CREAMY PASTA WITH SPINACH - WEIGHT WATCHERS FREESTYLE

Steps:
- Bring a pot of water to a boil. Add the pasta and cook according to the directions on the box.
- In a medium sauce pan add the tomato sauce, chicken broth, dried minced onion, garlic powder, Italian seasoning, salt and pepper. Bring to a simmer and let cook 5 minutes, stirring occasionally.
- Cut the cream cheese into small pieces and add to the sauce. Stir occasionally until the cream cheese is melted.
- Add the Parmesan cheese and spinach. Cook 5 more minutes.
- Add the pasta to the sauce and stir together.

I sprinkled some italian seasoning in the ricotta mixture and i also sauted some mushrooms to layer with everything else but i forgot about them and ended up putting them on the top at the end and that actually worked really well.lol I used a 8x8 casserole dish.UPDATE 2-18-09: made this again and added some cooked chicken to the mix and it was great. I sprinkled the chicken with italian seasoning and grilled it on the george foreman. excellent!

- Cook noodles until slightly under done. In a small bowl mix ricotta cheese, Parmesan cheese and parsley flakes. In an oven safe dish layer pasta, cheese, spinach and sauce until all ingredients are used. Save a small amount of mozzarella cheese to sprinkle on the top. Layer ingredients 2 to 3 times depending on the size of the dish. Top with mozzarella cheese. Bake at 375º for 35 to 40 minutes.
- Makes 8 one cup servings.

SPINACH PASTA BAKE
Simple delicious Spinach Pasta Bake - quick and easy to make pasta dish with healthy fresh spinach and a homemade tomato sauce.

Steps:
- Spray a frying pan with some cooking oil spray.
- Add the onion, carrot and garlic and fry for a couple of minutes to soften.
- Add in the crushed tomatoes, tomato paste, vinegar, herbs and water, bring to a boil and then cover and simmer for about 10-15 minutes.
- Add to a blender (or use a stick blender and blend until smooth (you can leave the sauce as is if you prefer).
- Taste sauce and season as needed with salt and black pepper.
- Preheat oven to 180c/Fan 160c/350f or gas mark 4
- Cook pasta accordingly to package instructions until al dente. Reserve a little of the pasta water
- Combine the sauce with the pasta and chopped spinach until all mixed well. Add in a little of the reserved pasta water if needed to loosen sauce.
- Add to an ovenproof dish and top with the cheeses.
- Bake for approx 25-30 minutes until cheese on top is melted and lightly golden.
- Serve and enjoy!!

- Cook the lasagna noodles according to package directions and drain.
- In a skillet or pot, cook onion in olive oil over medium heat until soft, about 5 minutes. Add sliced mushrooms and garlic, continue cooking until mushrooms are done, about 5 more minutes.
- Add diced tomatoes, spaghetti sauce, oregano and pepper to taste to the mushroom and onion mixture. Simmer for 5 more minutes and then remove from heat.
- In a large bowl, combine egg, cottage cheese, parmesan cheese, feta cheese and spinach.
- Spoon a little of the sauce in a 9x13 glass baking dish the layer in this order:.
- 3 lasagna noodles.
- 1/2 of the cottage cheese mixture.

- DOUGH: In a bread machine pan, place the first six ingredients in order suggested by manufacturer.
- Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tbs of water or flour if needed).
- When cycle is completed, turn dough onto a lightly floured surface.
- Knead for 1 minute.
- Cover and let rest for 15 minutes.
- Roll into a 12-in circle.
- Transfer to a lightly greased 12-in pizza pan.
- Cover and let rise in a warm place until puffed, about 20 minutes.
- TOPPINGS: Sprinkle with garlic and garlic salt.
- Top with the spinach, onion, mushrooms, cheeses and basil.
- Bake at 400 degrees for 30 to 35 minutes or until gold and cheese is melted.
- Let stand 5 minutes before slicing.
- Cut pizza into 6 slices.

- Spray a nonstick skillet with nonstick spray and set over medium-high heat. Add 1 bag of the spinach and cook until wilted. Drain. Repeat with the remaining 2 bags; squeeze dry.
- While the spinach cooks, whisk the milk, flour, salt and nutmeg in a medium saucepan until blended; bring to a simmer over medium-high heat. Reduce the heat and cook, stirring, until thickened, 4-5 minutes. Add the spinach and cook, stirring, until hot, about 1 minute.
