I got this recipe out of a magazine at my mother in laws house. I tried it and it is very tasty and easy. My kids even eat it so it is a good way to get them to eat spinach. You can even buy the spinach tortellini instead of the cheese if you want. Hope you enjoy!

16 ounces cheese-filled tortellini
2 tablespoons olive oil
1/2 cup chopped onion
3 tablespoons minced garlic
9 ounces frozen chopped spinach (defrost)
1/2 teaspoon dry basil
1/2 teaspoon salt & pepper
1 cup heavy whipping cream
1/2 cup parmesan cheese

Steps:

  • Boil water for tortellini.
  • Add tortellini and while that is cooking in a frying pan saute onion and garlic in olive oil.
  • Put spinach in microwave for a minute or two and then squeeze water out of it.
  • Add spinach, basil, salt, and pepper to onion and garlic.
  • Saute additional 5 minutes.
  • Drain tortellini.
  • Add cream, parmesan cheese, and tortellini to pan.
  • Cover and simmer 10-15 minutes stirring occasionally.

1 small onion, chopped

cherry tomatoes, halved

Steps:

  • Cook tortellini according to package directions.
  • Heat butter in a large skillet over medium heat. Stir in onion; cook until soft and translucent. Mix in cream cheese, parmesan, milk, mushrooms, and spinach.
  • Gently mix in tortellini and cherry tomatoes with skillet contents; warm through, and serve.

Tortellini with spinach and ricotta image

This classic spinach and ricotta fresh tortellini made by grandmothers all over Italy - it's a labour of love, but worth it.

400g/14oz '00' flour, plus extra for dusting
3 medium free-range eggs
semolina, for dusting (optional)
200g/7oz spinach, cooked in salted water and chopped
200g/7oz ricotta
30g/1oz grated parmesan
large pinch freshly grated nutmeg
salt and freshly ground black pepper
small handful of pine nuts
handful sage leaves
50g/2oz butter
parmesan, grated or in shavings

Steps:

  • For the pasta, pour the flour into a mound onto a flat surface and make a well in the centre. Crack the eggs into the well and gradually mix with either a blunt knife or your hands. When the dough has become a thick paste use your hands to incorporate more of the flour.
  • You can sieve any remaining flour and use the sifted flour while you knead the dough to stop it sticking to the surface and to your hands, but be careful not to make the dough too dry. Knead until well blended and the dough is soft and flexible. Don't worry if you haven't used up all the flour.
  • Leave the pasta to rest for about 20 minutes with a bowl inverted over it or leave it covered in cling film. You can sieve any leftover flour again and save this flour for rolling out the pasta.
  • Meanwhile, for the filling, in a clean bowl, mix the spinach, ricotta, parmesan and nutmeg well, and season with salt and freshly ground black pepper.
  • Divide the fresh pasta into four and keep three portions under a bowl while you roll and stuff one quarter. This prevents the pasta from drying out. Roll out the pasta into a long, wide strip about 1mm in thickness, either by hand or using a machine. When you can see your hand through it, it is ready for stuffing. Cut the strip in half.
  • Place teaspoons of the filling in a line down the centre of one of the strips about 5cm/2in apart. Place the other strip directly on top. Press the air out from around the filling by pushing down the pasta around them sealing them in. Now take a small wine glass or round cutter measuring about 7cm/3in across and cut out circles of pasta around each mound of filling.
  • They can be cooked straight away or stored in fine semolina for up to two hours. You can also freeze them at this stage and then cook them from frozen when you are ready.
  • To cook, bring a large pan of salted water to the boil and gently lower in the tortellini. Cook for about four minutes or until the pasta is soft but not floppy.
  • While the pasta is cooking make the sauce. Preheat the grill to hot.
  • Toast the pine nuts under the grill or in a dry frying pan. They are quick to brown so don't take your eyes off them.
  • Put the pine nuts, sage leaves and butter into a frying pan and melt the butter taking care not to burn it. Add about a tablespoon of the pasta water and stir together to emulsify the sauce. Remove from the heat.
  • When the pasta is done, drain it and toss with the sauce in the frying pan. Serve immediately sprinkled with parmesan.

  • Bring the stock to a simmer in a large pot over medium heat. Stir in the tortellini and simmer gently for 3 minutes. Stir in the spinach, garlic, tomatoes and dried basil. Season with salt and pepper. Return to a simmer and cook for 2 to 3 more minutes. Serve hot with the grated Parmesan cheese.

1 clove garlic, minced
4 to 6 cups broth, chicken or vegetable

One 9-ounce package fresh tortellini or 4 servings dried tortellini
Coarse grained salt and cracked black pepper
10 ounces fresh or frozen spinach, defrosted and chopped

Steps:

  • In a 3-quart soup pot, heat olive oil over medium high heat. Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes. Add broth and tomatoes, turn heat up to high, and bring to a boil. Add the tortellini and cook according to package instructions. When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper. Serve immediately. Garnish each serving with a sprinkling of Parmesan.

  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add to the bowl with the dressing.
  • Add the spinach, basil, and scallions, Gouda and tomato to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

  • Heat large pot of water to boiling for pasta. (When it comes to a boil, add salt.).
  • Meanwhile, heat oil in medium skillet over low heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in plum tomatoes with juice and the basil. Increase heat to medium and cook uncovered, stirring and breaking up tomatoes, until sauce is thickened, about 15 minutes. Stir heavy cream into sauce. Cook, stirring frequently, until sauce thickens again, about 5 minutes. Season with salt and pepper; keep warm.
  • Meanwhile, add tortellini to salted boiling water and cook according to package directions. About 2 minutes before it should be done, add spinach and cook until tortellini is ready, about 2 minutes longer. Drain well and transfer to wide serving bowl. 250g pack filled tortellini (we used ricotta & spinach)
2 rashers lean back bacon
25g walnut pieces
zest ½ lemon , juice of 1
1 tbsp finely grated parmesan , plus extra for serving
1 tbsp olive oil , plus extra for serving
100g bag salad spinach
2 tbsp ricotta

Steps:

  • Heat the grill. Boil the pasta according to pack instructions, then tip into a colander and cool under gently running water. Meanwhile, grill the bacon on a baking tray until golden and crisp at the edges. When almost ready, tip the walnuts onto the tray to toast a little. Snip the bacon into strips.
  • Mix the lemon zest and juice, Parmesan and oil in a large bowl. Season with pepper, then tip in the spinach, tortellini, bacon and walnuts. Toss well, add the ricotta in small blobs, then gently toss. Season to taste, then serve with a drizzle more oil and more Parmesan, if you like.
