1 pound chicken cutlets (2 chicken breasts cut in half if using chicken breasts.)
pinch salt
pinch black pepper
1 Cup Panko Crumbs
2 eggs
1 Cup ricotta cheese
2 cups baby spinach leaves (stems removed)
fresh chopped basil (for garnish)
2 cups tomato sauce

Steps:

  • Preheat oven to 400 degrees.Grease a large baking sheet or roasting pan with olive oil.
  • Season the chicken cutlets with salt and pepper.
  • In a large bowl mix the eggs together with a fork. Put each piece of chicken in the eggs.
  • Put seasoned bread crumbs in a shallow dish.
  • Remove the chicken, one piece at a time from the eggs, allow the excess egg to drip off then put the chicken in the bread crumbs using fingers to pat the crumbs on.
  • Put the chicken on baking sheet. Repeat until all the chicken is coated.
  • Cut the spinach leaves into thin slices.
  • Combine the ricotta and spinach ribbons in a small bowl. Spread the mixture onto the chicken cutlet and roll up the chicken with the filling.
  • Bake at 400 degrees for about 20 minutes until golden and just cooked through.
  • Top each piece of chicken generously with sauce.
  • Return to oven about 10 minutes or until sauce has become warm.
  • Remove from the oven and serve on a bed of marina and garnish with fresh basil.

3 egg whites
1 cup breadcrumbs
6 chicken cutlets
1 tbsp olive oil
Salt & pepper to taste
1/2 cup ricotta cheese
1 cup mozzarella cheese, divided
1 cup finely chopped fresh mushrooms
1/2 cup sundried tomatoes
1 cup finely chopped spinach
1/2 tsp each Salt and pepper
1 cup jarred marinara sauce
1 tbsp fresh chopped basil (optional)

Steps:

  • Preheat oven to 400 F. Grease an 8x11 baking dish with 1 tbsp of olive oil and set aside. Add egg whites to a large bowl and breadcrumbs to another large bowl and set aside.
  • In a large mixing bowl, mix together ricotta, 1/2 cup mozzarella cheese, mushrooms, sundried tomatoes, spinach and 1/2 tsp salt and pepper.
  • Season chicken cutlets with salt and pepper. Lay each cutlet flat and fill with a thin layer of ricotta-spinach stuffing mix. Roll up chicken cutlets, then dip in bowl of egg whites, then bowl of breadcrumbs.
  • Add each chicken roll up to the greased baking dish and bake in the oven for 25 minutes. Remove from oven, top with marinara sauce and cheese and bake another 5-10 min until cheese is melted.
  • Garnish with basil (optional) and serve with your choice of green (I roasted a bunch of broccoli rabe with 1 tbsp of olive oil, a pinch of salt and two cloves of garlic at 400F for 10 min). Enjoy!

Steps:

  • Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.

Was looking for a sausage roll recipe that used spinach, ricotta and puff pastry. Couldn't find one here on ZAAR but after a google search I came across this one on someones blog site, and posting here to pass onto a friend.

1 tablespoon oil
1 red onion (diced)
500 g frozen spinach (thawed and squeezed of liquid)
50 g pine nuts
salt (to taste)
pepper (to taste)
500 g ricotta cheese (fresh)
1 egg (lightly beaten)
1 egg (lightly beaten and mixed with a little milk)
3 sheets puff pastry

Steps:

  • Preheat oven to 200C (390F) fan forced or 220C (435/430F) convectional, please note that there can be slight variations between ovens.
  • Heat oil in a fry pan, add onion and fry gently for 2 minutes, add spinach and pinenuts and season with salt and pepper to taste and cook for 5 minutes.
  • Let cool.
  • Add ricotta and mix thoroughly and then add the lightly beaten egg and mix well together.
  • Place pastry sheets on a flat surface and cut in half.
  • Spoon or pipe spinach mixture along the length of each half of the pastry and brush water down the length of the other side and roll up like a sausage roll, repeat with other sheets of pastry and mix.
  • Cut to preferred size (I like to cut into 4 to make mini rolls about 6cm long).
  • Put a couple of slits in each roll (to allow steam to escape).
  • Place on baking tray/sheet seam side down.
  • Put in oven and bake for 15 minutes or until golden brown.

1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup ATHENOS Traditional Crumbled Feta Cheese
1 tub (7.5 oz.) PHILADELPHIA Garden Vegetable 1/3 Less Fat than Cream Cheese
4 green onions, finely chopped
1 egg, beaten
15 sheets frozen phyllo dough (14x9 inch), thawed
1/3 cup butter, melted

Steps:

  • Mix first 5 ingredients until blended.
  • Brush 1 phyllo sheet lightly with butter; top with 2 more phyllo sheets, lightly brushing each layer with some of the remaining butter. Place remaining phyllo sheet between 2 sheets of plastic wrap until ready to use; set aside.
  • Spread 1/5 of the spinach mixture along one short side of phyllo stack. Fold in long sides of phyllo; roll up from one short side to make log. Repeat with remaining phyllo sheets and spinach mixture to make 4 additional logs. Brush with remaining butter. Make small cuts in tops of logs at 1-inch intervals. Place in large freezer-weight resealable plastic bags or wrap tightly in plastic wrap.
  • Freeze up to 3 months. When ready to bake, remove desired number of logs from freezer. Refrigerate, tightly wrapped, several hours or overnight until thawed. Unwrap, then place on baking sheet.
  • Bake in 375°F oven 25 min. or until golden brown. Cool 5 min. Transfer to cutting board. Use serrated knife to cut each log into 6 slices.

