- Preheat the oven to 350 degrees F. Brush a 9-inch pie pan with the butter and sprinkle the grated Parmesan evenly on top. Put the pan on a rimmed baking sheet.
- Whisk the half-and-half, flour, cayenne, eggs, egg yolks, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl. Spread the spinach and bacon out in the prepared pie pan. Pour the egg mixture over top and sprinkle with the cheese and chives.
- Bake until the quiche is just set in the center, 40 to 50 minutes. Transfer to a wire rack to cool and then slice into wedges. Serve with more baby spinach if using.

- Crust: Pulse flour and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal. Whisk together egg yolk and 2 tablespoons ice water. Add to flour mixture and pulse until moist crumbs start to form (no longer). Transfer mixture to a piece of plastic wrap, and using wrap and your hands, form into a disk. Refrigerate, wrapped, at least 30 minutes and up to 4 hours.
- On a lightly floured work surface, roll out dough to an 11-inch round. Transfer to a 9-inch pie plate; trim edges to a 1-inch overhang. Tuck overhang under and crimp as desired. (To create arc pattern, press a spoon into dough.) Wrap in plastic; freeze at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees. Line crust with parchment and fill with dried beans or pie weights. Bake until dough underneath parchment is dry, 25 minutes; remove parchment and beans. Bake until golden, 8 to 10 minutes more. Let cool slightly.
- Filling: Reduce oven temperature to 375 degrees. Whisk eggs until smooth, then whisk in cream, milk, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Stir in half of bacon and cheese. Pour custard mixture into crust, stopping just short of the top; be careful not to overfill. Press spinach into custard, leaving some poking out from top.
- Sprinkle with remaining bacon and cheese. Bake 10 minutes at 375 degrees, then about 55 minutes at 325 degrees. Let cool about 1 hour before serving.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop when cool.

I like to have this sometimes on Sunday for brunch when I want something a little eggy/cheesy. Usually I serve it with a light crisp green salad with some sort of vinaigrette. - Prep: Place a lined baking sheet in the oven and preheat it to 410°F. Lightly grease a deep dish 9 inch pie plate and fit the crust inside. Prick the bottom of the pastry with a fork a few times. Place in the fridge until ready to use.
- Cook filling: Cook the bacon in a large frying pan until browned. Add the onion and cook until softened, then add the spinach and cook until wilted and excess moisture has evaporated. (Gently pat dry with paper towels if your spinach released a lot of water and still feels very wet.)
- Make egg mix: Whisk together eggs, milk, flour, salt, nutmeg and pepper in a medium mixing bowl.
- Assemble: Place the spinach mix into the prepared crust. Sprinkle with the cheese. Pour the egg mix over it.
- Bake: Reduce oven temperature to 375F. Bake for 45-50 minutes or until the middle is set. If the top gets too brown, loosely cover with a piece of foil. Let stand for 10 minutes before slicing into wedges to serve.

