This is a healthy and filling dish. I like it mainly because it is easy to prepare and serves the purpose of a hassle free main course. Great dish to serve at get togethers too.

Steps:
- Heat butter on low heat and add rice, milk and salt and cook for 1 minute.
- Heat the oil and fry cumin seeds until they begin to crackle.
- Add onion and fry for 1 minute.
- Then add the green chilli and fry for some time.
- Add spinach and salt and cook till spinach is soft.
- Spread spinach at the bottom of a greased jelly mould.
- Spread the rice on top.
- Press well and cover.
- Bake in a preheated oven for 10 minutes at 400°F.
- While serving, invert on a plate and serve with hot cream of tomato soup ro any other thick soup.

- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.

- Heat oven to 350F degrees. Lightly mist a casserole dish with nonstick spray. I usually use a pretty oval dish, but you could use an 8- or 9-inch square dish if you like.
- In a large bowl, add cooked rice, spinach, butter, onion, salt and cheese. In a 4-cup measure, pour milk and add eggs. Whisk to combine. Pour into the bowl with rice-spinach mixture and stir well to combine.
- Pour into prepared casserole dish and bake for 45 minutes.
- Remove from oven and serve.

- Preheat the oven to 350 degrees and prepare a 9x13 baking dish with nonstick cooking spray.
- Melt the butter in a large skillet on medium-high heat. Add the onion and cook until translucent, about 3-4 minutes. Add the garlic and red bell pepper. Cook for another 2-3 minutes stirring frequently. Add the spinach and cook until wilted down. Remove from heat.

- Pre-heat oven to 350°.
- Grease a pie dish with butter. Add shredded parmesan cheese to bottom of dish and spread in a very thin layer.
- In a large saute pan, heat olive oil on medium. Add garlic and onion until translucent. Add spinach and saute, mixing often until spinach is bright and wilted. Remove from pan and put in a bowl.
- In a separate large bowl, add 5 eggs, 2/3 cup of milk, salt, and pepper. Whisk well.
- Add crumbed feta to bowl with spinach. Add spinach mixture to large bowl with eggs. Mix well.
- Pour egg and spinach mixture into pie dish so that it fills dish but doesn't overflow.
- Bake for 50 minutes until egg has set.
- Serve and enjoy!

- Heat a large frying pan with a drizzle of olive oil. Place the chopped onion and garlic in the pan to sauté. When the onion softens add the creamed spinach to thaw. In a large bowl combine two of the eggs, bread crumbs, crumbled feta cheese and the cooked rice. Mix these ingredients together. Add the sautéed spinach, onion and garlic to the bowl. Place the flour in a shallow bowl and the egg plus a splash of water in another shallow bowl. Form the spinach and rice mixture into patties. Coat the patty dipping first in the flour and then the egg wash and back in the flour. Heat a frying pan with about one inch of vegetable oil for frying the patties. Carefully place the patties in the hot oil. When the patties are a beautiful golden color on one side, carefully turn them. Place on a paper towel to absorb any excess oil.

- Over medium heat in a saucepan, combine the rice, broth, and water, and bring to a boil.
- Cover, reduce the heat to medium low, and let simmer for 15 to 18 minutes or until the rice has absorbed the liquid; transfer to a serving bowl and keep warm.

- In a deep pan heat up 1 tablespoon of olive oil;
- Add onion and simmer for about 10 minutes on low heat;
- Add thyme and leaks and simmer for another 5 minutes;
- Add half a cup of water and broth base, then simmer for another 5 minutes;

- Add rice and let it cook for about 2 minutes;
- Add half a cup of water and stir;

- Cut a pocket into the side of the chicken breast.
- Season chicken with salt and pepper.
- Stack the two cheeses and spinach on top of the ham and roll up tightly.
- Stuff the chicken with the roll and press the edges of the chicken together to create a seal.
- Place the flour, eggs, and bread crumbs into 3 separate bowls.

- In a large mixing bowl toss together the ham, baby spinach, green onions and 1 cup of the cheddar cheese. Add this to your pie shell. In the same bowl whisk together the eggs, milk, salt, pepper, nutmeg and cayenne.

- Wash the spinach and tender stems until the water runs clean; drain. If leaves are large and crinkly, sprinkle lightly with salt and mix well. Let stand in a colander 15 minutes; rinse and squeeze out excess moisture. Shred the spinach to make about 3 cups.
- Heat 3 tablespoons of the olive oil in a 10-inch straight-sided skillet. Add the scallions, onions, a pinch of salt, and 1/4 cup water and cook, covered, over medium-low heat for 10 minutes. When the water evaporates, slowly let the onions turn golden, stirring occasionally. Add 1 cup water, the reduced tomato purée, and rice. Cover and cook for 10 minutes.
- Spread the spinach and dill over the rice, cover, and cook 10 minutes longer. Remove from heat, mix, then place a double thickness of paper toweling over the rice, cover again, and let stand until cool. Adjust the seasoning with black pepper and salt and drizzle with the remaining tablespoon olive oil. Serve at room temperature garnished with black olives and feta cheese or yogurt.
BAKED RICE WITH SPINACH AND PARMESAN CHEESE
Steps:
- Heat the oven to 400 F.
- Grease a 3-quart baking dish or casserole.
- Peel the onion and chop it finely.
- Heat the olive oil in a medium saucepan or saute pan over medium heat. Add the finely chopped onion and cook until it is softened and translucent, stirring frequently. Add 4 1/2 cups of chicken stock and continue cooking until the stock comes to a simmer.
- Put the rice in a colander or mesh strainer and rinse with cold water.
- Transfer the rice to the prepared baking dish or casserole; add the chicken stock and onion mixture and stir the mixture gently until blended.
- Bake the rice, uncovered, in the preheated oven for 25 minutes, or until the liquid is almost absorbed. Stir the rice occasionally and add more stock, if necessary.
- Meanwhile, give the spinach a rough chop
- De-stem and chop the herbs finely.
- Remove the casserole from the oven and stir in the pepper, spinach, herbs, and Parmesan cheese. Taste the rice and add salt, if necessary. If the mixture seems dry, add more chicken stock.
- Cover the baking dish tightly with foil and return it to the oven. Bake the casserole for about 5 minutes longer, or until the rice is tender and the spinach has wilted.
- Stir the rice mixture with a fork to fluff.
