16 oz. Rigatoni pasta
30 oz. tomato sauce
1/2 cup fat free chicken broth
1 teaspoon dried minced onion
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
3 oz. reduced-fat cream cheese
2 tablespoons grated Parmesan cheese
3 cups fresh baby spinach

Steps:

  • Bring a pot of water to a boil. Add the pasta and cook according to the directions on the box.
  • In a medium sauce pan add the tomato sauce, chicken broth, dried minced onion, garlic powder, Italian seasoning, salt and pepper. Bring to a simmer and let cook 5 minutes, stirring occasionally.
  • Cut the cream cheese into small pieces and add to the sauce. Stir occasionally until the cream cheese is melted.
  • Add the Parmesan cheese and spinach. Cook 5 more minutes.
  • Add the pasta to the sauce and stir together.

I sprinkled some italian seasoning in the ricotta mixture and i also sauted some mushrooms to layer with everything else but i forgot about them and ended up putting them on the top at the end and that actually worked really well.lol I used a 8x8 casserole dish.UPDATE 2-18-09: made this again and added some cooked chicken to the mix and it was great. I sprinkled the chicken with italian seasoning and grilled it on the george foreman. excellent!

1 cup fat-free ricotta cheese
1 tablespoon parmesan cheese
2 teaspoons parsley flakes
4 ounces lowfat mozzarella cheese
3 cups reduced-calorie tomato sauce
5 cups rigatoni pasta or 5 cups mostaccioli pasta
1 cup raw spinach

Steps:

  • Cook noodles until slightly under done. In a small bowl mix ricotta cheese, Parmesan cheese and parsley flakes. In an oven safe dish layer pasta, cheese, spinach and sauce until all ingredients are used. Save a small amount of mozzarella cheese to sprinkle on the top. Layer ingredients 2 to 3 times depending on the size of the dish. Top with mozzarella cheese. Bake at 375º for 35 to 40 minutes.
  • Makes 8 one cup servings.
  • Per Serving: Calories -- 126 Fat -- 2 g Carbs -- 18 g Sodium -- 291 mg Fiber -- 1.2 g.

Simple delicious Spinach Pasta Bake - quick and easy to make pasta dish with healthy fresh spinach and a homemade tomato sauce.

250g (9oz) of uncooked pasta (I used penne rigate)
4-5 handfuls of fresh spinach, chopped
150g (5.5oz) of mozzarella, broken into pieces
30g (1oz) of parmesan, grated
100g (3.5oz) of onion, diced
100g (3.5oz) of carrot, diced
2 cloves of garlic, minced
425g (15oz) of crushed tomatoes
1 tbs of tomato paste (puree)
1/2 tbs of balsamic vinegar
pinch of dried basil
pinch of dried oregano
1.5 cups (360ml) of water
salt and black pepper
cooking oil spray (I used olive oil)

Steps:

  • Spray a frying pan with some cooking oil spray.
  • Add the onion, carrot and garlic and fry for a couple of minutes to soften.
  • Add in the crushed tomatoes, tomato paste, vinegar, herbs and water, bring to a boil and then cover and simmer for about 10-15 minutes.
  • Add to a blender (or use a stick blender and blend until smooth (you can leave the sauce as is if you prefer).
  • Taste sauce and season as needed with salt and black pepper.
  • Preheat oven to 180c/Fan 160c/350f or gas mark 4
  • Cook pasta accordingly to package instructions until al dente. Reserve a little of the pasta water
  • Combine the sauce with the pasta and chopped spinach until all mixed well. Add in a little of the reserved pasta water if needed to loosen sauce.
  • Add to an ovenproof dish and top with the cheeses.
  • Bake for approx 25-30 minutes until cheese on top is melted and lightly golden.
  • Serve and enjoy!!