1 (10 ounce) package frozen spinach, thawed and squeezed very dry (as dry as you can get it)
1/2 cup melted butter
2 (500 g) containers ricotta cheese (do not use low fat)
1 1/2 cups grated mozzarella cheese
1 -2 minced garlic clove (optional)
1/4 cup flour
1/2 cup grated parmesan cheese
4 eggs, slightly beaten
seasoning salt and pepper (can use white salt)
1/8 teaspoon nutmeg (or to taste)
12 lasagna noodles, cooked
2 cups marinara sauce (see my recipe posted on Zaar!)

Steps:

  • Set oven to 375 degrees.
  • Squeeze-dry the thawed spinach very well, (is is very important to make sure there is NO moisture left in the spinach, as this will make the mixture soggy).
  • Mix the spinach with the melted butter; set aside.
  • In a bowl, mix the ricotta, grated mozza cheese, 2 eggs, flour, 1/2 cup Parmesan cheese, salt, pepper and nutmeg, mix thoroughly.
  • Mix the spinach in the ricotta mixture, mix well to combine.
  • Spread the mixture onto a cooked lasagna noodle; roll up.
  • Repeat with the remaining noodles.
  • Lay the rolled noodles into a prepared greased baking dish, seam-side down.
  • Cover with a layer of marinara sauce (you do not have to cover the rolls completely with the sauce).
  • Sprinkle with Parmesan chees (any amount desired).
  • Bake for 30 minutes.
  • *NOTE* if desired sprinkle grated Mozzeralla cheese over the rolls the last 10 minutes of baking time.

Not an unusual dish by any means, but a very good application. They are crunchy on the outside and creamy on the inside. Not all that decadent, but not lite fare either! Something that I whipped up for a dinner party that got cancelled due to the snow storm.

6 boneless skinless chicken breast halves, cleaned of all fat and pounded to about 1/4 inch inch thick
1/4 cup salt
1/4 cup sugar
1 quart cold water
16 ounces ricotta cheese, drained overnight in a collander in the fridge
1/4 lb shredded mozzarella cheese
1 (16 ounce) bag frozen chopped spinach, thawed and complely dried out with a good wringing in a clean kitchen towel
1 ounce grated parmigiano-reggiano cheese
salt and pepper
dried red pepper flakes
garlic powder (optional)
2 cups flour, seasoned with
salt and pepper
2 egg whites
1/2 cup whole milk
1 cup seasoned bread crumbs
2 tablespoons canola oil (plus more for batches)

Steps:

  • Mix the salt and sugar with water, soak pounded chicken breasts for about an hour.
  • Drain, dry and lay flat between sheets of parchment.
  • While the chicken is brining prepare the filling by mixing all the filling ingredients in a bowl and seasoning to taste.
  • Heat your oven to 325 degress F.
  • Prepare a sheet pan with a large cooling rack on top.
  • Lay out a large piece of parchment or wax paper, cut 12 pieces of butchers twine about 8" long.
  • Place a heavy pan or cast iron skillet over medium/medium high heat, add two tablespoons of oil.
  • The oil should be just below the smoke point.
  • Have a splatter guard nearby!
  • Wisk milk and egg in bowl then pour into a deep plate.
  • Place seasoned flour into a second deep plate.
  • Working one breast at a time, dredge the chicken in the flour, be sure to cover both sides.
  • Sprinkle a HEAVY layer of bread crumbs on your parchment covered work surface.
  • Drag 'finished side' of chicken through the egg wash and press down on the bread crumbs.
  • Spread a generous amount of the filling on the chicken, about 1/8" thick or so.
  • Gently roll and tuck the chicken, tie with two of the 8 inch lengths of butcher's twine.
  • Lay to rest on the prepared cooling rack.
  • Repeat with the other 5 breasts.
  • Working 2 rolls at a time brown the chicken on all sides to a nice, golden brown.
  • Place back on the cooling rack/sheet pan rig after browning.
  • Repeat until complete.
  • Place breasts in the pre-heated oven and cook until done.
  • About 170-175 degrees F, maybe 40 minutes, depending on the size of the breasts.
  • Let them sit uncovered for 5 minutes before cutting/serving.
  • THe outside is nice and crisp, the inside is juicy and flavorful!
  • You'll prolly have extra filling, if you've been careful and have not contaminated the filling with raw chicken, it makes an EXCELLENT raviolli filling!

