1 pound spaghetti
Salt, for pasta water
1 1/4 pounds ground sirloin
2 teaspoons Worcestershire sauce, eyeball it
1 egg, beaten
1/2 cup Italian bread crumbs, a couple of handfuls
1/4 cup grated Parmesan, Parmigiano-Reggiano or Romano cheese
2 cloves garlic, chopped
Salt and pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1/2 teaspoon crushed red pepper flakes
4 cloves garlic, crushed or chopped
1 small onion, finely chopped
1 cup beef stock, available on soup aisle in market in small paper boxes
1 (28-ounce) can crushed tomatoes
A handful chopped flat-leaf parsley
10 leaves fresh basil leaves, torn or thinly sliced
Grated cheese, such as Parmigiano-Reggiano or Romano, for passing at table
Crusty bread or garlic bread, for passing at the table

Steps:

  • Preheat oven to 425 degrees F.
  • Place a large pot of water on to boil for spaghetti. When it boils, add salt and pasta and cook to al dente.
  • Mix beef and Worcestershire, egg, bread crumbs, cheese, garlic, salt and pepper. Roll meat into 1 1/2 inch medium-sized meatballs and place on nonstick cookie sheet or a cookie sheet greased with extra-virgin olive oil. Bake balls 10 to 12 minutes, until no longer pink.
  • Heat a deep skillet or medium pot over moderate heat. Add oil, crushed pepper, garlic and finely chopped onion. Saute 5 to 7 minutes, until onion bits are soft. Add beef stock, crushed tomatoes, and herbs. Bring to a simmer and cook for about 10 minutes.
  • Toss hot, drained pasta with a few ladles of the sauce and grated cheese. Turn meatballs in remaining sauce. Place pasta on dinner plates and top with meatballs and sauce and extra grated cheese. Serve with bread or garlic bread (and some good chianti!)

1 lb ground beef
2 garlic cloves finely minced
1/2 small onion finely chopped
1 tbsp parsley
1/2 jalapeno
1/4 cup bread crumbs
1/4 cup parmesan cheese
2 tbsp chili garlic sauce
1 egg
1 tsp oregano
2 tbsp whole milk
salt and pepper to taste
28 ounces crushed tomatoes
2 garlic cloves finely minced
1/2 small onion finely chopped
2 tsp red chili flakes
1 tsp sugar
1/4 cup red wine
1 tbsp fresh basil
salt and pepper to taste

Steps:

  • Combine beef, bread crumbs, parsley, fresh minced garlic, onions, jalapeños, chili garlic sauce, egg, milk, parmesan cheese, oregano, and a generous sprinkle of salt and pepper. Using your hands mix gently, careful not to over mix.
  • Roll meat mixture into golf sized balls and then fry the meatballs in vegetable oil over medium high heat, working in batches. Brown them on all sides. Each batch should take about 7 minutes.
  • Heat a separate skillet over medium low heat, add onions and cook until translucent
  • Add fresh minced garlic and red chili flakes, season with salt and pepper and cook until garlic turns golden and fragrant.
  • Add crushed tomatoes, red wine, sugar, basil, salt, and pepper. Cook for 15-20 minutes before adding the meatballs.
  • Place the browned meatballs in the sauce and let it cook for an additional 30-40 minutes or until the meatballs are tender and fully cooked through.
  • Add some fresh basil and serve over Spaghetti

250 g Spaghetti
3 cloves Garlic (finely chopped)
1 large Onion (chopped)
2-3 Red Chillies (finely chopped)
1 tsp Paprika
1 tbsp Tomato Paste
1 tin Chopped Tomatoes
1 cup Beef/Lamb Broth
2 Bay Leaves
Salt & Pepper (to taste)
500 g Beef/Lamb Mince
½ Onion (finely chopped)
1 tsp Red Chilli Flakes
1 tsp Garlic Powder
1 tsp Paprika
1½ tsp Salt
1 tsp Black Pepper
1 Egg
½ cup Golden Breadcrumbs
Fresh Coriander Leaves & Stems

Steps:

  • Combine all the meatballs ingredients together. Shape into palm-size balls, each roughly weighing about 20g.
  • Chill the meatballs in the refrigerator for at least 30 minutes.
  • In a large pot, heat oil over medium-high heat until it starts to smoke.
  • Sear meatballs until a crust form over the meatballs on all sides and are browned in colour. Remove from pot and set aside.
  • In the same pot, add more oil if required and add garlic, onions, and red chillies. Saute until golden.
  • Season with salt, black pepper, and paprika.
  • Stir in tomato paste and cook for a few minutes until deepened in colour.
  • Add chopped tomatoes, beef/lamb broth, and bay leaves. Bring to a boil then lower heat to medium-low and allow to simmer for 15 minutes until slightly reduced.
  • Discard the bay leaves. Using a hand-blender, blend the sauce until smooth.
  • Return the meatballs into the sauce. Cover and simmer for 25-30 minutes.
  • In the meantime, bring a large pot of water to boil. Season generously with salt and cook spaghetti according to package instructions.
  • Stir in fresh coriander leaves and let cook for another 5 minutes.
  • Toss in cooked spaghetti in the sauce. Garnish with more fresh coriander leaves and serve hot.

