SPINACH AND SHRIMP MISO SOUP
This quick simple-to-make soup is clock full of shrimp and spinach. The only time consuming part of making this is peeling all the shrimp (which isn't included in the prep time but takes about 30 - 45 minutes). Recipe adapted from Bon Appetit (September 2004)

Steps:
- In a large pot, place first four ingredients (broth- ginger) and bring to a boil over medium-high heat.
- Add carrots and reduce heat to low and simmer for 5 minutes.
- Place miso in a bowl and whisk in 1/2 cup of the hot broth.
- Return all to pan.
- Return to a boil and add shrimp, spinach and shallot (or green onion).
- Simmer for 5 minutes or until shrimp is pink.
- Stir in chili oil and remove from heat.
MISO SOUP WITH TOFU, SPINACH, AND CARROTS
In ancient China, the soybean was considered to be one of five sacred grains, along with barley, millet, rice, and wheat. Here, in the form of tofu, the soybean shines with a little help from miso, spinach, carrots, and scallions.

- In a medium saucepan, bring stock and the water to a boil over high heat. Reduce heat to medium-low, and add carrots. Cook until carrots are crisp-tender, about 2 minutes.
- Add spinach and tofu, and stir to combine. Continue cooking just until spinach is wilted and tofu is heated through, about 1 minute more.
- Meanwhile, place miso in a small bowl, and stir in 1/4 cup cooking liquid until miso is dissolved. Add mixture to saucepan, stirring to combine. Do not let soup boil once miso has been added.
- Remove from heat. Ladle soup into four serving bowls. Sprinkle each with scallions. Serve immediately.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are partially cooked, 5 to 7 minutes.
- Meanwhile, combine butter, miso paste, sesame oil, and honey in a wok over medium heat and cook until sizzling. Add garlic and saute until fragrant, about 1 minute. Add tofu and cook for about 1 minute.
- Drain udon noodles and add to wok with water. Cook and stir for 3 minutes. Add spinach and green onions; mix until spinach has wilted. Stir in soy sauce.
- Ladle into two bowls. Drizzle with Sriracha and sprinkle sesame seeds on top.

Steps:
- Bring first 4 ingredients to boil in heavy medium saucepan over medium-high heat. Add carrots. Reduce heat to low; cover and simmer until carrots are crisp-tender, about 3 minutes.
- Place miso in medium bowl. Whisk in 1/2 cup hot broth mixture. Return miso-broth mixture to same saucepan. (Can be made 2 hours ahead. Cover and let stand at room temperature.)
- Bring soup to boil. Turn off heat. Mix in shrimp, watercress, and green onions. Cover and let stand until shrimp are cooked through, about 4 minutes. Stir in chili oil; divide soup equally among 4 bowls and serve.
MISO SOUP WITH TOFU AND BABY SPINACH
I normally use fresh shiitake for this, as this is a more delicate soup, but if you really wanted a meaty texture you could use rehydrated dried shiitake, as they are far chewier, just be sure to remove the stems.

- Place the water in a large pot and bring to a boil over high heat. Add the spinach, mushrooms, scallions and tamari.
- Reduce heat to medium and simmer until the vegetables soften , 3 to 6 minutes. Reduce heat to low.
- Place about 1/4 cup of the hot soup mixture in a small bowl and add the miso, blending well.
- Stir the mixture back into the soup, add the tofu and simmer for 2 minutes, being careful not to boil.
- Taste, adjust the seasonings if needed, and serve hot.

- Heat veg oil in large soup pot on med-high heat.
- Add onions and saute for 3 mins or til softened slightly.
- Add green onions,garlic,thyme,allspice and hot pepper of choice.
- Saute for 1 more minute.
- Add broth and bring to boil.
- Add spinach and coconut milk.
- Reduce heat and simmer for 10 to 15 mins or til spinach is limp.
- Remove hot pepper and discard.
- Add shrimp and cook for another 2 minutes or til pink and curled.
- Add lime juice, season well with salt and pepper.

A delicious light salad, with a touch of that flavorful Japanese Miso Soup in the salad dressing. My favorite. You can substitute the shrimp with tofu, salmon, or tuna. Also, you can add mandarin oranges, strawberries, and pecans for added contrast.

- Combine vinegar, honey, white miso paste, soy sauce, sugar, salt, and pepper in a blender; blend until smooth. Add canola oil and sesame oil; blend until dressing is emulsified and thick.

A nice alternative to the traditional risotto, and much easier too! It was so easy to make with any add-in's you have on hand.

Steps:
- Melt butter in a large skillet.
- Add garlic and sauté for 2 minutes.
- Add orzo and sauté for 3 minutes, stirring occasionally.
- Add chicken broth and water, bring to a boil.
- Once at a boil reduce heat to a simmer uncovered.
- Meanwhile core, seed and dice the tomatoes and thaw and strain the spinach.
- Once the liquid in the orzo begins to absorb (about 5 minutes) add the tomatoes and stir.
- Let this simmer for another 5 minutes then add the spinach and stir.
- Cook until the liquid is fully absorbed (about another 15 minutes).
- In a separate pan sauté the shrimp and sprinkle with creole seasoning (optional, you can use whatever spice you like) until cooked.
- Add the cheeses and fresh basil, red pepper (optional) to the orzo and stir, then add in the shrimp and serve!
