SAUTEED SPINACH AND ONIONS
Quick Sauteed Spinach and Onions is an easy and healthy side dish you can have on the table in less than 20 minutes.

Steps:
- In a large skillet with sides, heat olive oil over medium high heat.
- Add the onions and saute for 7-9 minutes, until soft and starting to brown on the edges.
- Stir in minced garlic and red pepper flakes (if using) and saute for about 30 seconds. Sprinkle with salt.
- Add the spinach and stir into the onion mixture for 2-3 minutes, or until leaves are just wilted. Season to taste with salt and pepper. Add a squeeze of lemon right before serving, if desired.

SPINACH WITH ONIONS & PINE NUTS
Jazz up a bag of spinach with caramelised onions and the crunch of pine nuts

- Heat the oil in a large, deep pan. Add the onions, cover, then gently fry for 15 mins until soft and almost transparent. Add the butter and pine nuts, turn up the heat, then fry for 5 mins more or until the onions are dark golden. Stir in the garlic, grate in a little nutmeg, then fry for 1 min. Splash in vinegar.
- Meanwhile, heat the largest pan you have until very hot. Throw in half the spinach, cover for 20 secs, then stir until just wilted. Tip into a colander set over a bowl, then repeat with the second bag of spinach.
- To serve, toss the cooked spinach into onion mix and season generously.

READY-TO-GO EGG BITES

- Heat a large skillet over medium heat. Add the chorizo and onion and cook, stirring often, until the onion is soft and the chorizo is fully cooked, 5 to 6 minutes. Transfer to paper towels to drain the excess grease. Set aside to cool.
- Combine the eggs, heavy cream, sour cream, salt and pepper in a large bowl. Whisk until light and fluffy, about 1 minute.
- Generously coat the cups of a silicone egg bites mold (you can find them online!) with cooking spray. Divide the cheese among the cups. Divide the chorizo and onion among the cups. Then fill the cups with the egg mixture, leaving a little space at the top.
- Multi-cooker directions: Set the trivet in a multi-cooker, then carefully pour 1 cup water into the pot. Cover the mold snugly with foil and carefully lower it onto the trivet.
- Secure the lid on the multi-cooker and set the pressure valve to sealing. Press the steam button and set it to 10 minutes. (Note: It will take several minutes for the pressure to build, after which the 10-minute timer will automatically start counting down.)
- After the 10 minutes are up, let the pressure release naturally for 10 minutes, then use the handle of a wooden spoon to move the valve to venting, which will let the rest of the pressure release quickly.
- When the pressure is fully released, carefully remove the lid. Remove the silicone mold from the machine. Peel back the foil and turn the egg bites onto a plate. They should pop right out!
- Standard oven directions: Preheat the oven to 325 degrees F. Pour water into a 9-by-13-inch baking dish until it's halfway full. Set the mold in the baking dish, then cover the baking dish with foil. Bake until the eggs are set, about 1 hour. Let the mold sit in the water for 10 minutes before removing the egg bites from the mold.
- Freezing and reheating instructions: Freeze by placing the bites on a lightly greased sheet pan or plate and freeze for 45 minutes. Transfer to a plastic zipper bag and return to the freezer.
- To reheat 1 or 2 bites, wrap in a paper towel and microwave for 1 minute. Let sit for 1 minute before eating.
SAUTEED SPINACH WITH BACON AND ONIONS

- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.
SPINACH-STUFFED VIDALIA ONIONS
A great side dish for a a roast or poultry meal. When vidalia onions are not available, you can substitute another sweet variety, such as Maui, or use plain old yellow onions.

- Peel onions; core out hole in center.
- Put in water and steam.
- Do not overcook until soft and mushy.
- Remove from heat and cool.
- Wash spinach and cook for 1 minute, using only the water that clings to the leaves, drain and chop.
- Saute spinach in butter.
- Add half and half and cook until fairly dry.
- Season with salt and pepper.
- Fill onions with spinach mixture; sprinkle with cheese.
- Bake in a greased shallow pan at 350 degrees until onions are thoroughly heated, about 15-20 minutes.
CARAMELISED ONION, SQUASH & SPINACH PITHIVIER