1/2 cup minced fresh parsley

  • Preheat the oven to 400 degrees. Line 2 sheet pans with parchment paper. Place the bread in the bowl of a food processor fitted with the steel blade. Process until the bread is in medium crumbs. Transfer the crumbs to a small bowl and add the milk. Set aside for 5 minutes. In a large mixing bowl, combine the turkey, sausage, prosciutto, bread mixture, Asiago, parsley, oregano, red pepper flakes, 1 tablespoon salt, and 1 1/2 teaspoons pepper. Lightly combine the ingredients with your hands. Add the 3 tablespoons of olive oil and the eggs, and stir lightly with a fork to combine. With your hands, lightly roll the mixture into 2-inch-round meatballs and place them on the prepared sheet pans. Brush the meatballs with olive oil. Bake for 35 to 40 minutes, until the tops are browned and the centers are completely cooked. Pour the marinara sauce in a large, low pot, add the meatballs, and bring to a simmer. Meanwhile, cook the spaghetti in a large pot of boiling salted water according to the directions on the package. Drain and place the spaghetti in individual bowls, and top with 3 meatballs and lots of sauce. Serve with Parmesan cheese on the side.

1/4 cup olive oil
1 rack baby back ribs, separated (about 2 pounds)
1 large Spanish onion, diced
1 tablespoon kosher salt
6 cloves garlic, sliced
1 bottle dry white wine
Two 28-ounce cans San Marzano tomatoes, chopped
3 tablespoons fresh oregano leaves
1 tablespoon crushed red pepper flakes, optional
1 fresh bay leaf
One 2-to 3-inch Parmesan rind
1/3 cup olive oil
1 clove garlic, minced
1 shallot, minced
1 1/2 cups diced day-old wheat bread (like from a pullman loaf)
1/4 cup whole milk
1 1/2 pounds ground beef (80/20 or 75/25)
3/4 cup whole-milk ricotta
1/2 cup fresh basil leaves, chopped
1/2 cup chopped fresh flat-leaf parsley
1/4 cup grated Parmesan
1 teaspoon kosher salt
1 egg
Yia Yia's Neapolitan Sauce
Kosher salt
1 pound spaghetti
15 fresh basil leaves, torn
1 to 2 tablespoons butter
1/4 cup grated Parmesan

Steps:

  • For the sauce: Heat the oil in a large Dutch oven over medium heat. Add the ribs and brown evenly, about 4 minutes. Add the onions, sprinkle with salt and cook until translucent, 2 minutes. Add the garlic and cook until everything is soft but not browned, about 3 minutes. Add the white wine, stirring to deglaze the pan. Add the tomatoes along with the oregano, red pepper flakes if using, bay leaf and Parmesan rind. Bring the sauce to a simmer, reduce the heat to its lowest possible setting and continue to cook until reduced by about a third, for up to 8 hours.
  • Taste for seasoning and add more salt if necessary. Remove the bay leaf. If not using right away, let the sauce cool, and then cover and refrigerate for up to 1 week or freeze for up to 2 months. Makes about 2 quarts.
  • For the meatballs and sauce: In a small saute pan over medium heat, add 1 tablespoon of the oil, the garlic and shallots and sweat until translucent, 2 to 3 minutes.
  • Soak the bread in the milk in a medium bowl.
  • In a separate bowl, combine the beef with the ricotta, basil, parsley, Parmesan, salt, egg and the cooked shallots and garlic. After the bread has soaked up the milk, remove it from the bowl and ring out the remaining liquid. Thoroughly mix the bread into the meat mixture.
  • Form the meat mixture into 2-inch balls using about 1/4 cup for each. Heat the remaining olive oil in a large frying pan and add the meatballs. Cook until golden on the outside, 2 to 3 minutes per side.
  • Place Yia Yia's Neapolitan Sauce in a large saucepan and add the meatballs. (Keep the frying pan for finishing the pasta.) Bring to a simmer and simmer about 30 minutes.
  • For the spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti al dente, according to the package directions.
  • Add a cup or two of the sauce to the empty meatball pan over medium heat. Drain the spaghetti and add it to the pan, along with the basil leaves, Parmesan and butter. Toss to coat. Transfer to a serving platter, top with the meatballs and ribs from Yia Yia's Neapolitan Sauce and serve with the remaining sauce on the side.

