FILET OF BEEF WITH MUSHROOMS AND BLUE CHEESE

- Preheat the oven to 500˚. Line a sheet pan with aluminum foil.
- Place the beef on the prepared sheet pan and pat dry with paper towels. Spread 1 tablespoon of the butter all over the beef with your hands. Sprinkle the beef all over with 1 1/2 teaspoons salt and 1 teaspoon pepper. Roast for exactly 25 minutes for rare (120˚) and 30 minutes for medium rare (125˚). Remove the beef from the oven, cover tightly with aluminum foil and allow to rest for 20 minutes.
- Meanwhile, make the sauce. Heat 2 tablespoons of the butter in a large (12-inch) sauté pan. Add the shallots and sauté over medium heat for 3 to 4 minutes, until tender but not browned. Add the remaining 4 tablespoons of butter and heat until sizzling. Add the mushrooms and sauté, stirring frequently, for 5 to 7 minutes, until lightly browned. Add the Port, 1 teaspoon salt and 1/2 teaspoon pepper and cook for 2 to 3 minutes. Add the crème fraîche and cook for one minute, until slightly thickened. Reduce the heat to low and add the Roquefort, stirring just until it melts. (If the sauce is too thick, add another splash of Port.)
- Before serving, reheat the sauce and sprinkle with the parsley. Remove the strings from the roast and slice thickly. Spoon on the sauce, sprinkle with salt and serve hot.

- Preheat the oven to 350 degrees F. Soak the red onion in a small bowl of ice water, about 30 minutes. Drain and pat dry.
- Meanwhile, make the croutons: Mash the anchovies with a fork. Combine the olive oil, mashed anchovies, 1 grated garlic clove and a pinch each of salt and pepper in a medium bowl. Let stand 5 minutes. Add the torn bread and toss with your hands until the bread absorbs the oil. Spread on a baking sheet and bake, stirring halfway through, until golden brown and crisp, 20 to 25 minutes. Let cool.
- Whisk the buttermilk, sour cream, blue cheese, vinegar, parsley, the remaining grated garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl until combined. Add the spinach, lettuce, cucumber, red onion and croutons; toss well.

- Prepare the pasta, according to package directions, while you make the rest of the meal.
- Put half the olive oil in a large pan, add the diced chicken and brown- set aside.
- Put the rest of the olive oil in the pan and add the onions and mushrooms.
- Cook until the juices from the mushrooms disappear (about 5- 7 mins) Add the chicken and spinach and mix thoroughly.
- Add the sour cream and blue cheese and stir over a low heat until the blue cheese is melted.
- Add the cooked pasta and stir to mix.
- Add salt and pepper to taste and serve.

- Remove stems from mushrooms and chop.
- Bake portabella caps for about 10 minutes in 400 degree oven.
- Remove and cool.
- Saute onions and garlic in 1T oil until onions are translucent.
- Add spinach to onions and garlic and saute until spinach is wilted.
- Spoon this mixture into portabella caps.
- Sprinkle blue cheese on top
- Bake 15 minutes at 400 degrees.

- Preheat oven to 200C. In a small baking dish, add the peeled and separated shallots, the sliced garlic and the rosemary. In a small dish, whisk together the wine, mustard, vinegar and honey. Pour over the shallots with some olive oil and season. Bake for 30 minutes.
- Heat a frying pan. Wipe any dirt off the mushrooms using a damp cloth or paper towel. Pour 1 Tbsp of olive oil and the butter into the pan then add the mushrooms, season and cook over a gentle heat until the mushrooms are tender. Remove, wipe out the pan then return to the heat. Add another Tbsp of oil and quickly wilt the spinach.
- Arrange the spinach and mushrooms on serving plates then add the shallots and crumble over the blue cheese. Spoon the warm juices from the shallots over the salad before serving.

- First, start the tomatoes roasting (using this recipe), then while the tomatoes are roasting, saute the mushrooms. Clean and slice the mushrooms, then melt the butter in a medium frying pan over medium heat. Add the garlic and saute for just a minute, until fragrant. Add the mushrooms, sprinkle generously with seasoning, then stir, cover and cook for several minutes, uncovering to stir several times, until the mushrooms are tender and juicy. Uncover and set aside.
- Assemble the salads: Line 2 large salad bowls or plates with fresh spinach leaves, then top with mushrooms, roasted tomatoes, chopped egg, onion slices, and crumble blue cheese over top.
