1 cup Original Bisquick™ mix
2 cups shredded mozzarella cheese (8 oz)
1 egg
2 teaspoons Italian seasoning
1 teaspoon garlic salt
1 cup tomato pasta sauce, if desired

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. In large bowl, mix all ingredients, except pasta sauce. Shape mixture into 1-inch balls; place on cookie sheet.
  • Bake 10 to 15 minutes or until golden brown. Immediately remove from pan. Serve with pasta sauce.

1 pound package frozen chopped spinach, thawed
5 eggs
1 large onion, minced
10 tablespoons margarine, melted
1 cup shredded Parmesan
2 garlic cloves, minced
1/2 teaspoon dried thyme leaves
1/2 teaspoon cayenne
1 3/4 cups Italian-style bread crumbs

Steps:

  • Preheat the oven to 350 degrees F.
  • Squeeze the excess water from the spinach and put it in a large mixing bowl. Add the remaining ingredients and mix well by hand.* Form the mixture into 1-inch balls, either by hand or with a small ice cream scoop. Place the balls closely together on a baking sheet.
  • Cook in the top half of the oven until firm to the touch, about 20 to 25 minutes. Let cool 5 minutes, and then transfer to a platter and serve immediately.

I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

This is an easy appetizer. This is made with cheese cube stuffed in spinach mixture.

8 oz Spinach leaves ((½ pound ))
1 tsp onion powder
½ tsp garlic powder
½ tsp red chilli powder (optional)
1½ tsp chili flakes
salt to taste
3 cubes mozzarella cheese
¼ - ½ cup bread crumbs (as required to make required consistency)
1 cup oil (for deep frying)

Steps:

  • Blanch spinach leaves for 2 - 3 minutes. Remove from hot water and transfer to iced water to retain color and stop further cooking. Then remove and strain out excess water.
  • Squeeze out the water. Grind to a paste without water.
  • Add bread crumbs, salt, red chilli powder, onion powder, garlic powder. Mix them together and make a dough like mixture.
  • Keep in refrigerator for 30 minutes to set properly. Then take out and divide into equal portions of lemon size.
  • Apply oil on palms and flatten the spinach ball making a disc shape.
  • Divide one cheese cube into 4 equal parts. Place the 1/4 of one cheese cube on spinach disc.
  • Cover it from all ends. Roll on palms till it turns complete circle.
  • Make sure there is no crack left on ball.
  • Repeat for all balls.
  • Heat oil in a pan. Deep fry the balls till they turn their color slightly. Remove from heat and place on paper napkins.
  • Spinach balls are ready to serve.
