1 pound bulk pork sausage
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
6 bacon strips, cooked and crumbled
1/4 cup finely chopped onion
1/4 cup finely chopped sweet red pepper
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
10 large eggs
3/4 cup 2% milk
2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed
1-1/2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage over medium heat until no longer pink; drain. Spoon into a greased 13x9-in. baking dish. Layer with spinach, bacon, onion, red pepper and cheeses., In a large bowl, whisk eggs, milk and seasonings; pour over top. Bake 30-35 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

11 large eggs
¾ cup milk
2 cups shredded sharp Cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 teaspoon dried oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Beat eggs and milk together in a large bowl. Stir sausage, Cheddar cheese, spinach, and oregano into egg mixture; pour into prepared baking dish.

1/2 small loaf country-style bread, cut into 1/2 to1-inch cubes (about 1 1/2 cups)
2 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 pound sweet Italian turkey sausage, casings removed
One 10 to12-ounce package fresh baby spinach, drained
One 6.5-ounce jar oil-packed sun-dried tomatoes, drained and coarsely chopped
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
One 5-ounce log goat cheese, coarsely crumbled (about 1 1/2 cups)
6 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the bread cubes with 1 tablespoon oil and spread evenly in a single layer on a rimmed baking sheet. Bake until the cubes begin to turn light golden around the edges, 10 to 12 minutes (do not over-brown as the bread cubes will continue to brown when baked atop the sausage in the dish). Remove from the oven and set aside.
  • Heat the remaining oil in a large nonstick skillet over medium-high heat. Add the onion and sausage. Break up the sausage with a wooden spoon and cook until the sausage has cooked through and the onion is soft, 8 to 10 minutes. Add the spinach and cook, stirring frequently, until wilted, about 2 minutes. Add the sun-dried tomatoes and basil.
  • Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread the mixture evenly into a 13-by-9-by-2-inch glass baking dish or ceramic baking dish. Sprinkle the goat cheese on the mixture and arrange the bread cubes on top. Make 6 slight indentations in the mixture, spacing apart. Cover and chill. This can be prepared 2 hours ahead.
  • Crack 1 egg into each indentation, making sure to keep the yolks intact. Sprinkle the eggs lightly with salt and freshly ground black pepper.
  • Bake until the egg whites are set but yolks are still runny, about 15 minutes (or 18 minutes for a fully cooked yolk).

1 tablespoon EVOO
12 ounces bulk spicy breakfast sausage
2 tablespoons butter
1 onion, finely chopped
4 cloves garlic, finely chopped

Freshly grated nutmeg
1/2 pound stale white or French bread, cubed (7 to 8 cups)
12 eggs
2 cups milk or half-and-half
1/4 cup Dijon mustard
2 cups shredded caciocavallo cheese or Parmigiano-Reggiano

Steps:

  • Defrost the spinach in the microwave, and then wring out any excess liquid.
  • Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
  • Arrange half of the bread in a casserole dish.
  • Whisk the eggs with the milk, Dijon and some salt and pepper.
  • Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
  • Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.
  • Set the casserole on a baking sheet and bake uncovered 1 hour. Let stand 10 minutes and serve.

This is a variation on a standard breakfast casserole recipe. You can really use any combination of meat, vegetables, and cheese that you have on hand. This one came out really well! You can substitute frozen drained spinach for the sauteed fresh if that's easier.

1 tablespoon butter
1/3 cup chopped onion
1/2 cup chopped mushroom
2 garlic cloves, minced
2 cups fresh spinach, washed, stemmed, and chopped

4 eggs
1/2 cup light cream
1/2 teaspoon pepper
1/2 teaspoon salt

  • Preheat oven to 350.

