Found this recipe in Taste of Home by Wilma Lombardo. WW points caluculated using the nutritional analysis provided in the cookbook. One serving is 1 slice of pizza (cut pizza into 6 slices).

3/4 cup water (70 to 80 degrees)
2 tablespoons olive oil or 2 tablespoons canola oil
1/2 teaspoon sugar
1/2 teaspoon salt
2 cups bread flour
2 teaspoons active dry yeast
1 clove garlic, minced
1/8 teaspoon garlic salt
2 cups chopped fresh spinach
1 small red onion, sliced and separated into rings
1 cup sliced fresh mushrooms
4 ounces shredded mozzarella cheese
1/4 cup crumbled feta cheese
1/2 teaspoon dried basil

Steps:

  • DOUGH: In a bread machine pan, place the first six ingredients in order suggested by manufacturer.
  • Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tbs of water or flour if needed).
  • When cycle is completed, turn dough onto a lightly floured surface.
  • Knead for 1 minute.
  • Cover and let rest for 15 minutes.
  • Roll into a 12-in circle.
  • Transfer to a lightly greased 12-in pizza pan.
  • Cover and let rise in a warm place until puffed, about 20 minutes.
  • TOPPINGS: Sprinkle with garlic and garlic salt.
  • Top with the spinach, onion, mushrooms, cheeses and basil.
  • Bake at 400 degrees for 30 to 35 minutes or until gold and cheese is melted.
  • Let stand 5 minutes before slicing.
  • Cut pizza into 6 slices.

1 pizza dough, for 12 inch pizza
2 sweet onions, sliced
2 tablespoons olive oil
1/2-1 cup pesto sauce
1/2 cup frozen spinach, thawed and squeezed dry
1/2 cup sun-dried tomato, in oil drained
6 ounces feta, crumbled

Steps:

  • In large non-stick skillet, heat oil over medium high heat. Add onions. Once onions begin to brown reduce heat to low. Continue to cook onions until soft and caramelized. This should take a total of 20-30 minutes.
  • Roll dough out. Spread pesto. Layer remaining ingredients and onions over sauce.
  • Bake according to dough directions.

12 ounces uncooked penne
1 teaspoon olive oil
2/3 ounce pine nuts, about 2 tbsp
1 1/2 teaspoons minced garlic
10 ounces frozen chopped spinach, thawed (I used freshly cooked spinach and it was just fine)
1 lb plum tomato, chopped
4 ounces feta cheese, crumbled
6 medium olives, black,pitted and chopped (I prefer the green Greek or Italian olives)

Steps:

  • Cook pasta according to package directions (without butter or oil), drain and set aside.
  • Coat a large skillet with cooking spray.
  • Add olive oil and heat over medium-high heat until oil sizzles.
  • Add pine nuts and garlic.
  • Cook and stir until pine nuts are golden brown, about 3 minutes.
  • Stir in spinach and tomatoes and cook until heated through, stirring occasionally, about 3 minutes.
  • Add spinach mixture to pasta and toss until combined.
  • Serve pasta sprinkled with feta cheese and black or green olives.

For this, I decided to scale down one of my dough recipes (and put it in here) to make one thin crust 10" pizza, using my crisp-perfection method, and the same spinach filling used in Recipe #425059. I like Enrico's Natural Pizza Sauce the best, feel free to use whatever sauce you like. This uses more vegetables and less cheese than most pizza recipes and gives a nice Mediterranean flair. Could pair nicely with some shrimp or chicken for a one-dish meal. 3/4 cup AP flour + 2 1/4 tsp vital wheat gluten = 3/4 cup bread flour

1/2 cup warm water
1 teaspoon active dry yeast
1/4 teaspoon honey
1 tablespoon olive oil
1/4 teaspoon kosher salt
3/4 cup bread flour
1/4 cup whole wheat flour
3 cups fresh spinach
1/4 cup feta cheese, crumbled
1 tablespoon olive oil
1 garlic clove, chopped (1/2 tsp minced garlic)
1 teaspoon oregano
1/4 teaspoon ground black pepper
1/8 teaspoon sea salt
1 dash nutmeg

Steps:

  • Proof the yeast with the honey and warm water in a bowl. Let it sit 10-15 minutes, or until foamy.
  • Add the olive oil and salt.
  • Add the flours and knead by hand until elasticy, about 5 minutes.
  • Cover loosely with a dish towel and let rise for 20 minutes.
  • Grease a 10" pie pan with cooking spray or a little olive oil and lightly dust with flour.
  • Stretch the dough to fit the pan and make sure it plunks down in there well, and that it's puffier at the edges than the middle. Poke holes in the dough with a fork, then let it bake at 400F for 5-8 minutes.
  • While it bakes, make the spinach feta topping by running the spinach through a food chopper/processor until it has about the same consistency as tabouleh, then put into a mixing bowl.
  • Finely grate the feta cheese with a grater or food chopper then mix with the spinach.
  • Add all the other ingredients on the list for the topping to the bowl and mix thoroughly.
  • After the crust has prebaked, add the sauce of your choice. Then spread the spinach feta topping on evenly. Feel free to add more oregano, cracked red pepper, other toppings like artichokes and/or mushrooms, etc.
  • Bake for another 15-20 minutes. Turn on the broiler for about 5 minutes to get a nice crispy crust.

Steps:

  • Unroll crust into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Brush with oil; sprinkle with garlic. Spread with pizza sauce. , Layer with spinach, onion, mushrooms and cheeses. Sprinkle with basil, Italian seasoning and pepper flakes if desired. Bake at 400° for 15-18 minutes or until golden brown.
