- In large non-stick skillet, combine first 3 ingredients.
- Cook over medium heat until browned, stirring to crumble beef.
- Drain in a colander, discard drippings.
- Wipe skillet dry with a paper towel.
- Return beef mixture to skillet; add chopped spinach, spices and salt; stir well.
- Cover and cook over medium heat 3 minutes or just until spinach is wilted; remove from heat.
- Spoon 1/2 cup beef mixture into each pita half lined with whole spinach leaves.
- Mix yogurt with curry powder if desired.
- Top each pita half with 1 tablespoon yogurt.

BOSNIAN PITA (PHYLLO PIE) WITH SPINACH FILLING
This is one of the most delicious dishes I have ever come across. It is special to me because it is my husband's favorite dish from his old country. My mother in law and his aunt, both from Bosnia, taught me how to make it, even though they do not speak much English. They even make their own dough, but making phyllo dough is very difficult and they assured me it is more than okay

Steps:
- WASH HANDS (This recipe requires you to work with the food directly with your hands).
- Preheat oven to 350.
- Wash and drain spinach.
- Chop spinach and put in a big glass bowl.
- Add salt and mix with hands.
- Leave the spinach to sit for about 10 minutes to allow the salt to draw out the water from the vegetable.
- The water in spinach will make the filling bitter so do not skip this step.
- Drain the spinach by either sqeezing it bit by bit with your hand over the sink or by spinning several times in a salad spinner.
- Transfer drained spinach into a new bowl.
- Add egg, and sour cream.
- Fold in feta and cheddar cheese.
- Put some olive oil in a small bowl.
- Grease a 9"*13" glass or metal baking pan.
- Take your phyllo dough sheets and lie the sheets, stacked, on a dry surface.
- TIP: (While adding the filling, you may wish to cover the dough with a dry towel and then a damp one to keep it from drying out or flaking) Place one sheet of dough into the pan and cut away excess.
- Brush with oil, using either your hands or a pastry brush.
- Repeat until dough is 6 or 7 layers.
- Add a skim of filling with hands and spread evenly.
- Repeat steps 16-18 until the pie reaches the top of the pan or you run out of ingredients.
- Just make sure you finish with the dough on top, sort of like lasagna.
- Place pie in the oven, uncovered, about 45 minutes.
- The top becomes flaky.
- Pour on top of the pie while it is baking, 1/4 cup sour cream blended with 0.125 cup of milk.
- Bake for 15 more minutes.
- This dish can be served warm or room temperature.
- It is traditionally served with a yogurt beverage which is easily replicated by mixing the plain yogurt with milk, in equal parts.

CREPES WITH SPINACH AND CHEESE FILLING
Steps:
- Prepare the spinach first. In a large pan heat up 1 tablespoon of oil, add the garlic and fry for 30 seconds. Add the spinach and fry over a high heat for about a minute, stirring all the time, until the spinach has wilted. Remove from the heat before it starts releasing water. Set aside to cool.
- Meanwhile make the crepes. In a large bowl combine the flour with the salt and stir using a whisk. Add the egg and oil and start gradually pouring in the milk whisking all the time until all the ingredients have been incorporated and the mixture is silky smooth. Set aside for 5 minutes.
- Heat up a pancake pan (large or small), grease with a little oil (I used a piece of paper towel to do this) and ladle the crepes batter onto the pan in a circular motion swirling the pan to ensure the batter covers the entire surface. Cook over a medium heat for about 2 minutes on one side and a minute on the other, until the crepe is lightly browned. Stack ready crepes on a large plate.
- To make the filling puree the spinach mixture (once cooled) along with the cottage cheese, cheddar cheese and onion granules until smooth (or puree the spinach then stir in the cheeses for more texture). Season to taste and make the crepes.

This spicy southern tomato and spinach pie is delicious and decadent! It's the perfect make-ahead party or brunch dish, and can be served hot, cold, or room-temperature.

- Preheat your oven and press pie dough in dish. Preheat your oven to 350 degrees F. Press the pie dough into a pie dish. Crimp the edges if you want to.
- Sprinkle tomatoes with salt and set aside to drain. Place sliced tomatoes on a wire rack nestled into a rimmed baking sheet, and sprinkle both sides with kosher salt (if you don't have a wire rack, you can use a large colander). Set aside.
- Blind bake the crust. Blind bake the pie crust at 350 degrees for approximately 15 minutes, or until just starting to brown using pie weights or beans (see notes).
- Thaw and drain frozen spinach. While the pie crust blind bakes, thaw the frozen spinach and squeeze out as much water as possible. I like to place it frozen in a sturdy colander, run hot water over it until it's thawed, then use a wooden spoon to squeeze as much water out as possible.
- Mix mayo, mozzarella, spinach, and hot sauce. In a large bowl, mix together the mayonnaise (1/2 cup), shredded mozzarella (16 oz.), spinach, and hot sauce, if using (1 tablespoon).
- Pat tomatoes as dry as possible with a paper towel. I recommend patting both sides dry and pressing fairly firmly down on them. You may need to squeeze the water out of the paper towel a few times - the goal is to remove as much water as possible (without smushing them too much so they keep their shape).
- Assemble the pie. Set 5 tomato slices aside. Layer half of the remaining tomatoes on the bottom of pie. Spread half the spinach mixture on top of that. Repeat with the remaining tomatoes and spinach mixture. Place the five reserved tomato slices on top.
- Bake the tomato pie at 350 degrees F. for 35-40 minutes, or until browned and bubbly.
- Allow to sit for at least 10 minutes before cutting the pie into 8 slices. Serve warm or at room temperature.

- Heat oil in a large skillet over medium-high heat until the hot oil sizzles, about 1 minute. Add spinach and sauté until completely wilted, about 2-3 minutes. Season with salt, pepper, and garlic powder.