  • Add spinach to skillet and saute lightly, just for a minute or two. Drain by pressing a spatula against the spinach.
  • To assemble, layer half of sausage in baking dish. Top with 1/3 of cheese. Add mushroom mixture, then 1/3 of cheese. Add spinach, then rest of cheese, then rest of sausage.
  • Beat eggs with cream and seasonings. Pour over other ingredients.
  • Casserole can be refrigerated overnight at this point.
  • Bake at 350 for 30 minutes, until center is set. Cool for 10 minutes before cutting.

3 tablespoons half-and-half (or use milk)
1 dash Tabasco sauce, to taste
1 dash salt and pepper, to taste

2 -4 tablespoons olive oil
2 tablespoons butter
1 medium onion, chopped
1/2-1 lb white button mushrooms
4 Italian sausages, casings removed (or use about 1/2 pound COARSLEY ground beef)
1 (10 ounce) package frozen chopped spinach, thawed and well drained (squeeze out excess moisture with hands)
1/2 cup grated parmesan cheese

Steps:

  • In a small bowl whisk eggs with half and half, Tabasco, salt, pepper and basil.
  • In a large skillet melt butter with oil over medium heat.
  • Saute the sliced mushrooms until the moisture is released (about 10 minutes).
  • Add in onions, adding in more oil or butter if needed; saute for about 4 minutes.
  • Add in the sausage meat, breaking up the meat into small pieces as it cooks.
  • Sprinkle with the spinach (do not mix in). Cover with a lid and cook for about 5-6 minutes to steam spinach.

1 lb frozen leaf spinach, thawed and drained
6 eggs
1 1/2 cups sharp cheddar cheese, grated
1/2 cup onion, finely diced
2 teaspoons oregano
1 teaspoon allspice
1 tablespoon Accent seasoning
1 teaspoon garlic powder
1 tablespoon hot sauce, like Tabasco
1/8 cup water

Steps:

  • Preheat oven to 445°.
  • Cook sausage until almost brown.
  • Add onions, spinach, spices and hot sauce.
  • Cook until sausage is brown and onions are translucent.
  • Transfer to 9-inch glass pie dish.
  • Mix in part of the cheese.
  • Top filling with a more cheese.
  • Whisk eggs and water, add to filling.
  • Top with rest of cheese.
  • Bake in preheated oven for 20-30 minutes until firm. a toothpick inserted in the middle will come out clean; top is nice and brown.

cooking spray (olive oil)
180 g spinach (English leaves stems removed)
1 tablespoon olive oil spread (light)
2 1/2 tablespoons plain flour
2 cups skim milk
1/2 cup cheese (grated fat-reduced tasty or cheddar)
1/4 teaspoon ground nutmeg
6 eggs (room temperature)
4 spring onions (finely chopped)
1 pinch cayenne pepper
4 slices sourdough bread (toasted and lightly buttered to serve)

Steps:

  • Preheat oven to 180C (160C fan forced).
  • Lightly spray 4 x 1 cup capacity oven proof dishes with oil.
  • Place spinach and 1 tablespoon water in a medium saucepan over moderate heat and cook and stir for 3 minutes or until wilted and then drain and cool.
  • Using hands, squeeze excess liquid from spinach and chop coarsely.
  • Melt spread in a small saucepan over moderate heat and add flour and cook and stir for 1 minute or until bubbling and remove from heat and gradually stir in milk and increase heat to moderately high and cook stirring constantly until mix boils and thickens slightly and then remove from heat and stir in cheese and nutmeg until smooth.
  • Whisk in 2 of the eggs until well combined and then add spinach and onion to cheese sauce.
  • Pour mix into prepared dishes and using the back of a spoon make a slight indent at the centre of each dish and break an egg into each indent.
  • Place ramekins on a baking tray and sprinkle with cayenne pepper and bake for 18 to 20 minutes or until eggs are just set and then stand for 5 minutes before serving with buttered toast.