LOADED SPINACH BACON QUICHE
Steps:
- Shred one large or two medium russet or Yukon gold potatoes using a box shredder until you have a cup and half of shredded potatoes. Prepare the potatoes by rinsing off excess starch then removing as much moisture as possible by spreading the potatoes out evenly on top of the paper towel and adding a layer of paper towel on top and pressing down on the potatoes to remove as much water as you can. Note: you can also use a cheesecloth too!
- Place a skillet over medium-high heat and add the EVOO and butter; when the oil is hot and the butter is melted, add the shredded potatoes and sauté for three minutes; we do this to 1. soften the potatoes, 2. more moisture will be removed by sautéeing the potatoes, and 2. to brown the shredded the potatoes just a little bit before adding them to the quiche.
- Crack five eggs into a large bowl and add the half & half. Use a wire whisk and whisk the mixture until the eggs and half & half are well-combined. Add the prepared shredded potatoes, chopped baby spinach, shredded smoked Gouda cheese, crumbled thick-cut bacon, diced ham, minced garlic, and three-quarters of the chopped green onions. Use the wire whisk to mix all of the ingredients.
- Preheat the oven to 400° and line the pie shell with parchment paper. Add the 1 1/2 cups of dry beans or pie weights, bake the pie shell on the middle rack for fifteen minutes, or until the edges are lightly brown. Remove the parchment paper along with the dry beans or pie weights. Using a fork, prick the bottom of the pie shell and return to the oven, and bake for an additional 5-8 minutes. Open the oven and slide-out the middle rack and fill the pie shell with the quiche mixture. To keep the pie shell edges from over-browning cover with aluminum foil or use a pie crust shield.
- Bake the quiche for forty minutes or until the quiche, has set.
- Remove the quiche from the oven and allow the quiche to cool for about fifteen minutes.
- Serve.
SPINACH AND BACON QUICHE
Steps:
- Preheat the oven to 375 degrees F. Roll out one disc of pie dough into a circle, 12 inches in diameter. Place in 9 inch pie dish and crimp edges.
- Blind bake crust: Place a piece of parchment paper inside the pie pan and add 2 cups of pie weights, dry beans or rice. Bake at 375 degrees F for 15 minutes. Remove parchment paper and pie weights. Prick pie crust all over with a fork, then return to the oven for 8 more minutes.
- Meanwhile, cook bacon, in a skillet. Once cooked, remove to a plate and chop. Remove most of the grease from the pan and add onion and spinach. Saute for 2 minutes. Add cheese, onion, spinach, and bacon to the bottom of the partially baked pie crust.
- Combine the eggs, half and half, salt, and pepper in a blender, then pour the egg mixture into the pie.
- Reduce oven temperature to 350 degrees. Bake quiche for 40- 45 minutes until the egg mixture is set. Allow to cool for 10 minutes, or even to room temperature, before slicing. Store leftovers, covered, in the fridge.

- In a frypan, melt butter and sauté onion and bacon until onion is translucent.
- Heat spinach and drain on paper towel. Add drained spinach and corn to bacon and onion mix and cook on low for a further 5 minutes.

HEARTY BACON-SPINACH QUICHE
This does not call for heavy cream like many other quiche recipes I've found. The original recipe is from www.marthastewart.com, which I've altered. I use 6 eggs, not 4 eggs as the recipe calls for. The cheeses I used instead of 1 cup cheddar: Norvegia (Norwegian mild white cheese), mozarella and parmesan. It also calls for 2 tablespoons chopped onion, but I substitute dried chives, powdered onion, and powdered garlic. We had it for dinner , but it would make a great brunch.

- Begin by defrosting the spinach and the puff pastry. Once the spinach is defrosted place it in a kitchen towel and wring out as much moisture as you can . Once dried chop fine.
- Place the puff pastry on a lightly floured surface and when softened roll out to a 11 or 12" square. Then place into a 9' glass pie pan.
- While the pastry is defrosting diced the bacon and on medium heat cook until crisp. Remove to a paper towel to drain and cool.
- Drain off most of the bacon fat, add the onions and saute until translucent. remove from the pan to cool.
- Preheat oven to 425º.
- Take the eggs, milk and whipped cream cheese and whisk briskly until all are combined and the cream cheese is in lumps the size of small peas.
- Add the bacon, onion, spinach and cheddar cheese and about a teaspoon each of salt and pepper to the egg mixture and stir to combine.
- Pour the mixture into the prepared pie pan. You can trim the pastry and crimp it around the edges of the pie plate or simply fold the four corners over the top of the egg mixture.
- Bake in a 425º oven for about 25 minutes until the crust begins to brown and the egg mixture is set.
- Remove from the oven and allow the quiché to cool on a wire rack for about 5-10 minutes, then slice and serve. Serve with sour cream on the side.

- In a processor, process butter, flour, and a pinch of salt into crumb form. Add egg and one to two tablespoons of water and process further.
- Between two floured sheets of baking paper, roll pastry with a rolling pin. Line a 25cm loose-based flan with pastry and let chill for 30 minutes.
- Meanwhile to make the filling,in a frying pan over medium heat, heat oil, onion and bacon. Cook for 8 to 10 minutes or until onion is soft. Drain.
- After preheating the oven to 190°C, line pastry with baking paper and fill with uncooked rice. Bake for 10 minutes. Remove rice and paper.
