SPICY STUFFED PEPPERS



Spicy Stuffed Peppers image

This is one of my family's favorite recipes. It can be fixed any time of the year, but it's especially good with fresh peppers from the garden.

Number Of Ingredients 9

4 green peppers, tops and seeds removed
1 pound lean ground beef
1 cup finely chopped onion
1/2 cup cooked rice
1 teaspoon celery salt
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
1 jar (8 ounces) picante sauce

Steps:

  • Cook peppers in boiling salted water for 3 minutes. Drain and rinse with cold water. Combine ground beef, onion, rice and seasonings; spoon into peppers. Place in a greased baking dish; top with picante sauce. Bake, uncovered, at 375° for 35-40 minutes or until meat is no longer pink.

Spicy Stuffed Jalapeno Peppers image

Our local grocery stores sell prepared pre-seasoned meats for barbecuing, baking, roasting, or whatever type of cooking you are wanting to do. Now, you can do it yourself! These stuffed peppers are one of our favorite BBQ dishes. I hope you'll also enjoy! All photos belong to Mr. Pete's Cajun Spices LLC.

12 large jalapeno peppers
1 pound(s) ground pork
8 ounce(s) cream cheese
12 ounce(s) bacon
2 tablespoon(s) mr. pete's cajun seasoning
12 - toothpicks

Steps:

  • Slice the jalapeno peppers right down the center. Use a small spoon to scoop out seeds and clean as shown in the picture. Note: Always use gloves when handling peppers, as you want to eliminate the possibility of the oils making contact with any part of your skin.
  • Sprinkle Mr. Pete's Cajun Seasoning over the ground pork and mix.
  • Spoon a bit of cream cheese inside each pepper half. I've found that it is easier to fill the peppers when the cream cheese is on the hard side.
  • Top peppers with the ground pork mixture to hold in the cream cheese.
  • Cut the entire package of bacon in half. Wrap each pepper with a half slice of bacon using a toothpick to hold it together.
  • Place the peppers on the bbq pit for about 30 to 45 minutes at a medium heat level. Then, place them on the top rack until you are ready to serve. They'll have your company coming back for seconds and possibly thirds!

6 jalapeno peppers
3 -6 ounces soften cream cheese
olive oil
Italian seasoned breadcrumbs
shredded monterey jack cheese
salsa, to your taste

Steps:

  • Boil Jalapeno Peppers until soft for 5 minutes or so.
  • Remove from water, Using a sharp knive, slice the pepper lengthwise,leaving the pepper intact as a cavity, remove seeds and clean for the cream cheese filling. Rub olive oil on peppers.
  • Combine cream cheese, bread crumbs, jack cheese, salsa.
  • Fill each pepper with cream cheese mixture.
  • Place peppers on grill or bake (in preheated oven at 400) until cream cheese mixture is hot and peppers are cooked tender about 10 minutes.

10 large jalapeno peppers, with stems
1 (8 ounce) package Philadelphia Cream Cheese
3/4 cup shredded cheddar cheese
1 ounce hidden valley ranch dressing mix
1 (12 ounce) package bacon

Steps:

  • cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
  • Preheat oven to 375 degrees.
  • Soften the cream cheese in the microwave for about 20 seconds.
  • Place the cream cheese in a bowl.
  • Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
  • Fill the jalapenos with the creame/ranch/cheese mixture.
  • Trim any excess fat from the bacon, preferably with kitchen scissors.
  • Wrap all of the peppers with the bacon.
  • Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
  • Enjoy the best stuffed jalapeños you have ever had.

6 bacon strips, halved widthwise

24 fresh jalapeño peppers (2 lb.)
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
8 slices cooked OSCAR MAYER Bacon, crumbled
1/4 cup flour
2 eggs, beaten
40 round buttery crackers, finely crushed
2 cups oil

Steps:

  • Cut lengthwise slit in top of each pepper; scrape out seeds and veins. Combine next 3 ingredients; spoon into peppers.
  • Roll peppers in flour; dip in eggs, then roll in cracker crumbs until evenly coated. Place in single layer in shallow pan. Refrigerate 15 min.
