⅓ cup parmesan (grated)
4 ounces monterey jack cheese (grated)

Steps:

  • Preheat oven to 350°F.
  • Steam frozen spinach in the microwave according to package instructions and drain excess liquid.
  • In a small bowl, warm cream cheese in the microwave for 1 minute to soften.
  • Combine spinach, cream cheese, mayo, sour cream, onion flakes, garlic, red pepper, parmesan, shredded jack and stir well.
  • Bake uncovered for 10 minutes, stir and serve.

1/2 cup sour cream
1/4 cup mayonnaise

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 small onion, finely chopped

  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.

1 (250 g) package cream cheese
1/4 cup onion, chopped
4 garlic cloves, minced
1/8 teaspoon Tabasco sauce

1/2 cup cheddar cheese, shredded

Steps:

  • Blend all ingredients in food processor, except cheddar cheese, adding as much milk as necessary for a smooth and creamy consistency.
  • Amount of garlic and/or Tabasco sauce can be increased for more intense flavour!

I found this recipe on a box of Mrs. Grass Recipe, Soup & Dip Mix, made by Wyler's. I like to add artichokes to fit my liking. I like cold and hot spinach dip. This recipe is meant to be cold but it could probably be good served warm too, heat in the oven till bubbly.
