Fruit Salad with Orange-Vanilla Syrup image

1 cup sugar
Zest and juice of 1 orange
1 vanilla bean
4 pints strawberries, hulled and halved
2 pints blueberries
2 cups green grapes, halved
2 cups red grapes, halved
Fresh mint leaves

Steps:

  • Place the sugar, 1 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar. Then bring to a boil. Turn the heat to low and simmer for about 15 minutes to thicken. Set aside to cool.
  • Prepare all the fruit in a large bowl, pour the cooled syrup over the top and toss together. Decorate with mint leaves and chill until ready to serve.

1 cup orange segments
1 cup halved fresh strawberries
1 cup cantaloupe chunks
1 cup watermelon chunks
1 cup grapefruit chunks
1 cup halved seedless grapes
6 tablespoons salad oil
3 tablespoons lime juice
3 tablespoons honey
¼ teaspoon vinegar, or to taste
1 pinch ground ginger

Steps:

  • Mix pineapple, oranges, strawberries, cantaloupe, watermelon, grapefruit, and grapes together in a bowl; refrigerate until chilled, at least 30 minutes.
  • Combine oil, lime juice, honey, vinegar, and ginger in a bottle with a lid; cover and shake until dressing is mixed. Refrigerate until chilled, at least 30 minutes. Shake dressing again; drizzle over fruit and toss to coat.

Fruit salad
1 honeydew melon
1 pineapple
1 pint strawberries
2 oranges
1/2 head iceberg lettuce
1 head romaine
Orange Mayonnaise Dressing
1/3 cup light corn syrup
3/4 cup real mayonnaise
1/4 cup orange juice
1/8 teaspoon grated onion

Steps:

  • For salad:
  • Cut melon in half, remove seeds, and scoop flesh into balls with ball cutter or teaspoon; chill. Slice off pineapple top; cut pineapple into eighths lengthwise. Place rind side down on cutting board. Cut meat from rind with sharp knife, following curve of fruit. Remove any remaining eyes with point of knife; cut off core. Cube and chill pineapple. Wash, hull and chill strawberries. Pare oranges with sharp knife, cutting completely through white portion; remove sections one at a time cutting down along one side of section and gently lifting other side away from membrane with knife; chill. Wash greens; crisp in refrigerator.
  • Meanwhile, make dressing:
  • Gradually stir corn syrup into mayonnaise. Mix in orange juice and onion. Makes 1 1/4 cups.
  • To serve:
  • Just before serving, tear greens into bite-size pieces in salad bowl. Add fruit; toss with dressing.

I was looking for a light meal for brunch and decided to toss every type of fruit I had in the house into a yogurt-based salad for lunch. It went over well with my lunch guest who is a fussy eater. My sister actually asked for seconds. The nice thing about this is you make what you need at the time and don't have to bother with leftovers. However, it does keep well for a few days as long as it is refrigerated. Serve in individual dishes with crackers.

2 tablespoons plus 2 teaspoons sugar
2 tablespoons white vinegar
1 tablespoon minced fresh parsley

Dash hot pepper sauce
SALAD:
1/3 cup sugar
1 cup pecan halves
2 tablespoons butter
4 cups torn fresh spinach
4 cups torn romaine
1 can (15 ounces) mandarin oranges, drained
2 celery ribs, chopped
1 cup sliced fresh strawberries
4 green onions, chopped

Steps:

  • For dressing, in a small bowl, whisk the oil, sugar, vinegar, parsley, salt and pepper sauce until blended. Cover and refrigerate., In a large heavy skillet, melt sugar over medium-low heat without stirring until golden brown, about 30 minutes. Add pecans and butter; stir constantly until butter is melted and pecans are coated. Remove from the heat. Pour onto a foil-lined baking sheet; cool completely. Break pecans apart if necessary., In a salad bowl, combine the spinach, romaine, oranges, celery, strawberries and onions. Just before serving, drizzle with dressing; toss to coat. I tossed this together at the last second for a fruit salad and it turned out wonderful. I did not have time to chill the salad, but it was fine at room temp. Use cold fruit so the salad does not have to be chilled before serving or bananas and apples may turn brown.

1 peeled orange, sectioned, seeds & white cover removed
1 granny smith apple, peeled and cut into small chunks
15 red seedless grapes or 15 green seedless grapes
1 banana, ripe but still firm, sliced
1 tablespoon light brown sugar
1 tablespoon orange-flavored liqueur (Grand Mariner etc.)
1 tablespoon sweetened flaked coconut (optional)

Steps:

  • Toss fruit together adding banana last to keep from mashing it.
  • Sprinkle brown sugar over fruit and toss gently.
  • Sprinkle orange liquor over fruit and toss again gently.
  • Chill and serve.
  • Sprinkle coconut over top if you like.
