1 carton (32 ounces) beef broth
1-1/2 pounds red potatoes, cubed
1-1/2 pounds beef stew meat, cut into 1/2-inch pieces
1 package (16 ounces) frozen vegetables of your choice, thawed
2 cups water
1 medium onion, chopped
1 cup steak sauce
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Steps:

  • Combine all ingredients in a 5- or 6-qt. slow cooker. Cook, covered, on low 8-10 hours or until steak and potatoes are tender. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

2 teaspoons sesame oil ((or peanut oil))
8 cups chicken broth
4 cups beef broth
4 cups water
1 large sweet onion, (peeled and cut into wedges)
6 cloves garlic, (peeled and smashed)
2 large carrots, (cut into chunks)
2 inch piece fresh ginger, (sliced)
4 whole scallions, (chopped)
10 button mushrooms, (sliced thin)
salt

Steps:

  • Place a large 8-quart stock pot over medium-high heat. Add the oil and place the onion, garlic, carrots, and ginger in the pot. Sear the veggies on all sides to caramelize, making sure not to burn the garlic.
  • Pour in the chicken broth, beef broth, and water. Bring to a boil. Lower the heat to a low boil and simmer for at least one hour.
  • Use a skimmer to remove the vegetables from the broth. Taste, then salt as needed.
  • To serve: ladle hot broth into bowls and sprinkle chopped scallion and sliced mushrooms over the top.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons vegetable oil
1 1/2-2 lbs lean round steak, cut into 1/2 inch cubes
1/4 cup chopped onion (about 1/2 a small onion)
3 tablespoons flour
1 tablespoon paprika
1 teaspoon salt
1/4 teaspoon pepper
4 cups beef stock or 4 cups broth
2 cups water
1 bay leaf
1 teaspoon dried parsley
2 sprigs celery leaves, chopped
1/2 teaspoon dried marjoram
1 1/2 cups cubed peeled potatoes (about 2 medium)
1 1/2 cups sliced carrots (about 2 medium)
1 1/2 cups chopped celery (3-4 stalks)
1 (6 ounce) can tomato paste

Steps:

  • In a large saucepan, melt 1 tablespoon butter over medium heat; add 1 tablespoon oil. Brown half the beef. Remove from pan. Add remaining butter and oil. Brown remaining beef and onion. Return all meat to pan.
  • Combine flour, paprika, salt and pepper; sprinkle over beef and mix well. Stir in stock and water. Add bay leaf, parsley, celery leaves and marjoram; bring to a boil. Reduce heat; cover and simmer for 1 hour or until tender.
  • Add potatoes, carrots and celery. Cover and simmer for 30-45 minutes or until vegetables are tender and soup begins to thicken. Stir in tomato paste; simmer uncovered, for 15 minutes. Remove bay leaf before serving.

Steps:

  • Heat the oil in a heavy large stockpot over medium-high heat. Add the onions, celery, carrot, bell pepper, and garlic, and saute until the onions are translucent, about 15 minutes. Add the chili powder, coriander, cumin, oregano and crushed red pepper, and cook for 2 minutes. Stir in the tomatoes with their juices, tomato juice, tomato paste, cheese rind, and 2 teaspoons of salt. Add the broth, garbanzo beans, cannellini beans, and lentils. Stir in the broccoli, zucchini, and yellow squash. Bring to a simmer over high heat. Decrease the heat to medium. Simmer, uncovered, until the lentils are tender and the mixture thickens slightly, stirring often, about 20 minutes. Season the stew to taste with more salt, if desired.
  • Ladle the stew into bowls. Sprinkle with the shredded cheese and basil, and serve.

5 dried wood ear mushrooms
4 dried shiitake mushrooms
8 dried tiger lily buds
4 cups chicken stock
⅓ cup diced bamboo shoots
⅓ cup lean ground pork
1 teaspoon soy sauce
½ teaspoon white sugar
1 teaspoon salt
½ teaspoon ground white pepper
2 tablespoons red wine vinegar
2 tablespoons cornstarch
3 tablespoons water
½ (16 ounce) package firm tofu, cubed
1 egg, lightly beaten
1 teaspoon sesame oil
2 tablespoons thinly sliced green onion

Steps:

  • Soak the dried mushrooms and tiger lily buds in warm water for 20 minutes. After trimming off any tough stems, slice the mushrooms. With the fingers, shred the tiger lily stems.
  • Place the mushrooms, tiger lily buds, stock, bamboo shoots, and shredded pork into a saucepan. Bring to a boil, and simmer for 10 minutes.
  • Stir in soy sauce, sugar, salt, white pepper, and vinegar. Combine cornstarch with 3 tablespoons water. Add a little of the hot soup to the cornstarch, and then return all to the pan. Heat to boiling, stirring. Add the bean curd, and cook 1 to 2 minutes.
  • Just before serving, turn off the heat. Stir the egg in gradually. Mix in sesame oil. Sprinkle each serving with scallions.

