DEVILED BACON AND EGGS

Steps:
- Fry the peppered bacon in a pan over medium heat until crisp, 12 to 15 minutes. Remove to a paper-lined plate.
- Fill a large pot with enough water to cover the eggs, then bring to a boil (without the eggs). Using a slotted spoon, gently lower the eggs into the boiling water. Cover and simmer for 10 minutes. Run the eggs under cold water until completely cooled.
- Peel the eggs, cut in half and scoop out the yolks into the bowl of a stand mixer fitted with the whisk attachment. Add the mayo, cream, mustard, sugar and vinegar. Add hot sauce if using and salt and pepper to taste. Whip until smooth.
- Using a small spoon, fill each egg white half with a generous teaspoon of the filling. Lightly sprinkle with paprika. Cut the bacon into chunks and decorate the tops of the egg halves with a shard of bacon.

- Cut eggs in half lengthwise. Remove yolks; set whites aside. In a small bowl, mash yolks. Add the mayonnaise, vinegar, butter, sugar, pepper and salt; mix well. Stir in bacon and spinach. Stuff or pipe into egg whites. Refrigerate until serving.

SPICY BACON DEVILED EGGS

- Place eggs in a pot and fill with water till the water covers the eggs. Bring them to a boil and as soon as the water starts boiling, turn off the flame. Cover the pot for 10 minutes for hard boiled eggs. Once 10 minutes are up, ladle the eggs out and place them in ice cold water. This stops them from cooking further. Once completely cool, peel the eggs and set aside.
- Cook the bacon strips till lightly crispy. Take them off the pan and chop them into small pieces when cool.
- To make the filling, cut each egg in half lengthwise and scoop out the the yolk in a bowl. Add dijon mustard, mayonnaise, cream cheese, Bira's hot sauce and pepper to the boil. Whisk till completely smooth and add the bacon, reserving a few pieces of bacon for topping. Mix well.
- To assemble the deviled eggs, spoon the filling into a piping bag and cut off the end. Pipe the filling on top of each egg. Add more bacon bits on top. These spicy bacon deviled eggs can be refrigerated in an air tight container for up to 3 days, but taste best when served immediately.

- Peel eggs and remove yolk.
- Mix mustard and mayonnaise together.
- Mix yolk with mayo mixture until thoroughly mixed.
- Season with salt and pepper.
- Use a paper towel to make sure the whites are dry and place on a salted plate.
- Pipe into each egg white.
- Top with cheddar, crumbled bacon, and chives.

- Heat 1 tablespoon oil in a large saute pan over medium heat. Add spinach and cook, tossing occasionally, until wilted and starting to look dry, about 5 minutes. Transfer spinach to paper towels, and squeeze out excess liquid.
- Place spinach and mayonnaise in a food processor, and blend until very smooth. Pass through a fine sieve, and discard solids. In a clean food processor bowl, pulse spinach mixture, mustard, yolks, and remaining 1 tablespoon oil. Add salt and pepper, and pulse to combine.
- Transfer mixture to a large piping bag fitted with a 1/2-inch star tip, and pipe filling into each egg-white half. Alternatively, spoon filling into whites. Garnish each with a small sprig of chervil or thyme, and serve immediately.

Another twist on deviled eggs with spinach and bacon. Original recipe calls for cider vinegar AND sugar, but I think it's fine if you want to omit the sugar. I topped it off with a little cayenne pepper and paprika and everyone enjoyed it. - place filling in a strong zip lock bag or piping bag and fill the eggs with mixture.

- Place a small stockpot filled half-way with water, set the water over high-heat when the water begins to simmer place eight eggs into the water.
- Allow the eggs to boil for 12-minutes. Next, transfer the hard-boiled eggs into a bowl of cold water. You can add ice cubes to the water to get the eggs cool.
- After the eggs are cool enough to handle safely, peel them under a stream of warm water. Once peeled, dry the eggs off with a paper towel, then use a sharp chef's knife and cut each egg in half. Scoop out the yolks one at a time into a medium-size bowl.
- Use a fork to mash the eggs yolks until there are no lumps, fold in the spinach and artichoke dip, bruschetta topping, and minced parsley and add freshly cracked black peppercorns to taste.
