This is a staple of Thai cooking. Adjust the spices to your own tastes for a really great use for leftover rice!! I get the basil from a local Asian market. It has a different flavor than that of regular basil and makes all the difference in this recipe. It is fast and fairly easy to make, but requires constant stirring.

3 tablespoons oyster sauce
2 tablespoons fish sauce
1 teaspoon white sugar
½ cup peanut oil for frying
4 cups cooked jasmine rice, chilled
6 large cloves garlic clove, crushed
2 serrano peppers, crushed
1 pound boneless, skinless chicken breast, cut into thin strips
1 red pepper, seeded and thinly sliced
1 onion, thinly sliced
2 cups sweet Thai basil
1 cucumber, sliced
½ cup cilantro sprigs

Steps:

  • Whisk together the oyster sauce, fish sauce, and sugar in a bowl.
  • Heat the oil in a wok over medium-high heat until the oil begins to smoke. Add the garlic and serrano peppers, stirring quickly. Stir in the chicken, bell pepper, onion and oyster sauce mixture; cook until the chicken is no longer pink. Raise heat to high and stir in the chilled rice; stir quickly until the sauce is blended with the rice. Use the back of a spoon to break up any rice sticking together.
  • Remove from heat and mix in the basil leaves. Garnish with sliced cucumber and cilantro as desired.

Spicy Thai Basil Chicken fried rice has the aromatic flavors of Basil and the sauces that glaze the chicken. It has a blend of spicy, sweet, and minty flavors of Basil. The dish gets even better when it's really spicy. I have added many chilies to this recipe, but it's totally up to you to adjust the flavors according to your taste. The most amazing fact is it just doesn't much time to prepare this. It takes less than 30 mins to prepare this recipe and it's finger-licking good.

1 tbsp Light soy sauce
2 tbsp Dark soy sauce
¼ cup Oyster sauce
1 tsp Sugar
1 tbsp Fish sauce
1 cup Jasmine rice (cooked a day ago)
2 Chicken thighs
½ Spur chilies , juleined
Thai Basil leaves, handful
7 -8 , Snow peas
1 tsp Black pepper powder
1 tbsp Fish sauce
5 tbsp Oil
1 Onion, sliced
5 Garlic,crushed
5 Red Thai birds eye chilies, crushed

Steps:

  • Stir fry sauce
  • Add sugar, dark soy sauce, light soy sauce, oyster sauce, and fish sauce in a bowl. Mix them all well and keep them aside.
  • Marinate chicken
  • Marinate bite-sized chicken with fish sauce and black pepper powder and set it aside.
  • Making fried rice
  • In a wok, heat the oil and add sliced onions for 30 secs.
  • To this add the crushed garlic and crushed red birds eye chillies and saute for a minute.
  • Add marinated chicken and saute till it's cooked. To this add the cooked and a day old Jasmine rice and give it all a good mix.
  • Now pour the stir fry sauce and give this all a good mix till the rice is well coated.
  • Lastly, add the snow peas, spur chillies and handful of Thai basil leaves. Give them all a mix.
  • Spicy Thai Basil Chicken Fried Rice is now ready.

This is a recipe I got off the Thai Kitchen red rice noodles box. It's fantastic and very authentic tasting. It's also good with regular rice noodles and Asian wheat noodles. I've made it with Italian sweet basil, and also by substituting cilantro for the basil. Both are very good. I haven't tried it yet, but I think this would be great served with crushed peanuts sprinkled on top. I'm posting the recipe here for safekeeping.

1 tablespoon sugar
1 tablespoon lime juice
1 tablespoon fish sauce
4 ounces red rice noodles (2 single-serve packages)
2 tablespoons vegetable oil
1 teaspoon garlic, minced
1 small Thai chile, minced
1/2 lb boneless skinless chicken breast, cut into thin strips
1/4 cup carrot, julienne-cut
2 tablespoons green onions, thinly sliced
1/2 cup Thai basil (or cilantro)

Steps:

  • 1. Mix sugar, lime juice and fish sauce in small bowl. Set aside. Bring large pot of water to boil. Remove from heat. Add red rice noodles, stirring to separate noodles in water. Let stand 5 to 7 minutes or until noodles are tender but firm. (If you are using Asian wheat noodles, you will need to actually cook them for 5-7 minutes rather than merely letting them soak in hot water.) Drain well. Place in serving bowl. Set aside.
  • 2. Meanwhile, heat oil in large skillet or wok on medium-high heat. Add garlic and chile; stir fry 15 seconds or until fragrant. Add chicken, carrots and green onions; stir fry 3 to 5 minutes or until chicken is cooked through.
  • 3. Stir in fish sauce mixture; stir fry 1 minute. Add basil (or cilantro); stir fry 30 seconds or until basil (or cilantro) is wilted. Add to noodles in bowl; toss to coat. Serve immediately.
  • Tip: Thai basil has dark green leaves with purple stems and has a licorice flavor. It can be found in most Asian markets. If unavailable, substitute Italian basil.