1 1/2 - 2 cups V-8 juice (Spicy Hot is my fave)
1 can beef broth (this is roughly 2 cups; add more if needed)
2-3 potatoes, diced (or 1/2 bag Simply Potatoes diced with onions)
1 cup diced carrots
1 cup chopped onion (I used chopped frozen)
3-4 cloves garlic, minced
1 envelope Lipton onion soup mix
1 1/2 cup frozen white corn
2 cans Rotel tomatoes
1 can green beans, cut into halves (or 1 cup frozen)
1 can Campbell's tomato soup
2-3 dashes hot sauce or to taste
pinch red pepper flakes
1 tsp Italian seasoning
1 bay leaf
3 TB butter
1 TB Worcestershire sauce
1 TB A1 Steak Sauce
kosher salt & ground pepper to taste
1 1/2-2 pounds ground chuck or beef

Steps:

  • Put ground beef in skillet, season with kosher salt & ground pepper, and cook over medium heat until almost brown.
  • Add garlic the last minute or two of browning.
  • Remove from heat; drain fat and sprinkle dry onion soup on top.
  • Pre-cook potatoes and carrots to almost done. I use Ziploc Zip 'N Steam bags and cook for 4 minutes on high.
  • Add butter to potatoes and carrots; let sit until butter melts.
  • Stir potatoes and carrots until coated with butter.
  • Add potatoes, carrots, and green beans to the skillet with the meat.
  • Sprinkle vegetables with salt and lots of pepper.
  • Add all remaining ingredients - bring soup to a boil.
  • Reduce heat, and simmer at least an hour.
  • May transfer to a slow cooker; cook on high 4 hours or low 7 hours.

5.30 ounces Lo Mein Noodles
Cabbage (chopped )
Green Onions (Spring Onions, sliced )
Lime Juice
Red Chili Pepper Flakes

Peanuts (crushed )
Cilantro (aka Coriander grees)

Steps:

  • Heat up a pan and add the oil. Add in the ginger and garlic and stir-fry a little bit on a higher flame.
  • Next, add the red curry paste and stir-fry for 2 minutes on high heat.
  • Reduce heat, then pour in the coconut milk and follow suit with the broth.
  • Season with fish sauce and the brown sugar. Mix the contents.
  • Add the Noodles to the soup. Cook the noodles soft on medium heat.

1/2 medium carrot (julienned)
1 scallion (cut into 2-inch pieces)
1 cup Napa cabbage (sliced into 1-inch chunks, can also substitute bok choy or thinly-sliced American cabbage)
4 shiitake mushrooms (dried, re-hydrated, and thinly sliced)
2 tablespoons soy sauce

Steps:

  • Gather the ingredients.
  • In a large pot, cook the egg noodles (or udon noodles ) according to package directions. Make sure not to overcook noodles-they should have some texture.
  • Drain and set aside.
  • In a soup pot, bring mussels (or clams) and 2 cups of water to a boil. Cover, reduce heat to a low simmer, and cook for a few minutes until the shells open.
  • Drain (reserving 1 cup of cooking liquid) and set aside the mussels or clams.
  • Add the one cup of cooking liquid to the chicken broth (or beef or anchovy broth).
  • Heat a well-oiled deep sauté pan or large wok and sauté garlic and ginger briefly.
  • Add chile pepper flakes (kochukaru), pork, and onions. Stir-fry.
  • After a few minutes, add shrimp, squid, carrots, scallions, and stir-fry.
  • After another few minutes, add cooked mussels (or clams), cabbage, mushrooms, and broth.
  • Bring to a boil. Reduce heat to medium, simmer, and let cook for 5 more minutes.
  • Add soy sauce, salt, pepper, chiles, and fish sauce, to taste.
  • Place noodles in individual soup bowls and ladle soup over noodles.
  • Serve and enjoy!

Add seafood stock, chicken stock, the jalapeño that’s been sliced from the ribs and seeds, bay leaves, and spices. Turn heat up to bring soup to a boil then turn back down to medium, place a lid partially on top and gently simmer for 30 minutes. Remove bay leaves and jalapeños then add lime juice to taste, and salt if needed. I usually use about 1/3 of a fresh lime.
  • Turn heat back up to high to bring the soup to a boil then add shrimp and boil until cooked through - 1-2 minutes. Scoop soup into bowls then top with cooked rice. Add sliced raw jalapeños (these add a ton of flavor and heat vs just being a garnish so don’t skip!) and chopped cilantro then serve with lime wedges.
