- Melt butter, then pour into 9 x 13 pan. Swirl to cover bottom Mix grated cheddar, thawed spinach, chopped onion and mushrooms until evenly distributed. Mix together flour, baking powder and salt. Combine with cheddar mixture Whisk eggs, then add milk and whisk again briefly. Pour over the cheddar mixture and stir to combine Dollap over butter in pan, then press lightly in place. Bake 35 minutes at 350 degrees. Cool slightly before cutting. Enjoy!

- Preheat the oven to 400 degrees F. Butter the inside of a 6 to 8-cup souffle dish (6 1/2 to 7 1/2 inches in diameter by 3 1/2 inches deep) and sprinkle evenly with Parmesan.
- Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, the nutmeg, cayenne, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
- Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Cheddar, 1/4 cup of Parmesan and the spinach and transfer to a large mixing bowl.
- Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy peaks.
- Whisk one quarter of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the souffle dish, then smooth the top. Draw a large circle on top with the spatula to help the souffle rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees F. Bake for 30 to 35 minutes (don't peek!) until puffed and brown. Serve immediately.

- Cook spinach according to package instructions and drain.
- Preheat oven to 350.
- Melt butter in a 9x13" baking pan (don't let it burn).
- Remove from oven.

- Preheat oven to 180C/350°F.
- Pour melted butter into 9 X 13 baking dish and swirl around to cover sides.
- In medium bowl combine salt, pepper, baking powder and flour and set aside.
- In large bowl, beat eggs with milk. Add flour mixture and combine thoroughly.
- Add onion, cheese and spinach, mixing after each addition.
- Pour mixture into baking dish and sprinkle with pine nuts, if using.
- Bake for 35 minutes. Remove and let cool 45 minutes to set before cutting into bite-sized pieces.
- These may be frozen for future use. To freeze, place squares on cookie sheet. When frozen, transfer to a plastic bag. To reheat, bake at 165C/325F for 12 minutes.

If you are a spinach lover you will really enjoy these, I like to add on some shredded cheese on top after baking but that is only optional.

Steps:
- Heat oven to 350 degrees F.
- Butter a 13 x 9-inch baking pan.
- Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
- In a large bowl beat the eggs thoroughly.
- Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
- Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
- Spoon the mixture into baking dish on top of the melted butter, and level off.
- Drizzle the top with 2 tablespoons melted butter.
- Sprinkle with grated Parmesan cheese.
- Bake for about 30 minutes or until golden brown and set.
- Remove from oven, and cool for 40-45 minutes.
- If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
- Cut into squares.
- Note: these squares freeze very well.

I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

- Preheat oven to 350 degrees.
- Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.

- Mix flour into beaten eggs.

- In a large bowl beat the eggs with the flour until the mixture is smooth.
- Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients will. Pour mixture into a nonstick coated 13/9/2-inch baking pan.
- Sprinkle the top with wheat germ and bake at 350 degrees F. for about 45 minutes.
- Let stand for about 10 minutes and then cut into 1 1/2 inch squares for serving.