1 pound bulk hot Italian sausage
2 large onions, finely chopped
1/2 pound sliced fresh mushrooms
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon dried oregano
1/4 teaspoon pepper
2 tablespoons olive oil
8 cups torn fresh spinach (about 1/2 pound)
8 large eggs
1/4 teaspoon hot pepper sauce
1 cup shredded Monterey Jack cheese

Steps:

  • Crumble sausage into a 10-in. ovenproof skillet; cook over medium heat until no longer pink. Drain and set aside. In the same skillet, saute the onions, mushrooms, garlic and seasonings in oil until vegetables are tender. Add spinach in batches; cook over medium-low heat for 3-4 minutes or until spinach begins to wilt., In a large bowl, whisk eggs and hot pepper sauce. Return sausage to skillet; add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Cook until eggs are nearly set, about 8-10 minutes., Meanwhile, preheat broiler. Broil egg mixture 6 in. from the heat for 30-60 seconds or until set. Sprinkle with cheese; broil 30 seconds longer or until melted. Cut into wedges. Serve immediately.

This easy sausage and egg breakfast bake recipe is perfect to throw something together for a crowd. After quickly cooking the sausage and spinach, add the rest of the ingredients to a baking pan, put it in the oven, and you're done! This recipe is also great for meal prep; bake on a Sunday night, cut it into pieces, wrap in foil, and keep it the fridge for a few days.

1 lb breakfast sausage, casings removed, crumbled
8 scallions, chopped, white\light green parts and dark green parts divided
1 red bell pepper, seeded and diced, divided
8 cups fresh spinach, packed
4 large eggs
1 teaspoon kosher salt
2 teaspoons garlic powder
2 cups whole milk
nonstick cooking spray, for greasing
8 cups day-old country white bread
2 cups shredded cheddar cheese, divided
½ cup chicken stock
½ cup heavy cream

Steps:

  • Add the breakfast sausage to a large nonstick skillet over medium heat. Cook, breaking up with a spatula until no longer pink, 7-8 minutes.
  • Add the white and light green scallions, ½ of the bell pepper, and ½ of the spinach. Sauté for 2 minutes, until the spinach is wilted, then add the rest of the spinach and continue cooking until wilted. Remove the pan from the heat and let cool.
  • In a medium bowl, whisk together the eggs, salt, and garlic powder. Add the milk and whisk to incorporate.
  • Grease a 9 (22 cm) x 13-inch (33 cm) glass baking dish with nonstick spray.
  • Add the cubed bread to the baking dish. If you don't have day-old bread, spread the cubed bread on a baking sheet and dry out in a 300˚F (150˚C) oven for 15-20 minutes.
  • Sprinkle 1 cup (100 G) of shredded cheese over the bread, then evenly spread the sausage mixture on top. Pour the egg mixture over the sausage mixture. Cover the baking dish with plastic wrap and refrigerate for at least 1 hour, or overnight.
  • Preheat the oven to 375˚F (190˚C).
  • In a liquid measuring cup or small bowl, combine the chicken stock and heavy cream.
  • Pour over the chilled bake. Sprinkle the remaining cup of cheese and remaining bell pepper over the top.
  • Cover with foil and bake for 45 minutes, then uncover and bake for another 15-20 minutes, until the custard is set and the cheese is golden brown. Remove from oven and let cool for 15 minutes.
  • Garnish with the dark green scallions, then slice and serve.
  • Enjoy!

1 (16 ounce) container low fat cottage cheese
1 (10 ounce) package frozen spinach, thawed and very well drained
1 cup shredded mozzarella cheese (cheddar or pepper jack are good substitutes as well)
1/2 cup ground soy sausage, lightly browned (I like LiteLife Gimme Lean brand)
1/2 cup green onion, sliced
4 eggs, lightly beaten
salt and pepper

Steps:

  • Thoroughly mix all ingredients.
  • Pour mixture into a greased 9 inch pie plate (I have also used a square casserole dish as well).
  • Bake at 350 for about 40 minutes or until center is set.
  • Once out of the oven, I usually let it sit for 5 or 10 minutes.
  • To serve, either cut into wedges, or squares, depending on what type of dish you used.
