SPICY SRIRACHA TOFU JERKY



Spicy Sriracha Tofu Jerky image

This savory and extra spicy tofu jerky is made with oven dried tofu strips flavored with smoky seasonings and fiery sriracha sauce!

1 pound extra firm tofu
1/4 cup soy sauce or tamari
1 teaspoon liquid smoke
1 1/2 tablespoons sriracha sauce ((or to taste))
1/2 teaspoon garlic powder
Parchment paper

Steps:

  • Drain the tofu and pat it dry.
  • Cut the tofu into very thin slices, between 1/4 and 1/8 of an inch, shooting for 1/8 inch. (Too thick and they'll take forever to bake.) Then arrange the slices on a parchment-lined baking sheet.
  • Stir the remaining ingredients together in a small bowl, and brush half of the mixture over the tofu slices. Flip the slices and brush the remaining mixture on the opposite sides.
  • Place the baking sheet in the oven and bake at 200°F for 2-3 hours, or until slices become tough and dry, very carefully flipping them about halfway through.
  • Remove the baking sheet from the oven and allow the tofu to cool. The texture will toughen up a bit more as they cool.
  • Store the jerky in a sealed container for 2-3 days.

Spicy tofu jerky made easy in your dehydrator. This gets better both in texture and flavor once it is refrigerated so make sure to plan ahead.

1 (16 ounce) package extra-firm tofu, pressed and drained
¼ cup soy sauce
2 tablespoons Sriracha
1 teaspoon liquid smoke flavoring
½ teaspoon garlic powder

Steps:

  • Slice tofu block in half lengthwise, then slice widthwise into 1/8- to 1/4-inch slices. Lay strips on a clean work surface.
  • Whisk soy sauce, Sriracha, liquid smoke, and garlic powder in a bowl. Brush sauce over top side of tofu strips. Carefully flip strips over and brush other side with sauce.
  • Place the strips on the rack of a dehydrator. Set temperature to 145 degrees Fahrenheit (63 degrees Celsius). Dehydrate for 2 hours. Flip strips over and dehydrate 1 hour more.
  • Remove the lid from the dehydrator and let strips cool for 1 hour for further drying. Place in an airtight container and refrigerate.

  • To make the tofu: add the tofu to a medium bowl with the cornstarch. Toss well to coat, and shake off excess.
  • Heat the oil in a pan and fry the tofu cubes until all sides are browned. About 4 minutes each side. Drain tofu on paper towel to get rid of excess oil.
  • To make the Sriracha sauce: in a small saucepan, 1 cup water, soy sauce, sugar, sriracha, agave, and garlic, then bring to a boil. In a small bowl or glass, mix the cornstarch and 2 tablespoons water together. Pour the cornstarch mixture into the sauce and whisk well. Continue to cook another minute or two until the sauce thickens.

  • Drain and remove tofu from package. Slice the block of tofu into two 1/2 inch thin planks and place on a stack of 4-5 folded paper towels, placing an additional stack of paper towels on top. Set something heavyish on top (I use a cast iron skillet) to make a make-shift tofu press for water removal. Allow to sit. I usually start my tofu about 30 minutes before I want to start cooking.
  • Measure out water, soy sauce, sugar, sriracha, honey, and garlic in a small sauce pan and bring to a boil. Start with 1 TBSP Sriracha then add extra as desired at the end after taste-testing the spice level. You can always add more at the end if desired.
  • Bring a pan or cast iron skillet to medium-high heat, then add 2 TBSP oil once hot. Tilt and swirl pan so oil is evenly distributed. Once the oil has evenly heated, add your tofu, spaced, so that no sides touch.
  • Pre-heat oven to 400 degrees F and place a piece of parchment paper over a baking sheet. Arrange the coated tofu spaced on the parchment. Bake for 25-35 minutes, tossing or flipping at the 15-minute mark until nice and crispy.
