Got this delicious and simple to make recipe from my oldest friend. I double the recipe for Christmas dinner and buffet parties, and it can even be eaten cold as a dip. You can easily make a white sauce en lieu of the creamed soup, if you like. Whichever way you make it, it's dee-lish!

Number Of Ingredients 5

2 (10 -15 ounce) boxes of chopped spinach (I prefer fresh)
1 (8 ounce) package cream cheese
1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can any other cream soup
salt and pepper (optional)
1 dash nutmeg (optional)

Steps:

  • Cook spinach until done, drain well, return to pan.
  • Over a low heat, stir in chunks of cream cheese and the cream of chicken soup
  • Keep stirring and heating until all ingredients are melted into a creamy mixture
  • Can be served from the pan, but better if baked at 350°F for approximately ten minutes.

3 eggs
1/2 pint sour cream
1 (6 ounce) can French-fried onions
10 ounces frozen chopped spinach, thawed, drained
4 ounces cheddar cheese, shredded
1 (4 ounce) can mushrooms, stems and pieces, drained

Steps:

  • Mix all ingredients together well.
  • Place in a 2 quart rectangular casserole dish and bake in a 350 degree oven for 50 minutes.

Spinach Casserole is a delightful way to boost your iron and vitamin c intake! Although it is high in fat, due to the cheese, you could make it several times a year for special occasions.

butter
1/4 cup half-and-half
2 eggs (lightly beaten)
ground black pepper
kosher salt
1/4 teaspoon ground nutmeg
2 cups mozzarella cheese (coarsely grated)
20 ounces frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a shallow 1-quart baking dish.
  • In a large bowl whisk half-and-half, eggs, 1 teaspoon salt, 1/8 teaspoon pepper, and nutmeg together; stir in 1 +1/2 cups of the cheese then the spinach. Spread evenly in prepared baking dish, and top with remaining 1/2 cup cheese.
  • Bake until set in the middle and top is golden brown, 30 to 35 minutes.
