GARLIC SCAPE PESTO

Garlic Scape Pesto image

Garlic scapes, the curled flower from the top of a garlic plant, are abundant at farmers markets and CSAs (community supported agriculture shares) in spring and make an easy, fragrant pesto that can be spread on bread or crackers, put on pasta, used with fish, and as a substitute for garlic, onion, or scallions! Add to sandwiches, pasta, lamb, and fish dishes. Tastes great mixed with mayo.

SIMPLE GARLIC AND BASIL PESTO

Simple Garlic and Basil Pesto image

This recipe is something that you can make quickly and easily using a blender. Everything you need is easy to find in your local supermarket. This paste is great for putting on or in meat and pastas, or with cottage cheese in stuffed pasta shells. Once I start making this, the orders from friends and family keep coming in. For best taste, pesto should be heated up in the meal it's being prepared with.

SPINACH AND GARLIC SCAPE PESTO

Spinach and Garlic Scape Pesto image

This is a great way to use garlic scapes - the curly green tops of garlic that you can get from the farm early in the growing season! The spinach cuts down some of the super-strong garlic flavor. Use as a sauce for hot pasta, a spread for sandwiches, mixed with mayo for a spread or dip, mixed with ranch dressing for salad. The possibilities are endless!

GREEN GARLIC PESTO

Green Garlic Pesto image

Green garlic (the young shoots of garlic plants) make a lovely green and delicious pesto-style sauce, which is perfect for pasta.

Provided by Molly Watson

Categories     Pasta     Sauce

Time 30m

Number Of Ingredients 6

1/2 pound green garlic
1 tablespoon vegetable oil
1/2 teaspoon fine sea salt, plus more to taste
1/4 cup pine nuts
1/4 cup extra-virgin olive oil
1/4 cup freshly shredded Pecorino cheese

Steps:

  • Gather the ingredients.
  • Trim and discard the root ends of the green garlic.
  • Finely chop the green garlic, rinse it thoroughly under cool running water in a colander, and pat or spin it dry (I find chopping and then cleaning gets all the dirt out of the picture; if it's been a rainy spring, the dirt has a way of getting splattered in between the layers of the green garlic leaves).
  • In a large frying pan over medium-high heat, cook the vegetable oil, green garlic, and 1/2 teaspoon of salt until the green garlic is soft, about 3 minutes. Let it cool to warm room temperature.
  • In a blender or food processor, pulse the pine nuts to chop. Set them aside in a bowl.
  • Put the cooked green garlic in and pulse it, scraping down the sides as necessary, until it is bright green and smooth.
  • With the motor running, drizzle in the olive oil.
  • Pulse in the reserved nuts and cheese. Taste the mixture and add more salt, if you like.
  • Use with your favorite type of pasta and enjoy.

TOFU & SPINACH PESTO

Tofu & Spinach Pesto image

Tofu and spinach... most people's reaction when they see those words is "Yuck!", but try this and see if your reaction is still the same :) This is an incredibly easy and tasty way to pack the benefits of spinach & the protein content of the tofu to picky eaters. Toss it into your pasta dish, replace tomato sauce on pizza with this, etc. My favourite way to eat is is spread on fresh bread. The measurements make it really easy to remember the recipe and you only need to use 1 measuring cup! I recommend you use firm tofu rather than silky because it is more nutritious. Make it ahead and have pesto on hand whenever you want it!!!

Provided by Geniale Genie

Categories     Spreads

Time 5m

Yield 20 serving(s)

Number Of Ingredients 7

150 g fresh spinach leaves
2 garlic cloves (reduce if you're not a garlic fan)

1/3 cup soft tofu (the firm kind, not the silky kind)
1/3 cup parmesan cheese, grated (the fresher the better)
1/3 cup water
3 tablespoons olive oil

Steps:

  • Throw everything in a blender or food processor and blend until smooth and creamy. Add salt and pepper is desired (although I really don't think it's necessary).
  • Using a tray for large ice cubes (usually 16), fill each individual hole with pesto. Cover and freeze. You should have some left over- keep that to eat fresh.
  • Pop out a cube from the freezer when you're in the mood for pesto! 1 cube = 1 portions (approx.).