1 teaspoon olive oil
2/3 ounce pine nuts, about 2 tbsp
1 1/2 teaspoons minced garlic
10 ounces frozen chopped spinach, thawed (I used freshly cooked spinach and it was just fine)
1 lb plum tomato, chopped
4 ounces feta cheese, crumbled
6 medium olives, black,pitted and chopped (I prefer the green Greek or Italian olives)

Steps:

  • Cook pasta according to package directions (without butter or oil), drain and set aside.
  • Coat a large skillet with cooking spray.
  • Add olive oil and heat over medium-high heat until oil sizzles.
  • Add pine nuts and garlic.
  • Cook and stir until pine nuts are golden brown, about 3 minutes.
  • Stir in spinach and tomatoes and cook until heated through, stirring occasionally, about 3 minutes.
  • Add spinach mixture to pasta and toss until combined.
  • Serve pasta sprinkled with feta cheese and black or green olives.

9 whole wheat lasagna noodles
1 tablespoon olive oil
1 onion, chopped
1/2 lb mushroom, sliced
3 garlic cloves, minced
1 egg
4 cups fresh spinach, chopped
500 g fat-free cottage cheese
1/2 cup parmesan cheese
1/2 cup feta cheese, crumbled
1 (26 ounce) jar spaghetti sauce
1 (14 ounce) can chopped tomatoes
1 cup mozzarella cheese, shredded
pepper
1 teaspoon dried oregano

Steps:

  • Cook the lasagna noodles according to package directions and drain.
  • In a skillet or pot, cook onion in olive oil over medium heat until soft, about 5 minutes. Add sliced mushrooms and garlic, continue cooking until mushrooms are done, about 5 more minutes.
  • Add diced tomatoes, spaghetti sauce, oregano and pepper to taste to the mushroom and onion mixture. Simmer for 5 more minutes and then remove from heat.
  • In a large bowl, combine egg, cottage cheese, parmesan cheese, feta cheese and spinach.

Found this recipe in Taste of Home by Wilma Lombardo. WW points caluculated using the nutritional analysis provided in the cookbook. One serving is 1 slice of pizza (cut pizza into 6 slices).

3/4 cup water (70 to 80 degrees)
2 tablespoons olive oil or 2 tablespoons canola oil
1/2 teaspoon sugar
1/2 teaspoon salt
2 cups bread flour
2 teaspoons active dry yeast
1 clove garlic, minced
1/8 teaspoon garlic salt
2 cups chopped fresh spinach
1 small red onion, sliced and separated into rings
1 cup sliced fresh mushrooms
4 ounces shredded mozzarella cheese
1/4 cup crumbled feta cheese
1/2 teaspoon dried basil

Steps:

  • DOUGH: In a bread machine pan, place the first six ingredients in order suggested by manufacturer.
  • Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tbs of water or flour if needed).
  • When cycle is completed, turn dough onto a lightly floured surface.
  • Knead for 1 minute.
  • Cover and let rest for 15 minutes.
  • Roll into a 12-in circle.
  • Transfer to a lightly greased 12-in pizza pan.
  • Cover and let rise in a warm place until puffed, about 20 minutes.
  • TOPPINGS: Sprinkle with garlic and garlic salt.
  • Top with the spinach, onion, mushrooms, cheeses and basil.
  • Bake at 400 degrees for 30 to 35 minutes or until gold and cheese is melted.
  • Let stand 5 minutes before slicing.
  • Cut pizza into 6 slices.

1 1/4 cups reduced-fat milk, 2%
2 tablespoons flour
1/2 teaspoon salt
1 pinch nutmeg

Steps:

  • Spray a nonstick skillet with nonstick spray and set over medium-high heat. Add 1 bag of the spinach and cook until wilted. Drain. Repeat with the remaining 2 bags; squeeze dry.
  • While the spinach cooks, whisk the milk, flour, salt and nutmeg in a medium saucepan until blended; bring to a simmer over medium-high heat. Reduce the heat and cook, stirring, until thickened, 4-5 minutes. Add the spinach and cook, stirring, until hot, about 1 minute.
  • If making ahead, let cool; freeze in an airtight container up to 1 month. Thaw in the refrigerator overnight. Cook with 2 tablespoons low-fat milk until hot.

1/2 cup nonfat sour cream

1/4 teaspoon table salt (optional)

Steps:

  • Place spinach in a small saucepan with 2 cups of water.
  • Bring to a boil over high heat and then cook for 1 minute; drain well.
