These delicious little appetizers are always a hit. Serve warm or at room temperature with a good quality mustard. These can be frozen unbaked and popped into the oven when unexpected guests pop in.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
- Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

- Preheat the oven to 400°F Bring a large pan of water to the boil. Add the spinach and blanch for 1-2 minutes, drain, plunge into cold water and squeeze dry.
- Heat the milk in a saucepan. Meanwhile, melt the butter in a heavy-based saucepan. Mix in the flour and gradually stir in the hot milk, stirring until the mixture thickens into a white sauce.
- Stir in the spinach and season with freshly grated nutmeg, salt and freshly ground pepper, mixing well.
- Place the spinach mixture into a rounded ovenproof dish and top with a layer of stale ciabatta breadcrumbs and then a layer of Parmesan cheese.
- Sprinkle over the lemon zest, then top with the breadcrumbs and Parmesan cheese.
- Bake for 15 minutes and serve warm from the oven.

SPINACH AND PARMESAN RUSTIC BREAD (BREAD MACHINE)
This is a wonderful bread. I love to eat it with fresh egg salad, tomato and lettuce. Very good with a bowl of hearty soup. My family favorite!

Steps:
- Heat the olive oil in a frying pan; add the chopped onion and sauté until a light golden color. Add the spinach, stir well to combine and cover tightly.
- Remove from the heat and let stand for 5 minutes. Then stir again and let the pan, uncovered, to cool.
- Place the spinach mixture in the bread machine pan. Add the water and egg.
- Sprinkle the bread flour, ensuring that it completely covers the liquid mixture.
- Now sprinkle the cheese inside.
- Place the salt and sugar in separate corners of the bread pan.
- Make a shallow indention in the center of the flour, add the yeast.
- Set the bread machine to the dough setting. Press start.
- Lightly flour 2 baking sheets.
- When the dough cycle has finished, remove the dough from the machine and place on a lightly floured surface, gently punch the dough down, then carefully roll it out to a rectangle about 1 inch thick.
- Roll up the dough from one long side to form a thick baton shape with a square end.
- Place the baton on the prepared baking sheet, seam side up, cover it with lightly oiled plastic wrap; set aside to rest 15 minutes.
- Turn the bread over and place on the second baking sheet. Plump up the dough by tucking the ends and sides under.
- Cover with the oiled wrap and let rest in a warm place for 30 minutes.
- Preheat the oven to 425°F.
- Using a sharp knife, slash the top of the bread with 5 diagonal slashes.
- Bake for 28 minutes, or until it is golden.
- Turn unto a wire rack to cool.
CREAMY PARMESAN SPINACH

- Preheat oven to 375*F.
- Toss bread crumbs with 1 TBS oil in large bowl to coat.
- Spread evenly on rimmed baking sheet.
- Bake until breadcrumbs are golden, about 5 minutes.
- Cool.
- Sprinkle with salt.
- Cook pasta in large pot of boiling salted water until tender, but still firm to the bite, stirring occasionally.

- Heat 1 tsp olive oil in a nonstick skilled over medium heat.
- Add almonds and saute 1 minute until light brown.
- Add breadcrumbs and garlic, cook 2 minutes or until golden, stirring occaisionally.
- Stir in 1 Tbs lemon juice, cook 1 minute or until breadcrumbs are dry. Stir in lemon zest, remove from heat and set aside.
- Cook pasta according to package directions. Before draining pasta, add spinach to the colander first, then drain pasta on top of spinach.
- Immediately return pasta and spinach to the pot, tossing gently until spinach wilts.
- Add breadcrumb mixture to pot; toss gently. In a separate bowl, combine remaining 2 tsp olive oil, remaining 1 Tbs lemon juice, veggie broth, and salt; drizzle this mixture over the pasta in the pot, toss until well blended.

- Thoroughly wash and dry spinach and remove stems.
- (I usually use the packaged, pre-washed spinach so that I don't get too much water in this dish. Otherwise, be sure to dry the leaves very, very well.) Using half the ingredients and working in batches, heat olive oil in a large skillet over moderate heat.
- Saute garlic about one minute.
- Add spinach leaves, increase heat to high, and stir until evenly wilted, about 2 minutes.
- Add salt, pepper, and tomatoes.
- Cook an additional minute.
- Stir in grated Parmesan, remove from heat, taste, and adjust seasonings.
- Serve immediately.
- If spinach releases too much water, you can drain mixture in a colander before serving.
- Taste and adjust seasonings again after draining.
