2 lbs boneless skinless chicken breast (sliced or pounded thin)
6 tbsp pesto (prepared)
2 oz fresh baby spinach
2 roma tomatoes (roughly chopped)
8 oz quartered artichoke hearts ((1 14 oz can, drained))
1 cup mozzarella cheese (shredded (or Italian cheese blend))

Steps:

  • Preheat the oven to 375˚F. Place chicken flat in the bottom of a baking dish and spread 1-2 tbsp pesto on top of each chicken breast.
  • Layer spinach on top of the pesto, then place the tomatoes and artichoke hearts on top of the spinach.
  • Cover the top with mozzarella cheese.
  • Bake on lower middle rack for 30-45 minutes or until the chicken is cooked through (165˚F internal temperature.) Serve warm. Enjoy!

Steps:

  • In a food processor, add all ingredients to make pesto and blend until walnuts are finely blended.
  • In a hot pan, add olive oil and cook chicken breast. Salt and pepper to taste.
  • Remove the chicken and slice.
  • Combine the chicken and pesto sauce into spaghetti and mix until the sauce fully coats the pasta.

1/4 teaspoon freshly grated nutmeg (plus 1 pinch, to 3/8 teaspoon)
1/4 teaspoon sea salt
1/4 teaspoon sugar
1 dash fresh ground white pepper
1/2 medium sweet vidalia onion, chopped
4 fresh garlic cloves, minced
1/2 cup fat-free cream cheese spread
1/3 cup fresh deli basil pesto
2 -4 tablespoons crumbled feta cheese

Steps:

  • PLACE contents of 2 (16 ounce) tubs Organics brand fresh baby spinach in large soup pot over medium heat; POUR 1/2 cup water evenly over spinach; TOSS spinach until evenly dampened.
  • COVER pot; COOK spinach just until wilted, between 3-5 minutes, stirring once.
  • RETURN spinach into colander in sink; DRAIN completely and let set until ready to use.

6 ounces fresh spinach leaves ((buy them washed or rinse and dry yourself))
1/2 cup shelled walnuts ((can omit if needed))
1 garlic clove ((peeled))
1/2 cup olive oil
1/8 tsp. pepper
1 pinch salt

Steps:

  • If you need to grate your cheese, cut up your Parmesan wedge into chunks and put them in your food processor or blender. Chop them until the cheese is the right consistency. Rinse your spinach, if needed, and pat dry.
  • Add the spinach and all ingredients to the bowl of the food processor. Pulse until you have the consistency of a smooth paste, stopping once to scrape down the sides of the bowl.

I grow all of our produce and when basil is at its peak, it is time to make huge batches of pesto. Now I have lots of fresh baby spinach and adapted my basil pesto recipe for spinach. It is great with fresh fettuccine, topped over grilled fish and baked with chicken or pork. COOKS NOTES: I usually guess with the amount of ingredients, depending on how much I have and what taste I am looking for. Experiment with quantities to suit your taste!

4 cups torn spinach leaves, stems removed, well packed, 16 to 24 ounces
3 garlic cloves, halved
3 tablespoons toasted pine nuts
1 teaspoon chopped fresh basil

Steps:

  • Blend ricotta and Parmesan in medium bowl. Season cheeses with salt and pepper; stir in egg. Blend spinach and pesto in another medium bowl.
  • Brush 13x9x2-inch glass baking dish with oil. Spread 1 cup pasta sauce in prepared dish. Arrange 3 noodles side by side atop sauce. Spread 1 1/4 cups ricotta cheese mixture over in thin layer.
