1 clove garlic, minced
1 ready-to-use baked pizza crust (12 inch)
1 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry
1 cup KRAFT Shredded Mozzarella Cheese
1 small tomato, cut into thin slices
1 pkg. (4 oz.) ATHENOS Crumbled Feta Cheese with Garlic & Herb
1 tsp. chopped fresh rosemary

Steps:

  • Heat oven to 450ºF.
  • Mix oil and garlic in small microwaveable bowl. Microwave on HIGH 30 sec.
  • Place pizza crust on baking sheet; brush with oil mixture. Top with remaining ingredients.
  • Bake 10 to 12 min. or until cheese is melted and crust is golden brown.

500g pack wholewheat spaghetti
500g leaf spinach
3 tbsp olive oil , plus extra to serve
4 garlic cloves , finely sliced
2 tbsp red wine vinegar
handful pine nuts
50g parmesan , half grated, half shaved
chilli flakes , to serve

Steps:

  • Cook the spaghetti according to pack instructions. Meanwhile, boil the kettle and tip the spinach into a large colander. Pour on boiling water until it's completely wilted (you may need 2 kettles of water), then cool under cold water and press the spinach into a ball, squeezing out all the water. Roughly chop the spinach and set aside.
  • Very gently heat the oil and garlic in a small pan for a few mins until it just starts to brown, then add the vinegar. Bubble for 1 min, then turn off the heat. When the spaghetti is cooked, reserve some of the water, then drain. In a large bowl, toss the spaghetti with the garlicky oil, spinach, pine nuts and the grated Parmesan. Add enough water to loosen everything. Serve in bowls along with the Parmesan shavings and chilli flakes, plus more olive oil for drizzling.

Steps:

  • Rinse spinach well in cold water; dry well.
  • In a large pot, heat the olive oil and saute the garlic over medium heat for 1 minute.

  • Uncover, turn heat on high, and cook for another minute, stirring until all the spinach is wilted.

3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

Juice of 1/2 lemon

3 tablespoons unsalted butter
1/2 teaspoon cumin seeds
1/2 teaspoon brown mustard seeds
1 pound split orange lentils (masoor dal), picked through and rinsed (about 2 1/4 cups)
1 medium tomato, chopped
3 cloves garlic, thinly sliced

Steps:

  • Combine the lentils, tomato, 2 cloves of garlic, ginger, serrano chile, turmeric and 6 cups water in a large saucepan. Bring to a high simmer and cook, occasionally whisking vigorously, until the lentils are tender and begin to fall apart and the mixture is like a thin porridge, 15 to 18 minutes. Add the spinach to the pan in batches and stir until wilted. Add the lemon juice and 1 1/2 teaspoons of salt. Remove from the heat.
  • Melt the butter in a small skillet over medium heat. Add the remaining clove of garlic and the cumin seeds and mustard seeds. Swirl until the garlic and is golden and fragrant, about 3 minutes.
  • Pour the lentils into a large serving bowl and drizzle with the garlic butter. Serve hot.

2 cloves garlic, peeled and thinly sliced lengthwise
2 pounds fresh spinach, washed and leaves damp
Olive-oil cooking spray

Steps:

  • In a large saute pan, heat the olive oil over medium heat. Add the garlic, and cook until golden brown, 2 to 3 minutes. Using a slotted spoon, transfer garlic to paper towels; reserve. Discard oil.
  • Spray pan with cooking spray, and heat over medium heat. Coarsely chop the spinach and stalks. Working in batches, add the damp spinach to the pan. Cover, and cook until spinach just begins to wilt, 4 to 5 minutes. Transfer the cooked spinach to a metal bowl, and cook the remaining spinach. Season with salt and pepper. Sprinkle the reserved garlic over spinach, and serve warm with a wedge of fresh lemon.

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and saute for 30 seconds. You don't want the garlic browning too much.

8 ounces fresh spinach, washed (prefer baby leaves)
1 teaspoon sesame seeds (add more if you prefer)
1 1/2 tablespoons vegetable oil (something light tasting)
1/2 teaspoon sea salt (or kosher salt, more to taste if needed, I add more)
3 garlic cloves, sliced (less if you don't care for the taste)

Steps:

  • Put spinach in a salad spinner and dry well. (or use paper towels). Remove stalks if any.
  • If using large leaves, roll up tightly and cut crossway in wide strips. (if using baby leave alone).
  • Heat wok to medium heat. Add sesame seeds, and dry fry stirring constantly for 1-2 minutes until golden brown. Transfer to a small bowl and set aside.
  • Add oil to wok and swirl around. When hot, add the salt, spinach and garlic and stir-fry for 2 minutes until the spinach just wilts a bit and the leaves are coated with oil.
  • Sprinkle over dry-heated sesame seeds and serve immediately.
  • I love this with some naan bread.