This is an adopted recipe originally posted by MeanChef. I have left it unchanged it is just as he originally posted it. When I discovered this wonderful recipe online, I hadn't yet discovered Zaar. It was months later I found Recipezaar and nearly a year later when I realized our favourite stuffed chicken breasts, that we often serve at dinner parties, was in fact a Zaar recipe. When I reviewed this in April '04 I mentioned that I often like to serve it with fresh tomato and basil sauce.

6 chicken breasts (about 2 1/2 pound)
1 tablespoon butter, melted
1 tablespoon butter
1 small onion, finely chopped
1 garlic clove, minced
1 1/2 cups chopped fresh spinach

1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
2 tablespoons grated parmesan cheese
1 egg yolk

Steps:

  • Preheat oven to 375ºF (190ºC).
  • Stuffing: In large skillet, heat butter over medium heat; cook onion and garlic stirring often, for 3 to 5 minutes or until softened.
  • Add spinach, parsley and basil; cook, stirring, for about 2 minutes or until spinach wilts and moisture evaporates.
  • Let cool completely.
  • In bowl, mix spinach mixture, ricotta, mozzarella and Parmesan cheeses, egg yolk, salt, nutmeg and pepper.
  • Using sharp knife, bone chicken, leaving skin attached.
  • Gently loosen skin from 1 long side of each breast, leaving skin attached at curved side.
  • Stuff about 1/4 cup (50 mL) stuffing under skin, pressing to spread evenly.
  • Tuck ends of skin and meat underneath.
  • Place on greased rack in foil-lined pan.
  • Brush with butter.
  • Bake in oven, basting occasionally, for about 35 minutes or until golden and chicken is no longer pink inside.

1 lb spinach, thawed frozen chopped
15 ounces light ricotta cheese

1/4 teaspoon garlic powder

1 1/2 cups marinara sauce, reduced-sodium

Steps:

  • Preheat the oven to 400 degrees F.
  • Coat a 8-by-8 baking dish with olive oil spray.
  • Cook chicken in a skillet until just starting to brown.
  • Place the spinach in the middle of a clean dishtowel. Fold up the towel over the spinach and wring out as much moisture as possible.
  • Place the spinach in a large mixing bowl.
  • Add the ricotta, Parmesan, egg whites, garlic powder and nutmeg. Stir well.
  • Move spinach mixture to the prepared dish over top of the chicken. With the back of a spoon, spread it out to uniformly fill the dish.

8 lasagna noodles, cooked, tossed with
2 tablespoons oil, to prevent sticking
3 tablespoons butter or 3 tablespoons oil
1 medium onion, finely chopped
1 tablespoon fresh minced garlic (can use less)
1 (10 ounce) package frozen chopped spinach (cooked according to package directions then hand-squeezed dry)
2 cups cooked chicken, finely chopped (can use more)
3 cups ricotta cheese
2 cups shredded mozzarella cheese (can use 1-1/2 cups if desired)
1/3 cup grated parmesan cheese
1 teaspoon seasoning salt (or to taste, or use 1/2 teaspoon white salt)
1 small egg, slightly beaten
1 pinch nutmeg (use very small pinch!)
black pepper (to taste)
2 1/2 cups prepared alfredo sauce (see Kittencal's Alfredo Sauce)
1 cup grated mozzarella cheese (or to taste)

Steps:

  • Set oven to 350 degrees F.
  • Grease an 11 x 7-inch or a 13 x 9-inch baking dish.
  • In a skillet melt butter over medium heat; add in the onions and saute stirring with wooden spoon for about 8 minutes or until lightly golden brown (adding in the garlic the last 2 minutes of cooking).
  • Add in drained spinach and saute for 2 minutes more mixing with a wooden spoon; transfer to a large mixing bowl.
  • Add in the cooked chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, seasoned salt, egg and pinch nutmeg; mix with wooden spoon until well combined, then season with black pepper to taste.
  • Place the cooked noodles on a wax paper lined flat surface.
  • Evenly divide the ricotta mixute into eight scoops on to a plate.
  • Spread about half of the alfredo sauce into the bottom of the baking dish.
  • Spread one scoop onto one cooked lasagna noodle, then spread out with a spoon to cover the noodle completey.
  • Roll up starting at the short end.
  • Place seam side down on top of the sauce.
  • Repeat same method with remaining 7 noodles.
  • Sprinkle about 1 cup grated mozzarella cheese (or to taste) on top of the noodles, then drizzle the remaining alfredo sauce on top.
  • Cover with foil and bake for about 30 minutes or until hot and bubbly.

  • Preheat the oven to 425 degrees - use convection if you have it. Coat a baking dish with cooking spray. Whisk the egg in a bowl until well combined. Place the seasoned panko crumbs on a plate then add 2 tablespoons of Parmesan; mix well; set aside.
  • Heat the olive oil in a skillet over medium heat. Add the spinach and crushed red pepper flakes. Cook, stirring occasionally, for 1 minute. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the stove and set aside to cool.
