Easy breakfast casserole with spinach and eggs with lots of cheese. This filling entree can be made in advance.

1 16 ounce container egg whites
2 large eggs
2 1/2 cups cheese like Colby or Sharp Cheddar, shredded
10 ounce fresh spinach
1 tablespoon butter
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Lightly grease a 9 x 13 inch baking dish and set aside. Preheat oven to 350 degrees. Heat a large skillet over medium heat and add butter. Once butter is melted add fresh spinach. Season with salt and pepper. Cook until wilted and tender (approximately 2 minutes). Remove from heat and cool. In a large mixing bowl whisk together egg whites, whole eggs, Italian seasoning and garlic powder. Fold in 2 cups of cheese with spinach and place in the prepared baking dish. Top with remaining 1/2 cup of cheese. OR place spinach evenly on the bottom of the prepared baking dish and add egg mixture on top followed with the remaining 1/2 cup of cheese. Bake uncovered for 25-30 minutes. To test for doneness, insert a knife in the center of the casserole. If it comes out clean, then it's done. For an exact temperature reading, the thermometer probe should reach 160 degrees.

1/4 cup butter
1 pound fresh spinach, trimmed
6 tablespoons minced fresh parsley
12 large eggs
1/2 cup sour cream
1/2 teaspoon salt
1-1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese

Steps:

  • In a large skillet, saute onions in butter for 2 minutes or until tender. Add spinach and parsley; saute 3 minutes longer or until heated through. Remove from the heat and set aside. , In a large bowl, beat the eggs, sour cream and salt until smooth. Stir in the spinach mixture and cheddar cheese. Pour into a greased 15x10x1-in. baking pan. Sprinkle with Parmesan cheese. , Bake, uncovered, at 350° for 25-30 minutes or until a knife inserted in the center comes out clean. Cut into squares.

8 large egg whites
1 whole egg
1/4 cup shredded cheddar cheese, fat-free
1 cup cleaned and washed Baby Spinach, torn roughly
1/2 cup diced mushroom
1/4 teaspoon chili flakes, totally optional based on how much you can handle
1/2 teaspoon black pepper
kosher salt, to taste

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl whisk together all ingredients. Lightly spray 4 (1/2 cup) ramekins with nonstick cooking spray and evenly divide egg mixture into bowls.
  • Place ramekins on a cookie sheet and bake for 20 minutes or until eggs puff and are almost set in the center. Check with a skewer if you want to, it should come out clean. Serve hot.
  • Want to make these as your grab and go breakfast? Make these as muffins, all you need to do is pour the mixture in muffin tray and bake (don't forget to line your muffin tray). Refrigerate and heat them for those busy mornings :).
  • You can add vegetables of your choice. Bacon chopped in bite size pieces goes well too.

1/2 cup whole milk
3/4 cup shredded gruyere cheese

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until golden, about 8 minutes. Add the mushrooms and cook, undisturbed, until they begin to brown, about 2 minutes. Add 1/2 teaspoon salt, and pepper to taste; continue cooking, stirring occasionally, until soft, about 4 more minutes. Stir in the spinach and cook until wilted, about 2 minutes. Remove from the heat and let cool.
  • Brush a 9-by-13-inch baking dish with olive oil. Arrange the bread in the dish in a single layer with the edges slightly overlapping, then spoon the mushroom-spinach mixture on top. If making ahead, cover and refrigerate overnight.
  • When ready to bake, preheat the oven to 350 degrees F. Crack an egg onto each piece of bread; season with salt and pepper. Pour the milk evenly over the top and sprinkle with the cheese. Bake until the egg whites are set, 25 to 30 minutes.

1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, crushed
pinch of chilli flakes
3 x 400g cans finely chopped tomatoes (or blitz regular canned chopped tomatoes using a food processor or hand blender)
3 tbsp sundried tomato pesto (ensure vegetarian, if needed)
200g spinach, roughly chopped
8 eggs
100g ricotta
40g parmesan or vegetarian alternative, finely grated
handful of basil leaves
crusty bread or focaccia, to serve

Steps:

  • Heat the oil and 2 tbsp butter in a large, shallow, flameproof casserole or frying pan over a low-medium heat and fry the onion with a pinch of salt for 10 mins until soft and translucent. Add the garlic and chilli flakes, and fry for 1 min more. Tip in the tomatoes, 1 tsp sugar and pesto. Season and simmer, uncovered, for 10 mins, stirring often. Tip in the spinach and cook for another 5 mins until wilted.
  • Heat the grill to high. Make eight gaps in the sauce with the back of a spoon and crack an egg into each. Dot over the ricotta and scatter with the parmesan. Cover and cook for 5 mins, then slide under the hot grill for a few minutes until the egg whites are set and the yolks runny. Scatter with the basil and serve with crusty bread for dunking.

Steps:

  • Preheat oven to 375°F. Brush a 2-quart baking dish with butter. Melt butter in a large skillet over medium-high heat. 400g can chopped tomatoes
1 tsp chilli flakes

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.
  • Mix the tomatoes with the chilli flakes and some seasoning, then add to the dishes with the spinach. Make a small well in the centre of each and crack in an egg. Bake for 12-15 mins or more depending on how you like your eggs. Serve with crusty bread, if you like.

180 g spinach (English leaves stems removed)
1 tablespoon olive oil spread (light)
2 1/2 tablespoons plain flour
2 cups skim milk
1/2 cup cheese (grated fat-reduced tasty or cheddar)
1/4 teaspoon ground nutmeg
6 eggs (room temperature)
4 spring onions (finely chopped)
1 pinch cayenne pepper
4 slices sourdough bread (toasted and lightly buttered to serve)

Steps:

  • Preheat oven to 180C (160C fan forced).
  • Lightly spray 4 x 1 cup capacity oven proof dishes with oil.
  • Place spinach and 1 tablespoon water in a medium saucepan over moderate heat and cook and stir for 3 minutes or until wilted and then drain and cool.
  • Using hands, squeeze excess liquid from spinach and chop coarsely.
  • Melt spread in a small saucepan over moderate heat and add flour and cook and stir for 1 minute or until bubbling and remove from heat and gradually stir in milk and increase heat to moderately high and cook stirring constantly until mix boils and thickens slightly and then remove from heat and stir in cheese and nutmeg until smooth.
  • Whisk in 2 of the eggs until well combined and then add spinach and onion to cheese sauce.
  • Pour mix into prepared dishes and using the back of a spoon make a slight indent at the centre of each dish and break an egg into each indent.
  • Place ramekins on a baking tray and sprinkle with cayenne pepper and bake for 18 to 20 minutes or until eggs are just set and then stand for 5 minutes before serving with buttered toast.
