This simple-to-make quiche is great for a simple dinner or lunch with green salad. Recipe was adapted from Bon Appetit (January 1981).

- Preheat oven to 350-degrees F.
- Spray 9-inch pie plate with Pam. (I use a corning ware quiche dish).
- Heat oil in skillet over med. high heat. Add onion and saute until browned (5 min).
- Add spinach; cook until excess moisture evaporates. Let cool.
- Beat eggs in bowl. Add cheese.
- Stir egg-cheese mixture into onion-spinach mixture. Season to taste with salt and pepper, if desired.
- Turn into pie pan, spreading top evenly.
- Bake until top is browned and tester (I use a toothpick) comes out clean, 40-45 minutes.

- Preheat oven to 400 degrees F. Brush a 9-inch glass or ceramic pie pan with the soft butter and sprinkle half the Parmesan on top. Place the pan on a baking sheet.
- Squeeze the spinach in batches, very firmly by hand, to remove excess water. Put spinach in a food processor, along with the eggs, egg yolks, half-and-half, Gouda, flour, nutmeg, and salt and pepper to taste. Pulsing until mixture is an even green color with bits of spinach, about 30 seconds. Add the scallions and pulse briefly to mix. Pour mixture into the prepared pan. Sprinkle the top with the remaining 2 tablespoons Parmesan and paprika.
- Place on the lower rack of the oven bake until quiche is just set in the center, about 40 to 45 minutes. Cool completely on a rack before serving.

- Preheat the oven to 350 degrees F (on low fan speed, if using convection). During this time, cover the bottom of the piecrust with aluminum foil and uncooked beans. Place the piecrust in the oven and bake (blind bake) for 10 to 12 minutes to allow the crust to cook. The crust should be light brown on the edges when removing from the oven.
- During the cooking of the crust, whisk together the milk, salt, pepper, nutmeg and eggs in a bowl. After mixing the eggs, in a second bowl, blend together the spinach, bacon, cheese and parsley. Add half of the egg mixture to coat the ingredients, again mixing well. Next, add the mixture to the cooked crust then finish with the remaining egg mixture. Bake in the oven until the middle of the quiche is set, about 20 minutes.
- Remove and serve.

- Preheat oven to 325º Fahrenheit. Butter or grease a 9 inch pie dish.
- Heat a medium skillet over medium low heat. Add butter. When butter melts, stir in the onions. Cook onions until soft and translucent and just beginning to brown on the edges. Stir in garlic. Cook gently,while stirring until garlic is fragrant--about one minute. Remove pan from the heat and set aside.

- Preheat oven to 375 degrees F (190 degrees C).

- In a frying pan heat 1 tablespoon of oil or butter on a medium-low heat. Add the onion and gently fry for 10 minutes until soft and beginning to caramelise. Add the garlic and cook for a further minute. Then remove from the heat and leave to cool.
- In a second pan heat the remaining oil or butter to a medium heat, then sauté the spinach for 2 minutes until wilted. Remove from the heat and leave to cool. Once cooled use your hands to squeeze out any excess liquid.

- Preheat the oven to 400 degrees F.
- Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.

- Preheat the oven to 350°F. Spray a 9 or 10 inch deep dish pie pan with cooking spray. Set aside.
- In a large skillet, cook the bacon over medium-high heat until crisp. Remove with a slotted spoon to paper towels to drain.
- To the drippings add onion. Cook for 3 minutes or until softened and beginning to brown. Add garlic. Cook for 1 minute longer. Remove from heat adding bacon and spinach to the pan. Mix well.
