This is a side dish for everyone. Great taste and very versatile! You can change this recipe many different ways to suit your taste, for example, add slivered or shaved almonds, don't add mushrooms etc. It's very versatile.

1 cup uncooked orzo pasta
4 tablespoons unsalted butter, divided
4 tablespoons extra-virgin olive oil, divided
2 cloves garlic, minced, divided, or more to taste
1 ½ cups sliced button mushrooms
1 cup coarsely chopped fresh baby spinach, or more to taste
½ cup minced green onions, or to taste
½ cup shredded Parmigiano-Reggiano cheese, or more to taste
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat a skillet over medium heat. Add 2 tablespoons butter, 1 tablespoon olive oil, and 2 cloves garlic. Stir in mushrooms and toss to coat. Cook without stirring until very browned and caramelized, 5 to 7 minutes. Flip mushrooms to brown on the other side, about 5 minutes more.
  • Add remaining butter and oil to the skillet with the mushrooms. Add additional garlic to taste. Toss and cook for about 1 minute. Drain orzo, reserving about 1/2 cup cooking water. Add orzo and a splash or two of cooking water as desired to the skillet. Add spinach and green onions and mix well. Cook until warmed through, 3 to 5 minutes more. Add Parmigiano-Reggiano cheese and season with salt and pepper.

1 tbsp olive oil
1.2 lb / 600g mushrooms (, sliced (I used button mushrooms))
3 tbsp butter, unsalted
3 garlic cloves (, minced)
1 small onion (, finely diced)
3 tbsp flour
1 1/2 cups / 375 ml milk ((I used low fat))
3 cups / 750 ml chicken broth
1 1/2 cups orzo / risoni, uncooked ((Note 1))
1/2 tsp salt
Black pepper
3/4 cup parmesan cheese (, grated)
8 oz / 250g frozen spinach ((1 box), thawed, excess water squeezed out)
Extra parmesan cheese
Finely chopped parsley

Steps:

  • Heat the olive oil in a large non stick pan over high heat (if you aren't using non stick, use more oil).
  • Add the mushrooms and cook until softened (around 3 minutes). Remove from the pan and set aside.
  • Lower the heat to medium and melt the butter in the pan. Add garlic and onion, and sauté until the onion becomes translucent - around 3 minutes.
  • Add the flour, stir it in and cook for 1 minute.
  • Add the milk and chicken broth and use a whisk to mix the butter flour mixture into the liquid.
  • Increase heat to medium high. Add the orzo/risoni, salt and pepper, stir once, then put a lid on (Note 2). Bring it to a simmer, then leave it to cook for around 8 to 10 minutes or until the orzo/risoni is cooked but still slightly firm, and it is still quite saucy. Note: If you have a strong stove, turn it down slightly so it just simmers).
  • While the orzo is cooking, break up the spinach into little pieces with your fingers.
  • Remove the pan from the stove. Stir through the parmesan, spinach and cooked mushrooms. Check if more salt or pepper is required.
  • Serve immediately, garnished with more parmesan and fresh finely chopped parsley, if desired.

This side dish is easy to make and really tasty,, everyone loves it! Try to use a good-quality Parmesan or romano cheese for this, the common store-bought brand that you buy off the shelves will not do this recipe any justice. The pasta will thicken up upon sitting so it is best served right away, or shortly after cooking. I have even added in toasted sliced almonds to the pilaf after cooking. If you want a creamier textured dish then add in another 1/2 cup broth. It is important to lightly brown the orzo with the onions and garlic in butter before adding in the broth this really improves the flavor. You will love this!

