SPICY CHEESE & TOMATO BAKE
A super-simple pasta bake that uses sundried tomato pesto, paprika and two cheeses - Parmesan and goat's cheese

Steps:
- Heat oven to 200C/180C fan/gas 6 and boil the pasta following pack instructions. Meanwhile, tip the pesto, chilli, tomatoes and paprika into a large ovenproof dish. Shake 3 tbsp water in the closed pesto jar to get out the last bits, then pour into the dish and stir everything together. Drain the pasta, tip into the dish, season and mix well with half the Parmesan.
- Scatter over the goat's cheese, followed by the remaining Parmesan, then bake for 15-20 mins until piping hot and the cheese has melted.

- Heat a nonstick skillet over medium heat. Spread each slice of bread with 1 tablespoon of the mayonnaise. Place one piece of bread, mayonnaise-side down, into the skillet. Top with the Jalapeno Pimento Cheese. Place the second slice of bread, mayonnaise-side up, onto the cheese. Using a spatula, press together and cook until golden, about 2 minutes per side. Slice and serve.
- Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne or hot sauce and salt in the bowl of a food processor. Process until combined. Add almost all of the Cheddar and Gouda, reserving about 2 tablespoons of each in a bowl, and pulse until well combined again. Add the contents of the blender to the reserved cheese and stir to combine. Fold in the pimentos, jalapenos and dill, then chill before serving.
- Serve as a dip with crackers and olives.

- Preheat oven to 400 degrees F.
- Combine crumbs, butter and the Parmesan cheese.
- Press into greased 9" pie plate and bake for 10 minutes.
- Remove from oven.
- Re-set oven temperature to 350 degrees F.
- Spread tomatoes in a layer on the crumb crust.
- Sprinkle with sugar, salt, pepper, basil, garlic powder, and green onions.
- Mix eggs with half and half and the grated Swiss cheese, then pour over tomatoes.
- Sprinkle the additional Parmesan (and crumbled bacon, if using) over the top.
- Bake for 30 minutes.

Years ago when my sister was in college, she worked at an Italian Restaurant. This was the most requested appetizer there. When she quit, she asked for the recipe. We all still look forward to this when we get together.

Steps:
- Butter both sides of french bread slices, and sprinkle lightly with garlic salt.
- Arrange bread slices on an ungreased cookie sheet.
- Spoon about 1 tablespoon of pizza sauce on each slice, and spread to cover.
- Put a thin slice of tomato over top the sauce.
- Then put a slice of mozzarella cheese on top of the tomato.
- Sprinkle generously with parmesan cheese.
- Lightly sprinkle with oregano and parsley.
- Bake at 350 until cheese is melted, and bread is slightly toasted.
- Serve Warm.
