1 medium onion, chopped
5 garlic cloves, minced
1/2 to 1 teaspoon crushed red pepper flakes

3 tablespoons minced fresh basil or 1 tablespoon dried basil

1 pound uncooked shrimp (26-30 per pound), peeled and deveined
3 cups finely chopped fresh spinach
Grated Parmesan cheese, optional

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 5-7 minutes. Add garlic and pepper flakes; cook 1 minute longer. Stir in wine. Bring to a boil; cook until liquid is reduced by half. Stir in tomatoes, tomato sauce, basil, oregano, salt and pepper. Cook and stir until sauce is slightly thickened, about 10 minutes., Add shrimp and spinach; cook and stir until shrimp turn pink and spinach is wilted, 3-5 minutes. If desired, sprinkle with cheese.

4 pounds of spinach chopped
1 pound of cooked meat of choice (I used fried Tilapia)
1/2 pound of small fresh water shrimp
2 roma tomatoes
1 red bell pepper
1 large red onion
2 habanero peppers
2 cloves of garlic
1/4 cup palm oil/ annatto oil
3 tbsp powdered dried shrimp
Salt to taste

Steps:

  • To prep, blend half of the red onion with the tomatoes, bell pepper, garlic, and hot pepper. Chop the other half of the red onion.
  • In a deep sauce pan or stock pot, heat the oil and saute the onions over medium heat until its golden brown.
  • Add the blended tomato mix, and allow to cook over medium heat for about 30 minutes. Stir occasionally to avoid the mix from burning.
  • After 30 minutes, the sauce should be significantly reduced, at this point season it with powdered dry shrimp and salt to taste.
  • If cooking with cooked red meat or chicken, add them to the sauce at this point. If using dried mushrooms, re-hydrate and them at this point as well.
  • Add the fresh shrimp to the sauce, then add the spinach. At this stage, the spinach may look too much, but allow to sit in the pot for about 1 minute.
  • Gently stir the stew and the spinach until the spinach is wilted till about half the its original volume.
  • Adjust the seasoning with salt to taste if necessary. At this point I added the fried tilapia, stirred and served.
  • This stew is best served warm and freshly cooked.

1 tsp dried basil
Salt and freshly ground black pepper
2 Tbsp butter, (divided)
1 Tbsp minced garlic ((3 cloves))
3/4 cup low-sodium chicken broth
1/2 cup heavy cream
2 tsp cornstarch mixed with 1 Tbsp chicken broth
3 oz baby spinach, (chopped (2 packed cups))
1/2 cup (1.5 oz) shredded parmesan cheese

Steps:

  • Sprinkle shrimp with basil, season lightly with salt and pepper and toss.
  • Melt 1 Tbsp butter in a 12-inch non-stick skillet over medium-high heat.
  • Add shrimp in a single layer and cook until bottom is pink, then flip and cook opposite side of shrimp until cooked through and pink, about 3 minutes total.
  • Transfer shrimp to a plate then melt remaining 1 Tbsp butter in same skillet over medium heat.
  • Add garlic and saute until just lightly golden brown, about 30 seconds then pour in chicken broth.
  • Add spinach and stir and cook until it starts to wilt, about 1 minute.
  • Stir in cream and cornstarch mixture and cook, stirring constantly, until mixture starts to simmer and thicken slightly, about 2 minutes.
  • Stir in parmesan cheese and cook until cheese has melted, season lightly with salt if needed.
  • Remove from heat and toss in shrimp. Serve over spaghetti or spaghetti squash if desired.

1/2 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
4 cups chicken broth (see recipe)
1 1/2 teaspoons salt
Freshly ground pepper to taste
4 cups stemmed fresh spinach leaves, finely chopped
12 cloves roasted garlic, peeled

Steps:

  • Bring a large pot of water to a boil. Reduce heat so the water simmers. Add the shrimp and cook until they turn pink, about 3 minutes. Drain, peel and devein the shrimp. Cut them in half, crosswise and set aside.
  • Place the rice in a mixing bowl and toss with the lemon rind and lemon juice. Pour the chicken broth in a saucepan and bring to a simmer. Season with the salt and pepper to taste.

1/4 cup soy sauce (I used the low sodium soy sauce)
2 tablespoons mirin
1 tablespoon ginger, peeled and minced
3 carrots, shredded
5 tablespoons miso
2 lbs small shrimp, peeled
4 cups spinach, trimmed and chopped roughly
1 shallots, chopped or 1/2 cup green onion, sliced
1/2-1 teaspoon chili oil

Steps:

  • In a large pot, place first four ingredients (broth- ginger) and bring to a boil over medium-high heat.
  • Add carrots and reduce heat to low and simmer for 5 minutes.
  • Place miso in a bowl and whisk in 1/2 cup of the hot broth.
  • Return all to pan.
  • Return to a boil and add shrimp, spinach and shallot (or green onion).
  • Simmer for 5 minutes or until shrimp is pink.

  • In a cast iron skillet, heat 1 tbsp olive oil over medium-high heat until shimmering. Gently add the sea scallops. Sear for about 1 1/2 minutes on each side. Scallops should form a golden brown crust. Sprinkle a large pinch of dried oregano. Transfer to a dish and set aside for now.
  • To the same cast iron skillet, add a little more extra virgin olive oil if needed. Again heat over medium-high until shimmering but not smoking. Add the shrimp; sear for about 2 minutes on both sides. You want to see some pink, but don't worry about fully cooking it (you will finish cooking it in the soup.) Remove from the heat and sprinkle a generous pinch of dried oregano.
  • In a medium heavy cooking pot, heat 1 tbsp extra virgin olive oil on medium-high. Add the chopped peppers, onions, garlic, tomato paste, salt and the remaining dried oregano. Cook for 5 minutes, stirring occasionally.