- Heat the oven to 200C/180C fan/gas 6. Put the squash cut-side down in a roasting tin and roast for 45 mins-1 hr until completely soft and the skin has started to caramelise. Leave to cool in the tin.
- Meanwhile, tip the onions into a large pan with a big pinch of salt and 400ml water and cook over a medium heat, stirring occasionally for around 25 mins until the onions are soft and the water has evaporated.
- Wilt the spinach in two batches in a large, dry frying pan over a medium heat. Tip into a colander, leave to cool, then squeeze out as much water as you can. Tip the spinach into a bowl. Put the pan back over a medium heat and heat 1 tbsp oil, then fry the garlic until lightly golden. Tip this into the spinach and season to taste.
- Drizzle the remaining oil into the pan with the onions and turn up the heat to medium-high. Cook, stirring regularly for 10-15 mins until the onions are golden and caramelised.
- Scoop the soft squash flesh into a bowl and discard the skin and seeds. Mix in the ras el hanout, season, then leave to go cold along with the onions and spinach. All of the filling elements can be made up to a day ahead and kept covered in the fridge.
- Roll the puff pastry out on a floured surface into a 50 x 30cm rectangle. Cut out two circles from the pastry, one 23cm and the other 28cm (you can use plates for templates), re-rolling the pastry after you've cut the smaller circle to fit the second one in. Transfer each circle to a sheet of baking parchment, put both on a baking tray and chill for 30 mins.
- Heat the oven to 200C/180C fan/gas 6. Spread the squash mixture over the smaller circle of pastry, leaving a 2cm border around the edge. Pile on the pine nuts, caramelised onions and finally the spinach, shaping the filling into a dome as you go.
- Brush the exposed pastry border with a little of the milk, then lay the second pastry circle on top, using your hands to snugly fit it around the filling to encase it. Crimp the edges with a fork to seal. Cut a small steam hole in the top of the pithivier, then lightly score the pastry using the back of a small knife or cocktail stick (as pictured). The pithivier can now be chilled for up to a day. Brush all over with the remaining milk, then bake for 30-35 mins until golden brown. Rest for 5 mins before serving.

ONION, MUSHROOM AND SPINACH SAUTE (FOR TWO)
Getting more spinach into our diet is something I've been working on lately, but not everyone likes just plain spinach. This recipe adds spinach to fried onions and mushrooms. The balsamic vinegar is wonderful but substitute a splash of lemon juice if you like. Easily doubled.

SPINACH AND ONION MOLD

- In a large saucepan over medium heat blanch 20 to 25 romaine leaves in boiling water until just wilted, about 1 minute. Drain well. Line a buttered 6-cup ring mold with overlapping leaves.Cook spinach as directed on package. Drain press against sieve to remove moisture set aside.Preheat oven to 350° F. In a large skillet over medium-high heat sauté onion in butter or margarine until soft. Stir in flour, salt and dill weed. Cook and stir over medium heat for 1 to 2 minutes. Add milk. Stirring over medium heat, bring to a boil and boil until thickened. Remove from heat.In a large mixer bowl beat eggs well. Beat in hot onion sauce stir in spinach, cracker crumbs and cheese. Spoon into prepared mold. Set in a larger baking pan fill pan with boiling water to reach halfway up mold. Bake for 45 to 50 minutes or until a knife inserted 1 inch from edge comes out clean. Remove from water and unmold onto platter.Serve hot or chilled. Fill center with carrots or tomatoes. Garnish with lemon slices and/or cherry tomatoes.

SPINACH 'N ONIONS
Nice way to serve spinach and so good for you! The secret is not to overcook the spinach. I like to add a few roasted pine nuts or pumkin seeds with a nice jolt of Marsala wine. I love to serve this recipe with recipe#399309. Just spoon the sauce over the spinach when it is on the plate MMMmm

ONION AND SPINACH PAKORA WITH CILANTRO CHUTNEY
Pakora are a street-food favorite across India and in many other parts of the world. These crispy fritters make a fabulous snack or appetizer and are fairly quick to pull off at home. Pakora usually feature besan (chickpea flour) and can include a variety of seasonal vegetables; onions are standard, and here I add tender baby spinach. - For the pakora: Pour the oil into a large, deep pot and place over medium heat until it registers 350 degrees F on a deep-fry thermometer.
- Meanwhile, combine the spinach, onion, cilantro, besan, rice flour, ginger garlic paste, fenugreek, turmeric, chaat masala, garam masala, chili powder and salt to taste in a large bowl. Stir the mixture well. Stir in enough water to make a thick batter.
- When the oil is hot, working in batches, drop balls of the batter mixture into the oil. Fry until golden brown, 5 to 6 minutes. Drain on paper towels, sprinkle with chaat masala and serve hot.
- For the cilantro-mint chutney: In a food processor or blender, combine the cilantro, mint, mango, chiles, lime juice and salt to taste and process or blend until smooth. Serve alongside the pakora.
