This spicy stew features Hunt's® petite diced tomatoes, seafood, and chorizo in one satisfying, Mexican-inspired bowl!

1 tablespoon olive oil
1 onion, chopped
2 each poblano peppers, seeded and chopped
3 cloves garlic, minced
8 ounces chorizo sausage
1 (32 ounce) container chicken stock or broth
2 (14.5 ounce) cans Hunt's® no salt added Petite Diced Tomatoes, drained
1 (11 ounce) can Mexican-style corn, drained
1 (7 ounce) can salsa verde
1 ½ teaspoons ground cumin
½ teaspoon ground chipotle chile pepper, or to taste
1 pound cod fillets (or other firm white fish like halibut), cut into chunks
1 pound large raw shrimp, peeled, deveined
1 Chopped green onions
1 bunch Chopped fresh cilantro
1 Lime wedges

Steps:

  • Heat olive oil in a large pan over medium heat. Add onion, peppers, and garlic; cook and stir until soft, 5 to 7 minutes. Transfer to a plate. Add ground chorizo to pan and cook and stir, crumbling, until browned and cooked through, 5 to 7 minutes. Remove from heat.
  • Pour chicken stock into a large soup pot. Add Hunt's tomatoes, Mexican corn, salsa verde, cumin, chipotle, and softened onion-peppers-garlic mixture. Stir to combine, then simmer for 10 minutes to blend flavors.
  • Stir in cod, shrimp, and reserved chorizo and continue to simmer until fish and shrimp are cooked, about 5 to 7 minutes.
  • Ladle into serving bowls. Serve with fresh chopped green onions, chopped cilantro, and lime wedges.

250g pack small cooking chorizo sausages, halved lengthways
1 onion , halved and sliced
2 garlic cloves , chopped
1 tsp sweet smoked paprika
250g basmati rice
500ml hot chicken stock (or gluten-free alternative)
2 roasted peppers from a jar, chopped
395g can cherry tomato
85g pitted green or Kalamata olive

Steps:

  • Heat a large frying pan on a medium-high heat. Add the sliced chorizo halves, cut-side down, and cook until the oil starts to come out and they begin to crisp at the edges.
  • Tip the onion and garlic into the pan with the chorizo slices, and cook for a few mins more. Stir in the paprika and rice, mix well so that all the grains are coated, then pour in the hot chicken stock and add the roasted peppers. Stir everything, then cover the pan with a lid and cook for 5 mins.
  • Stir in the tomatoes and olives, and cook 8-10 mins more until the rice is tender and the liquid has been absorbed into it.

Macaroni and chorizo is classic Spanish comfort food. While iterations abound, it typically starts by frying smoked chorizo with a little onion, adding canned or fresh tomato and maybe some oregano, then letting it simmer into a thick tomato sauce. It's often topped with cheese and baked like a mac and cheese. Instead of fresh tomatoes, this recipe uses highly concentrated tomato paste, which is made by cooking down tomatoes for ages so you don't have to. The paste fries in the chorizo's rendered drippings for a very fast, silky, smoky and spicy sauce. When shopping for this recipe, look for Spanish chorizo, a shelf-stable sausage usually found near salami and other cured meats in the grocery store. Mexican chorizo is sold fresh and is made with different chiles and spices.

Kosher salt and black pepper
1 pound orecchiette or other short pasta
1/4 cup olive oil
4 ounces Spanish chorizo, casing removed (see Tip), if necessary, and thinly sliced
3 tablespoons double concentrate tomato paste (or 6 tablespoons canned tomato paste)
3 garlic cloves, peeled and smashed
1/2 teaspoon red-pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook, according to package directions, until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  • Meanwhile, in a large Dutch oven, heat the olive oil and chorizo over medium-high. Cook, stirring occasionally, until chorizo is crisp and brown, 2 to 3 minutes. Turn off the heat and use a slotted spoon to transfer the chorizo to a plate.
  • Return the pot to medium heat and add the tomato paste and garlic. Cook, stirring, until the tomato paste is caramelized and a shade darker, 3 to 5 minutes, covering the pan if the splattering is wild. Add the red-pepper flakes and a few grinds of black pepper, then remove from heat.
  • Add the cooked pasta and 1/2 cup of the reserved pasta water to the tomato mixture. Return the pot to the medium-high heat, and stir vigorously until the pasta is well coated. Add more pasta water until the sauce is glossy. Stir in the chorizo and season to taste with salt and pepper.

