Sweet, tender spinach with pungent, flavorful garlic that fills the air with aroma in under ten minutes.

1 TBsp Olive oil
3 Cloves Garlic (Minced)
1/2 Lb Spinach (Washed and chopped into 2" pieces)
1/2 tsp Salt (or to taste)
1 Red Chili (diced, optional)

Steps:

  • Heat 1TBsp Oil in a wok or pan on medium high heat, and add the minced garlic (and chili if using) to the wok and stir until fragrant. Roughly 10 second
  • Add the chopped spinach to the wok
  • Stir occasionally until done, about 6 minutes, add salt and taste. Adjust accordingly.
  • Remove from heat and serve

1kg fresh spinach , or 500g frozen leaf spinach
3 tbsp olive oil
3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

The spinach is quickly stir-fried and then seasoned. It is very simple to prepare." Ken Hom from CHINESE COOKING. (We halved this recipe last night and enjoyed it hot with Mr. Hom's FISH IN HOT AND SOUR SAUCE. Wonderful!)

750 g fresh spinach
1 tablespoon oil
1 tablespoon finely chopped garlic
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Wash the spinach thoroughly.
  • Remove all stems leaving just the leaves.
  • Heat the wok (or large frying pan) until it is VERY hot.
  • Add the oil.
  • When the oil it is very hot and slightly smoking, add the garlic and salt.
  • Stir-fry both for 10 seconds.
  • Add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
  • When the spinach has wilted to about one-third of its original size, add the sugar.
  • Continue to stir-fry for another 4 minutes.
  • Transfer to a plate and pour off any excess liquid.
  • Serve hot or cold.
