- In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
- Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
- Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

- In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until water is absorbed, 12-15 minutes. , Meanwhile, in a large saucepan, heat oil over medium-high heat; saute onion until tender. Stir in peas and broth; bring to a boil. Reduce heat; simmer, uncovered, until peas are tender, about 5 minutes., Puree soup using an immersion blender. - In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. - Place ingredients into the bottom of your crock pot, starting with the split peas and finishing with the broth. Heat on low for 7 - 8 hours or high for 4 - 5 hours. Add parsley 30 minutes before done. Let soup cool slightly and remove bay leaves.
- Using an immersion blender, carefully, as to not burn yourself, puree soup until desired consistency. You can also puree using a food/processor or blender, may take two batches. Taste for seasoning, adding salt and pepper as needed. Soup will thicken upon standing.
- In a dutch oven or pot, heat 1 tablespoon olive oil or 1/4 cup water over medium-high heat, add the onion and saute for 5 minutes. Add carrots, celery, garlic, cabbage and herbs, and saute, stirring frequently, for 3 -4 minutes. Add the split peas, bay leaves, worcestershire sauce and vegetable broth.
- Bring to a boil, cover, reduce heat to medium-low and simmer for 2 hours, stirring occasionally. Stir in parsley 30 minutes before removing from heat. Let soup cool slightly and remove bay leaves.
- Using an immersion blender, carefully, as to not burn yourself, puree soup until desired consistency. You can also puree using a food/processor or blender, may take two batches. Taste for seasoning, adding salt and pepper as needed. Soup will thicken upon standing.
- Set Instant Pot to SAUTE and add the 1 tablespoon olive oil or 1/4 cup water, onion, carrot, celery, and garlic, saute for 4 - 5 minutes (feel free to skip this step entirely).
- Add split peas, cabbage, herbs de provence, bay leaves, and at least 5 cups of broth, and stir to combine.
- Attach lid and turn to lock, set the valve to SEALING, and manually set to HIGH pressure for 15 minutes. Let natural release for 10 minutes. Remove bay leaves, season to taste with salt and pepper. Stir in the parsley.
- Using an immersion blender, puree the soup to desired consistency. Alternatively, puree using a food processor or blender (may take 2 - 3 bathes).

- Dump split peas into a large bowl. Cover with hot water. Set aside.
- In a large pot over medium heat, melt butter.
- Add onion, carrot, and celery. Cook until vegetables are tender, about 8-10 minutes.
- Add garlic, and cook for an additional 2 minutes, until fragrant.
- Drain split peas and add to pot with ham bone, bay leaves, thyme, chicken stock, and water. Stir to combine.
- Bring soup mixture to a boil. Reduce heat, and simmer uncovered for about 1 hour, stirring occasionally until split peas are cooked down.
- Add diced ham and potato. Stir to combine. Continue simmering for an additional 1 hour, until soup is cooked down to desired consistency and peas are broken down and very soft.
- When ready to serve, remove ham bone and bay leaves. Season with salt and pepper to taste. Serve hot with croutons.

- In a small saucepan, bring water and quinoa to a boil. Reduce heat; cover and simmer for approximately 12 minutes or until water is absorbed.
- Meanwhile, in a large saucepan, saute onion in oil until tender. Stir in broth and peas. Bring to a boil. Reduce heat; simmer, uncovered, for five minutes or until peas are tender.
- In a blender or food processor, puree soup until smooth. If you are doubling the recipe, you may need to do this in batches.

- In a stock pot, over medium heat, add the olive oil, onions, carrot, and celery. Sauté for 5 minutes.
- Add the garlic and sauté for 2 more minutes.
- Add the split peas and turmeric, stir into the vegetable mixture, and sauté for 3 minutes.
- Add the vegetable stock and water, along with the salt, pepper, and bay leaves. Stir to combine. Cover and cook for 40 minutes, stirring occasionally to prevent the split peas from settling to the bottom of the pot.
- Add the potatoes and stir to combine. Cover and continue to cook for 10 minutes.
- Stir the soup and check the liquid level. At this point, the potatoes should be starting to soften, and the peas should be nearly dissolved. Add one cup of water if the peas are not nearly dissolved.
- Cover and continue to cook for another 10 minutes. Check the potatoes for doneness again. Add another cup of water if needed. If not, cover and continue to cook until the potatoes are fork tender.
- Once the potatoes are cooked, remove the lid and turn off the heat. Stir the soup well, and allow to sit for 5 minutes before serving.

- Soak the yellow split peas for 12 hours in cold water.
- Rinse the split peas, put in a large pan and cover with the stock. Bring to the boil and simmer for 25 mins.
- Remove any scum and add the onion, sweet potato and carrots. Simmer for 15-20 minutes, until the veg are tender.
- Cool slightly, then blend until smooth.
- Return to the pan and reheat, adding the spinach to wilt it.

- Heat a dutch oven or large, heavy-bottomed pot over medium heat. Add the olive oil. Once hot, add the onions, celery, carrots, salt, and pepper. Saute until the vegetables soften and lightly brown, about 8 to 10 minutes.
- Add the thyme, bay leaf, and minced garlic. Saute for 30-seconds until fragrant.
- Add the split peas and saute for 1 minute. Add the pork to the center of the pot. Add the water and chicken stock, stir, then bring to a boil.
- Reduce the heat to medium-low, cover, and simmer. Stir occasionally so that the peas do not stick to the bottom of the pot, adjusting the heat as needed to maintain a gentle simmer. Flip the ham over 1 hour after cooking. Cook until the peas fall apart and lightly thicken the soup. The meat should pull off the bone and the vegetables are tender, about 2 hours.
- Remove the bay leaf and discard. Transfer the ham to a cutting board. Remove the skin and discard. Pull the meat off the bone and dice it into small pieces.
- For a smooth consistency, use an immersion blender to puree the soup. Alternatively, puree the soup in batches using a countertop blender. Leave a few cups of peas intact for a more rustic texture if desired.
- Season the soup to taste with salt and pepper. Add the pork back to the soup and stir to combine.
- Divide among bowls to serve and garnish with parsley.