SLOW-COOKED SPICY BEEF, TOMATO & CHORIZO STEW



Slow-Cooked Spicy Beef, Tomato & Chorizo Stew image

You will need a slow cooker for this recipe, but its one that I have been doing for a while for the family, its really cheap but fulfilling and always guaranteed to warm those cockles!!

1/4 kg lean ground beef (or any lean mince to suit your budget)
1/4 kg stewing beef (or any stewing cuts of meat to suit your budget)
4 chorizo sausages, chopped into cm slices
1 (28 ounce) can chopped tomatoes, open and pour into a bowl (chopped plum tomatoes are nice, we will need the juice so don't throw it away)
6 carrots, chopped into inch size pieces
1/2 swede, chopped into inch size pieces
2 turnips, chopped into inch size pieces
6 large potatoes, chopped into inch size pieces
1/2 cup lentils (already soaked)
1/2 cup pearl barley (already soaked)
1 cup chickpeas (already soaked)
3 pints water, to cover the ingredients in the pot but leave at least 1 inch from the top of the pot
2 tablespoons Worcestershire sauce
2 tablespoons gravy, granules
1 pinch pepper (to season)

Steps:

  • Make sure you prepare this in the morning and leave it bubbling away for at least 8 hours (make sure you don't leave it unattended and follow the guidelines of your slow-cooker). You can do this even if you don't have a slow-cooker but use a fairly big deep-bottomed saucepan or casserole pot and leave on a low heat setting for at least 3 hours.
  • 1. Prepare all veggies and chop into about inch size pieces or bigger if you like (I prefer big chunks).
  • 2. Prepare the tomatoes as above.
  • 3. Chop the stewing beef into inch size pieces, you don't really want them much bigger as they will go chewy and not soft.
  • 4. Chop the chorizo sausages as above into cm size slices.
  • 5. place all ingredients (except the gravy granules and worcester sauce) into your slow cooker along with the water or vegetable stock and turn on as per guidelines. Leave until it comes to the boil and when it starts to simmer add the gravy granules and worcester sauce. Leave bubbling away for approx 8 hours (3 hours if not using a slow cooker) and then serve. be careful as can be very hot!

1-1/2 lb. plum tomatoes (about 8)
1/2 cup chopped onions
3 cloves garlic
1 Tbsp. chipotle peppers in adobo sauce
2 tsp. chicken bouillon
1 lb. Mexican chorizo, cut into 1-inch chunks
1 lb. spaghetti, uncooked
1 cup KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
1 avocado, cut into 8 wedges
2 Tbsp. chopped fresh parsley

Steps:

  • Bring water to boil in large saucepan. Add tomatoes; cook 5 min. Remove tomatoes from water, reserving water in pan. Add tomatoes to blender with next 4 ingredients; blend until smooth.
  • Cook chorizo in large skillet on medium-high heat 5 min. or until browned, stirring occasionally. Drain; return to skillet. Add tomato mixture; simmer on low heat 10 min., stirring occasionally.
  • Meanwhile, cook spaghetti in reserved water as directed on package, omitting salt. Drain; toss with chorizo sauce. Stir in cheese. Top with avocados and parsley just before serving.

Steps:

  • In a non-stick frying pan, heat the olive oil. Add the chorizo and fry for 1-2 minutes until lightly browned.

  • Heat the oven to 200°C/ 180°C fan/gas 6. Bring a large pan of water to the boil. Heat another large pan over a medium-high heat, then fry the chorizo for 2-3 minutes until starting to colour. Transfer to a plate with a slotted spoon, leaving the oil.
  • Add the onion to the pan with the chorizo oil and cook for 5 minutes, then add the garlic and chilli and cook for another minute. Pour in the red wine and bubble for 2-3 minutes until reduced. Add the tomatoes and simmer for 10 minutes.
  • Meanwhile, cook the pasta in the pan of boiling water for 10 minutes or until nearly cooked. Drain and rinse under cold running water, drain again, then return to the pan.