2 cups orzo pasta (tiny rice shaped pasta)
1/3 cup butter (can use more butter)
1 large onion, chopped
1 tablespoon chopped fresh garlic (or to taste)
5 cups chicken broth (can use turkey broth or to make this vegetarian, use vegetable broth)
2 cups canned sliced mushrooms, drained (I just use one or two whole cans of drained sliced mushrooms)
2 teaspoons lemon juice
salt and pepper
1 cup fresh grated parmesan cheese (can use more if desired)

Steps:

  • In a saucepan, melt butter and saute the onion and garlic for about 2 minutes.
  • Add in the orzo to the onion/garlic mixture, and saute the orzo until golden brown (about 6-7 minutes, could take more or less time to brown).
  • Slowly add in the broth, lemon juice and mushrooms; stir to combine.
  • Simmer covered on low heat for about 15-20 minutes, or until pasta is JUST firm-tender and most of the liquid is absorbed (do not overcook the orzo!).
  • Remove from heat and add/mix in the Parmesan cheese, salt and pepper; toss to combine.
  • Transfer to a large bowl and serve immediately.

12 ounces baby portobello mushrooms (sliced)
1 teaspoon minced garlic
2 cups dried orzo pasta
3 cups chicken broth
1/2 cup shredded parmesan cheese
2 cups baby spinach
salt and pepper, to taste
garlic powder, to taste

Steps:

  • In a large skillet over medium-high heat, melt 1 Tablespoon butter. Add mushrooms and garlic and cook, stirring often until mushrooms are softened and brown.
  • Lower heat to medium, add remaining butter and orzo. Stir until the pasta starts to turn a light golden brown (it will only take a few minutes).
  • Add chicken broth and bring the mixture to a boil, stirring occasionally. Turn down to a simmer and continue stirring until the pasta is tender and most of the liquid has been absorbed (it will take about 10 minutes).
  • Remove from heat, then add parmesan cheese and spinach, stirring until the cheese is melted and spinach is wilted. Sprinkle with salt, pepper, and garlic powder. Serve warm.

Steps:

  • Heat oil in a saucepan over medium-high heat.

3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 large leek (white and light green parts only), sliced and rinsed
2 cloves garlic, minced
12 ounces orzo
3 cups milk
1 1/2 cups shredded Italian cheese blend (about 6 ounces)
1 5-ounce package baby spinach (about 8 cups)
Grated zest and juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 425 degrees F. Toss the mushrooms with 2 tablespoons olive oil, a pinch of salt and a few grinds of pepper on a baking sheet.
  • Spread out in a single layer. Roast, stirring halfway through, until well browned and crisp around the edges, about 25 minutes. Let cool for a few minutes, then scrape up with a spatula and transfer to a bowl.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the leek and garlic, season with salt and pepper and cook until the leek softens, about 2 minutes. Add the orzo, 2 cups water, the milk, 1 teaspoon salt and a few grinds of pepper.   • Using the same Dutch oven, wipe it dry and add 1 1/2 Tbs olive oil. Once shimmering add the diced mushrooms. Turn heat to medium high. Stir once, then allow to set stirring occasionally so the mushrooms have an opportunity to sear, for about 10 minutes or until golden brown.
  • Turn the heat down to medium low. Stir in the orzo and toast, stirring frequently, for about 3 minutes or until the orzo is slightly golden.
  • To the orzo mushroom mixture, add the garlic and shallots. Stir for about 30 seconds, then deglaze the pan with wine. It will steam and sizzle and cook off quick. Pour in the veggie broth, stir, bring to a simmer. Lid the pot and cook on low for 9-11 minutes or until the broth is absorbed and the pasta is tender. The pasta will stick a bit at this point, so using a wooden spoon, scrape when you stir.

  • Cover the pot and simmer the orzo for 10 minutes, stirring every 3-4 minutes. After 10 minutes, uncover the orzo and stir in the spinach in handfuls. Continue to cook, stirring the pot every minute, for 5-8 more minutes, or until the orzo is tender and the spinach has wilted into the orzo. If you need to add a splash of extra broth to loosen the orzo up, you can do that.
  • When the orzo is fully cooked, add a squeeze of fresh lemon juice and a few turns of freshly ground black pepper. Stir, taste, and add additional salt, lemon, and pepper as needed. Serve.
