1 cup chopped onion
1 cup sliced fresh mushrooms
1 tablespoon vegetable oil
1 package (10 ounces) frozen chopped spinach, thawed and well drained
2/3 cup finely chopped fully cooked ham
5 large eggs
3 cups shredded Muenster or Monterey Jack cheese
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake at 350° for 40-45 minutes or until a knife inserted in center comes out clean.

1 Tbs olive oil
1 onion (diced (about a cup))
6 oz fresh baby spinach leaves
salt and pepper (to taste)
4 eggs
1/2 cup all purpose flour
1/2 tsp baking powder
1 1/2 cups milk
1/2 cup feta cheese ((save a little for garnish))
1/2 cup grape or cherry tomatoes (halved)
fresh basil leaves ((optional, for garnish))

Steps:

  • Preheat oven to 400F.
  • Lightly grease a 10-inch quiche or tart pan (or a deep dish pie plate)
  • Heat the olive oil over medium high heat in a skillet, and saute the onion until softened.
  • Add in the spinach and cook until just wilted (you may need to do this in batches if your skillet is too small). Season with salt and pepper to taste. Set aside to cool 5 minutes.
  • Whisk together eggs, flour, and baking powder. Whisk in milk, then stir in spinach-onion mixture. Add pepper, mix well.
  • Pour egg mixture into quiche pan. Top with feta.
  • Place the tomato halves on top, and press gently so only the surface is visible.
  • Bake for 25-30 minutes, or until center is set and the edge is golden brown - and pulling away from the pan.
  • Cool for 10 minutes.
  • Garnish with extra feta, and some basil (optional).
  • Slice, and serve.

3/4 cup finely grated Parmesan

1 teaspoon finely chopped fresh rosemary

Steps:

  • For the crust: Par-bake the crust according to package directions. Let cool slightly before adding the filling.

2 to 3 cups prepared vegetables, such as braised leeks, broccoli, sauteed onions, mushrooms, spinach, peppers, tomatoes
4 ounces, or about 1 cup grated or crumbled cheese, such as Cheddar, goat cheese, Gruyere, Parmesan, fontina, provolone, mozzarella, Gouda, solo or combined

Steps:

  • Preheat oven to 350 degrees F. For the pan: Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top. Or for a Quick Crust, pulse bread into crumbs in a food processor. Heat butter or oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.
  • Whisk the half-and-half, eggs and yolks in large glass measuring cup. Season with salt, pepper, and nutmeg, cayenne or paprika to taste. Spread half the desired filling evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings. Top with more herbs or cheese as desired.
  • Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.

This recipe is slightly altered from Holly Clegg's "Meals on the Move", so it's meant to be fast and healthy. I only changed the garlic and basil, since I've learned to appreciate fresh ingredients. This is tasty and she says it serves 6. Maybe so, but unless it's an appetizer, I say 4 for a light lunch with some fruit on the side. Looks low carb to me, too.

Lastly add the spinach and sautee for 3 minutes. Add the nutmeg and stir. Remove from the heat and let it cool for a few minutes.
  • In a large mixing bowl, beat the eggs with salt, black pepper, the cottage cheese and the vegetable mixture.
  • Line a 9″ inch baking tin with some parchment paper and add the mixture to it. Sprinkle the grated mozzarella on top.

  • Remove the pan off of the heat and add the chopped baby spinach, roasted red pepper and tomatoes with a pinch of kosher salt and black pepper. Stir until the spinach just starts to wilt.
  • In a mixing bowl, crack and add in the eggs. Add a pinch of kosher salt and freshly ground black pepper. Using a whisk, beat the eggs until thoroughly combined.
  • Once the spinach mixture has cooled (can be warm, just not hot) add it to the eggs along with the fontina and dill. Stir to combine.
  • Pour this into the prepared pie plate and sprinkle with feta.
  • Bake on the middle rack of your preheated oven for 30 to 35 minutes or until set. Rotate the pan half way through baking.
  • Allow the crustless quiche to cool 5 minutes before serving.

1 tablespoon olive oil
1/4 cup chopped shallots
1 1/2 cups chopped asparagus
1 cup chopped spinach
1 cup shredded Swiss cheese
1/4 cup roasted tomato slices
6 eggs
4 egg whites
1/2 cup half-and-half
3/4 cup whole milk
1 dash salt
1 dash pepper, to taste
1 dash nutmeg
1 dash parsley

Steps:

  • Preheat oven to 375. Prepare a glass or ceramic pie dish by coating evenly with cooking oil spray.
  • In a large skillet, heat olive oil over medium high. add shallots, asparagus and spinach, and sauté for about 5 minutes, stirring frequently. Spread vegetables evenly over bottom of prepared pie dish. Sprinkle cheese on top of vegetables. Place roasted tomato slices evenly over vegetable mixture.
  • Whisk together eggs, egg whites, half-and-half, milk, salt, pepper, nutmeg and parsley. Pour over cheese and vegetables. Bake about 45 minutes or until knife inserted in center comes out clean. Cut into eight wedges.

1 tbsp Vegetable Oil
1 chopped, about 1 cup medium onion
1 tsp minced garlic
10 oz (1 package) chopped, thawed and drained frozen spinach
5 beaten large eggs
2½ cups shredded or use whatever's on hand Muenster cheese
¼ cup grated, plus 2 tbsp more for garnish, optional parmesan cheese
¼ tsp salt
¼ tsp freshly ground black pepper
crushed pinch of red pepper

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9-inch pie pan.
  • Heat oil in a large skillet over medium-high heat. Add garlic and onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
  • In a large bowl, combine eggs, cheese, salt, pepper, and crushed red pepper. Add in spinach mixture and stir to blend. Pour into prepared pie pan.
  • Bake in the preheated oven until eggs have set and the top is slightly browned for about 25 to 30 minutes.
  • Remove and let cool for 10 minutes. Top with additional freshly grated parmesan cheese before serving.
