -2 tablespoon mild curry powder or 1 -2 tablespoon garam masala
1 tablespoon salt
1 bunch kale, cleaned, removed from rib, and chopped coarsely

Steps:

  • Spray a large soup pot with cooking spray and heat on medium.
  • Saute onions for 5 minutes or until they become translucent.
  • Push onions to the side of the pot and add the cumin seeds and mustard seeds to the bottom-center of the pot. Add vegetable oil on top of cumin seeds and mustard seeds and stir lightly. When the mustard seeds begin to pop, stir the onions into the seed mixture.
  • Add the ginger and garlic and cook for one more minute.
  • Add sweet potatoes, water, split peas, and one tablespoon of curry powder (or garam masala). Stir well.
  • Cover the pot and simmer for one hour. Stir regularly to ensure that the split peas don't stick to the pot. Add more water if necessary.
  • Stir kale into the soup and cover. Cook for 10 additional minutes on low (or slightly less time if you want the kale to retain any crunch).

This is from my Low-Fat Moosewood cookbook. Your house will smell like an Indian restaurant! The soup is a beautiful dark gold color. Don't use green or brown lentils, it just won't be the same. This makes a lot, but you can freeze it. Even my one year old loves this! Serve topped with plain yogurt and chopped cilantro. Pass pita bread.

1 teaspoon vegetable oil
1 1/2 teaspoons ground cumin
1/2 teaspoon turmeric

1 cup dried yellow split peas
7 cups water
2 cups sweet potatoes, peeled and cubed
1 cup apple, peeled, cored and cubed
1 teaspoon cinnamon

Steps:

  • In a soup pot, sauté the onions in the oil for about 8 minutes, until golden, stirring frequently.
  • Add the cumin, turmeric, coriander and ginger and cook for another minute.
  • Add the split peas, water, sweet potatoes, apples, cinnamon, and chili powder, cover and bring to a boil.
  • Lower the heat and simmer for 40 minutes, or until the split peas are tender.
  • In a bowl, combine the tomatoes, lime juice and soy sauce.
  • When the split peas are tender, add the tomato mixture.
  • Puree the soup in a blender (in batches) or with a stick blender, adding more water if needed.

1 cup yellow split peas (or green, it just won't be as pretty)
1 quart vegetable broth
1 medium sweet potato, peeled and cut into 1/2-inch slices
7 whole green cardamom pods
1 -2 tablespoon butter (or canola oil)
1 medium yellow onion, chopped
1 teaspoon garam masala
1/2 teaspoon curry powder (optional)
1/2-1 teaspoon ground cumin
lemon juice
cayenne pepper (or chop up some jalapeno pepper for more heat)
sea salt
pepper
turbinado sugar (pptional)

Steps:

  • Stovetop method: Soak the peas in water to cover overnight. Drain and rinse.
  • Bring vegetable broth to a boil in a medium pot. Add soaked peas, sweet potato slices and cardamom pods. Reduce heat to a simmer and cover. Simmer for an hour.
  • Heat butter in a skillet over medium heat. Add onions, garam masala, curry powder if using and cumin and cook for 10 minutes, stirring often. When sweet potatoes and peas are tender, add the spiced onions to the pot. Stir and cook 5 minutes more. Remove cardamom pods and season the soup with lemon, cayenne, salt, and pepper to taste. Add a little sugar if desired.
  • Slow Cooker method: Place peas, broth, sweet potato and cardamom pods in a slow cooker. Cook on high for 4 to 6 hours or on low for 6 to 8 hours, adding additional broth or water to thicken if needed. When ready to serve, heat butter in a skillet over medium heat. Add onions, garam masala, curry powder if using and cumin and cook 10 minutes, stirring often. Add the spiced onions to the slow cooker. Stir, cover and cook 15 minutes longer on high heat. Remove cardamom pods and season the soup with lemon, cayenne, salt and pepper. If you like add a little sugar to taste.