2 x 140g skinless cod loin or pollock fillets
1 tbsp rapeseed oil, plus 2 tsp
1 tsp fresh thyme leaves
1 large garlic clove, finely grated
½ lemon, zested and juiced
1 large red pepper, sliced
2 leeks, well washed and thinly sliced
2 tbsp flaked almonds
1 tbsp tomato purée
¼ tsp vegetable bouillon powder
1 tsp apple cider vinegar
100g baby spinach, wilted in a pan or the microwave

Steps:

  • Heat oven to 220C/200C fan/ gas 7 and put the fish fillets in a shallow ovenproof dish so they fit quite snugly in a single layer. Mix 1 tbsp rapeseed oil with the thyme and garlic, spoon over the fish, then grate over the lemon zest. Bake for 10-12 mins until the fish is moist and flakes easily when tested.
  • Meanwhile, heat the remaining oil in a non-stick pan and fry the pepper and leeks for 5 mins until softened. Add the almonds and cook for 5 mins more. Tip in the tomato purée, 5 tbsp water, the bouillion powder and vinegar, and cook briefly to warm the mixture through.
  • Add the juice of up to half a lemon and blitz with a stick blender until it makes a thick, pesto-like sauce. Serve with the fish and the wilted spinach.

3/4 to 1 cup minced green garlic, about 5 small heads
1 cup cream or half-and-half
1 thyme sprig
The Soufflé
4 tablespoons unsalted butter, plus extra for the dish
1/2 cup freshly grated Parmesan cheese
1 bunch spinach, stems removed, or 12 to 16 ounces loose, young spinach leaves
4 tablespoons all-purpose flour
1 1/3 cups milk
sea salt and freshly ground pepper
1 scant cup (about 4 ounces) mild goat cheese
4 egg yolks
6 egg whites

Steps:

  • 1. Preheat the oven to 375°F. Butter a 6-cup soufflé dish or gratin dish and dust it with a few tablespoons of the Parmesan cheese.
  • 2. Put the garlic, cream, and thyme in a small saucepan over low heat. Bring slowly to a boil, then turn off the heat, cover, and let steep for 15 minutes.
  • 3. Wash the spinach well, then wilt it in a skillet with the water clinging to the leaves. Tip it into a colander, press out the moisture, then finely chop.
  • 4. Melt the 4 tablespoons butter in a saucepan, stir in the flour, and cook for 1 minute while stirring. Whisk in the milk and stir until it thickens. Add 1 teaspoon salt, then stir in the goat cheese and remaining Parmesan. Turn off the heat and stir in the egg yolks, spinach, and the garlic-cream mixture. Season with pepper.
  • 5. Whisk the egg whites with a pinch of salt until they form firm peaks that are just a bit on the soft side. Fold the whites and base together. Scrape the batter into the prepared dish and bake until golden brown and set, about 25 minutes for a gratin dish, 30 minutes if using a soufflé dish.

This is a great recipe that my grandmother used to make often because it was so easy and so tasty! I usually double the batch because the leftovers are so much better after the flavors have melded. You would serve this like a spaghetti and sauce so the amount of sauce you use depends on if you like a heavy amount sauce and light noodles. Also, be sure to modify the amount of oil used if necessary for diet needs. We tend to use a bit more than most because we love how it blends with the other ingredients. The ingredients in this recipe are easy to modify for personal taste without it affecting the overall dish. For our family, I don't usually season. The garlic is enough for us. Enjoy!

Steps:

  • In frying pan, heat oil and saute garlic over medium heat until slightly cooked.
  • Add spinach and saute, cooking about 10 minutes until spinach is heated through, stirring occasionally.
  • Add pasta sauce and seasoning if desired to spinach and garlic and heat through, stirring occasionally.
  • Cook gnocci in boiling water about 4 minutes or according to package directions and drain.
  • Serve sauce over gnocci.
  • NOTE: You can use as much or as little pasta sauce in the spinach mixture as you'd like according to taste.

Steps:

  • Heat the butter in a skillet over medium heat. Stir in the garlic; cook and stir until the garlic is fragrant, about 2 minutes. Add the spinach a few handfuls at a time, stirring until wilted before adding more, about 5 minutes. Stir in the lemon juice, and season with garlic salt.
