SPICED PECANS
Steps:
- Line a half sheet pan with parchment paper and set aside.
- Mix the salt, cumin, cayenne, cinnamon and orange peel together in a small bowl and set aside.
- Place the nuts in a 10-inch cast iron skillet and set over medium heat. Cook, stirring frequently, for 4 to 5 minutes until they just start to brown and smell toasted. Add the butter and stir until it melts. Add the spice mixture and stir to combine. Once combined, add both sugars and water, stirring until the mixture thickens and coats the nuts, approximately 2 to 3 minutes.
- Transfer the nuts to the prepared sheetpan and separate them with a fork or spatula. Allow the nuts to cool completely before transferring to an airtight container for storage. Can be stored up to 3 weeks.
EASY SPICY PECANS
My husband always requests these during the holidays when we have fresh local pecans. I use the full tsp of hot pepper sauce (tobasco) in mine. (The servings shown are an estimate depending on what you're using them for.)

- Mix all ingredients together and spread out on a cookie sheet.
- Bake for 30 minutes, stirring occasionally.
- Do not overbake.
- Drain on paper towels.
- Store in an air tight container.

- Cook brown sugar, orange juice concentrate, butter, salt, chili powder, and pepper in a skillet over medium-high heat, stirring until brown sugar dissolves.
- Remove from heat, and stir in pecans.
- Transfer to a lightly greased baking sheet.
- Bake at 350 degrees F.

- Cool and store in an airtight container.

SWEET & SPICY PECANS
These nuts are great on top of a delicious salad, but are also good as a snack. Because there is no butter, it keeps the calorie count low! This recipe is from Southern Living's 40 Years of our Best Recipes cookbook.

Steps:
- Stir together 1/4 cup sugar and warm water until sugar dissolves. Add pecans; soak 10 minutes. Drain, discarding syrup.
- Combine 2 tbsp sugar, chili powder, and red pepper. Add pecans, tossing to coat. Place pecans on a lightly greased baking sheet.
- Bake at 350 degrees for 10 minutes, stirring once halfway through.
HOT AND SPICY PECANS
These pecans aren't too hot, but you can leave out the red pepper if you like them milder, or increase it to taste. These make a great snack or appetizer for the holidays, or anytime.

- In a medium bowl, mix butter, Worcestershire sauce, red pepper, salt, and garlic powder. Stir in the pecans, and gently toss with chili powder to coat.
- Spread coated pecans on a medium baking sheet, and cook 30 minutes in the preheated oven, stirring approximately every 10 minutes.