1 tablespoon chopped fresh Thai red chili pepper
8 ounces boneless skinless chicken breasts, cut into bite-size pieces
2 cups cold cooked rice
1 tablespoon sugar
1 tablespoon fish sauce
1 tablespoon soy sauce
2 tablespoons chopped shallots
1/3 cup Thai holy basil (regular basil ok)
1 tablespoon chopped fresh cilantro

Steps:

  • In a wok or large skillet, stir-fry garlic in oil until golden; then add chilies and chicken and stir-fry until chicken is cooked.
  • Add rice, sugar, fish sauce, and soy sauce, and stir-fry, mixing gently.
  • When well mixed, add shallots, basil leaves and cilantro; cook another minute or so, and serve.
  • If you desire, serve with lime wedges, chile sauce, fish sauce, or soy sauce at the table.

16 ounces boneless chicken breasts, chopped into bite size pieces (optional)
2 sliced red peppers
15 -25 fresh basil leaves
1/2 cup sliced onion
2 eggs (optional)
2 cups prepared quinoa
2 ounces olive oil
4 ounces korean teriyaki stir-fry sauce

Steps:

  • Heat pan to medium-high heat.
  • Add oil and start cooking the eggs in the pan.
  • Add chicken and stir-fry until about 70% cooked.
  • Add red peppers, basil leaves, onions and continue to stir-fry for about 1 minute.
  • Add the quinoa and Korean Teriyaki Stir-fry Sauce and mix together.
  • Note: Add in as much basil as you would like. I add both whole leaves and chopped. I also cooked the quinoa with some dried basil seasoning.

And don't skip the fish sauce, it smells strong in the bottle, but it blends in nicely with the other ingredients when it's all put together. Also, make sure you use chilled rice, or you'll end up with mush.

2 tablespoons fish sauce
1 tablespoon soy sauce
1 teaspoon white sugar
olive oil flavored cooking spray
4 cups cooked jasmine rice, chilled
6 large garlic cloves, chopped
2 Thai chiles, chopped (can use serranos)
1 red bell pepper, chopped
1 medium onion, chopped
1/2 cup egg substitute (like egg beaters, or can use 2 eggs)
8 ounces shrimp (or other protein, can use virtually any meat, fish, tofu, etc.)
2 cups Thai basil, leaves left whole
1/2 cup cilantro (optional)

Steps:

  • Whisk together oyster sauce, fish sauce, soy sauce, and sugar. Set aside.
  • Spray a wok or large frying pan with olive oil spray and heat over medium-high heat.
  • Add the garlic and chili (or serrano) peppers and stir fry for 30 seconds.
  • Add the red pepper and onion and stir fry until the onion is translucent. If using chicken or beef, add it with the the onion and red pepper. Cook until chicken is done, or beef is about medium.
  • Push ingredients in the wok/pan aside and quickly scramble the egg.
  • Add the oyster sauce mixture and stir everything together.
  • Raise the heat to high and add the chilled rice. Stir until blended with the sauce and other ingredients, breaking up clumps of rice with the back of a spoon.
  • Add more soy, oyster, or fish sauce, if necessary (or to taste).
  • When everything is blended together and rice is hot, remove from heat and stir in the basil.
  • Garnish with cilantro, if desired.

1/2 cup thinly sliced red bell pepper

Steps:

  • Add remaining 2 teaspoons oil to wok or pan; swirl to coat. Add chicken and cook 5 minutes or until browned, stirring to crumble. Drain well. Return chicken to wok or pan over medium heat. Add chiles and cook 1 minute. Add shallot mixture to pan. Stir in fish sauce and next 3 ingredients (through black pepper); cook 1 minute or until thoroughly heated. Remove pan from heat; stir in basil and juice.
  • If using the lettuce leaves, place about 1/3 cup of the mixture in each lettuce wrap. Serve with lime wedges.