8 good-quality pork sausages
1 kg beef mince
1 onion, finely chopped
½ a large bunch flat-leaf parsley, finely chopped
85g parmesan, grated, plus extra to serve (optional)
100g fresh breadcrumbs
2 eggs, beaten with a fork
olive oil, for roasting
spaghetti, to serve (about 100g per portion)
3 tbsp olive oil
4 garlic cloves, crushed
4 x 400g cans chopped tomatoes
125ml red wine (optional)
3 tbsp caster sugar
½ a large bunch of flat-leaf parsley, finely chopped
few basil leaves (optional)

Steps:

  • First, make the meatballs. Split the skins of the sausages and squeeze out the meat into a large mixing bowl.
  • Add the mince, onion, parsley, parmesan, breadcrumbs, eggs and lots of seasoning. Get your hands in and mix together really well - the more you squeeze and mash the mince, the more tender the meatballs will be.
  • Heat the oven to 220C/200C fan/gas 7. Roll the mince mixture into about 50 golf-ball-sized meatballs. Set aside any meatballs for freezing, allowing about five per portion, then spread the rest out in a large roasting tin - the meatballs will brown better if spaced out a bit.
  • Drizzle with a little oil (about 1 tsp per portion), shake to coat, then roast for 20-30 mins until browned.
  • Meanwhile, make the sauce. Heat the olive oil in a large saucepan. Add the garlic cloves and sizzle for 1 min.
  • Stir in the chopped tomatoes, red wine, if using, caster sugar, parsley and seasoning. Simmer for 15-20 mins until slightly thickened.
  • Stir in a few basil leaves, if using, spoon out any portions for freezing, then add the cooked meatballs to the pan to keep warm while you cook the spaghetti in a pan of boiling, salted water.
  • Spoon the sauce and meatballs over spaghetti, or stir them all together and serve with extra parmesan and a few basil leaves, if you like.

This was one of those "accident" recipe's that turned out really great. I was making spaghetti one night and when I went looking for a jar of sauce there wasn't any. The only thing close to a tomatoe base sauce was something that I picked up from a specialty store. You can make it one of two ways (that I've tried anyhow). The first is how I made it the other night with less of a kick. Or with a spicy kick like I made it the first time. The ingredients that say "optional" those are the ones that I added to give it more of a consistency and color. Plus it tamed it. Either way I feel this is pretty good.

1 (8 ounce) can tomato sauce
1 (1/2 ounce) bag precooked frozen italian style meatballs
1/2 cup milk
Pataks Original Spicy Tomato and Cardamom Rogan Josh Cooking Sauce
1 (14 ounce) can hunts diced tomatoes with basil oregano and garlic
1 red bell pepper, chopped
1 green bell pepper, chopped
1 orange bell pepper, chopped
1 lb ground beef, chopped

Steps:

  • Cook the ground beef on a medium to low flame. If you choose to not use this method, then put a few tablespoons of oil in the pan and cook only half of the bag of meatballs. Or as many as you want.
  • Once the ground beef has started to change to a light pink, drain the excess oils and add the frozen meatballs. Cook until the ground beef is cook all the way through and until the meatballs are no longer frozen.
  • Now add your Pataka's Original Cooking sauce. Then take the 1/2 cup milk and put it in the jar of the cooking sauce to get the excess sauce that remains and add it to the pan.
  • Add the diced tomatoes and the bell peppers continue to cook on a medium flame until the sauce starts to simmer and reduce to a low flame. Continue cooking until the bell peppers are soft -- or if you like a little crunch just cook until they are warm.
  • Toss with your favorite pasta and enjoy!
  • *Note: The cooking sauce only comes in a 15 ounce jar, the site was giving me a hard time. If you like all of the extra ingredients and still want more of a kick you could always add half a jar more of the Pataks Cooking Sauce.

2 egg whites, lightly beaten
2 tablespoons olive oil
1 tablespoon milk
2 teaspoons chili powder
2 lbs uncooked ground turkey breast or 2 lbs ground turkey
1/3 cup finely chopped onion
1/4 cup fine dry breadcrumb
2 jalapeno peppers, seeded and minced (watch out for your eyes)
1 tablespoon chopped fresh cilantro
16 ounces whole wheat spaghetti or 16 ounces regular spaghetti
6 ounces cream cheese
2 cups milk
salt (optional, if using use sparingly at first)
4 ounces gouda cheese, shredded
fresh cilantro

Steps:

  • Heat oven to 375º F.
  • In bowl stir together egg whites, oil, milk, chili powder, 1 teaspoons black pepper, and 1/2 teaspoons salt.
  • In large bowl combine turkey, onion, bread crumbs, jalapenos, and chopped cilantro.
  • Fold egg white mixture into turkey mixture; mix well.
  • Shape turkey mixture in 1-1/2-inch balls.
  • Place on a foil-lined 15x10x1-inch baking pan.
  • Bake 20 minutes or until no longer pink (170º F).
  • Meanwhile, cook spaghetti, with 1 tablespoon salt added to water, according to package directions; drain & keep warm.
  • In same pan used for pasta melt cream cheese over low heat; add milk.
  • Cook, stirring, until bubbly.
  • Return spaghetti to pan; toss to coat with cream cheese mixture.
  • Serve spaghetti with meatballs, cheese, and cilantro.
