Number Of Ingredients 9

2 (10 ounce) packages frozen spinach, thawed
1 onion, chopped
2 garlic cloves, minced
8 tablespoons butter, melted
6 eggs, beaten
16 ounces low fat cottage cheese (approx. 2 cups)
2 tablespoons all-purpose flour
1 lb low-fat sharp cheddar cheese, grated (approx. 4 cups)
salt and pepper

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 13 x 9 inch baking dish.
  • Drain spinach well. Saute onion and garlic in 2 Tbsp of the melted butter.
  • Mix spinach with eggs, cottage cheese and cheddar cheese, additonal 6 Tbsp butter, and flour. Add sauteed onions and garlic and mix together. Season with salt and pepper.
  • Pour into prepared dish and bake for 1 hour.

2 cups 4% cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
8 ounces crumbled feta cheese
6 tablespoons all-purpose flour
1/2 teaspoon pepper
1/4 teaspoon salt
4 large eggs, lightly beaten

Steps:

  • Preheat oven to 350°. In a large bowl, combine the cottage cheese, spinach and feta cheese. Stir in the flour, pepper and salt. Add eggs and mix well. , Spoon into a greased 9-in. square baking dish. Bake, uncovered, until a thermometer reads 160°, about 1 hour.

This dish is a great vegetable side dish that my Grandma used to make. I used to hate spinach before I tried this dish and now I love it and make it for guests!

2 cups cottage cheese
3 eggs, beaten
3 (10 ounce) packages chopped frozen spinach, thawed and squeezed dry
½ teaspoon salt
⅛ teaspoon ground nutmeg
1 ½ cups shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease sides and bottom of an 8 inch square baking dish.
  • In a large bowl, mix together the cottage cheese and eggs. Stir in spinach, salt, nutmeg, and 11/4 cups of shredded Cheddar cheese. Mix until well blended. Spread evenly into prepared pan.
  • Bake in preheated oven for 45 minutes, or until firm. Remove from oven, and sprinkle with remaining cheese. Allow to rest for 5 minutes before serving.

½ cup all-purpose flour
¼ cup sour cream
2 teaspoons salt
½ teaspoon ground black pepper
2 (10 ounce) packages frozen chopped spinach, thawed and drained
4 cups shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Place cottage cheese, eggs, flour, sour cream, salt, and pepper in a food processor. Process until smooth. Mix spinach, cottage cheese mixture, and 2 cups of Cheddar cheese in a bowl, then spread into the prepared baking dish.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Top with the remaining 2 cups of Cheddar cheese and continue baking until cheese has melted, about 10 minutes.

I received the original recipe from a close friend's mom who makes it for every holiday dinner. I took the original and tweaked it a bit to suit my tastes by adding garlic, nutmeg, cream cheese and the variety of cheeses. By the way, the leftovers (which I can eat hot or cold) make a FANTASTIC omelet filler or pizza topping. I have had this as a side dish with duck, turkey, chicken, ham, roast beef, meat loaf and pork ribs. It seems to meld with anything and everything. For a Greek variation, add some feta cheese to the mix. This low-carb dish is also a great crock pot recipe, just mix all the ingredients together and heat on low for 8 hours.

3 (10 ounce) boxes frozen chopped spinach (thawed, drained and squeezed dry)
2 cups monterey jack cheese or 2 cups colby-monterey jack cheese, shredded
1 cup cheddar cheese, shredded
24 ounces cottage cheese
4 ounces cream cheese, softened
2 whole eggs, beaten
1/2 cup onion, chopped
2 garlic cloves, minced
1 dash salt, to taste
1 dash pepper
1/8 teaspoon nutmeg
3 tablespoons butter
1/4 cup parmesan cheese

Steps:

  • Mix the garlic and onions together in a microwaveable dish (I use a Pyrex measuring cup) and microwave for 2 minutes (until the onions are translucent).
  • Once the onions are cooked, thoroughly mix all the ingredients together and pack it into a casserole dish.
  • Dot the top with butter, sprinkle on parmesan cheese.
  • Bake for 1 hour at 350°F.

1 pound spinach leaves, picked and washed
2 teaspoons olive oil
1 yellow onion, peeled and diced

1 teaspoon finely chopped fresh rosemary
1/4 teaspoon crushed red-pepper flakes
2 cups cooked quinoa (about 1 cup uncooked quinoa), made according to package directions
1 cup nonfat cottage cheese
1/4 teaspoon freshly ground black pepper
2 large eggs, lightly beaten

Steps:

  • Preheat oven to 350 degrees. Coat an 8-by-8-inch glass or ceramic baking dish with olive-oil spray. Coat with breadcrumbs; set aside.
  • Fill a large bowl with ice and water; set aside. Bring a medium pot of water to a boil. Add spinach; blanch until bright green, about 10 seconds. Transfer to ice bath. When spinach is cold, remove from ice bath, squeeze out all water, and finely chop; set aside.
  • Heat the olive oil in a medium saute pan. Add onion, garlic, thyme, rosemary, and red-pepper flakes, and saute until translucent, about 8 minutes. Remove from heat; transfer to a medium bowl.
  • Add spinach, quinoa, cottage cheese, pepper, and eggs to the onion mixture, and stir until well combined. Pour the mixture into the prepared baking dish, and place in the oven. Bake until set and edges are brown, 60 to 70 minutes. Slice, and serve warm or at room temperature.
