SPICY SPINACH DIP WITH PINE NUTS

Steps:
- Scoop yogurt into a paper towel lined strainer set over a bowl.
- Let stand at room temp for 30 minutes.
- Meanwhile, heat the olive oil in a small skillet. Add the pine nuts and minced onion and cook over high heat, stirring frequently until the onion is softened and lightly browned and the pine nuts are golden, 4 to 5 minutes.
- Add the cumin, coriander, chile powder and cayenne, cook, stirring for 1 minute. Place in a bowl.
- Using your hands or a potato ricer, squeeze the spinach until very dry. (I've never used that technique before, I place spinach in a clean dish towel and squeeze dry).
- Add the spinach and the drained yogurt to the onion mixture, season with salt and stir well.
- Dip can be refrigerated overnight.

SPICY SOUTHWESTERN SPINACH DIP
Steps:
- Preheat oven to 400°F. Line a baking sheet with foil. Set aside.
- Thaw the chopped spinach and place in a colander to drain. Gently press the spinach with the back of a spoon to remove the excess water.
- In a large mixing bowl combine the cream cheese, cilantro, onion, Rotel tomatoes, spinach, half the grated Monterey Jack cheese, and 2 teaspoons red pepper flakes. Mix on medium speed until combined. Add some of the reserved liquid from the tomatoes to thin if needed.
- Pour into a greased casserole dish or 9-inch pie plate. Top with remaining Jack cheese and red pepper flakes if using.
- Bake at 400°F for 30 minutes or until top is golden brown and dip is bubbly.

This is the ultimate spinach dip! It is made from fresh spinach leaves and spring onions. I'm always asked to bring this along to major family events and, of course, during the holidays. It may be served at once, but tastes best when chilled for an hour. Serve with slices of sourdough baguettes.

- toast pine nuts lightly in pan and set aside. Watch carefully these are easy to burn!
- In large skillet warm olive oil then add garlic. Cook garlic just until it starts to pop then add spinach and lemon juice.
- Keep tossing spinach and as it starts to wilt and add in pine nuts; add light sea salt and cracked pepper to taste.
- You want to cook spinach until it's just completely wilted, but not until it's mush. Turn off heat, add grated cheese and toss lightly as it melts. Remove from pan to serving dish and top with a little more grated cheese and you're ready to go.

SPINACH WITH PINE NUTS & GARLIC

- Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
- Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
- Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

- Once skillet is hot, add spinach. Sprinkle with salt and black pepper. Stir and cook until spinach is wilted.
