SLOPPY JOES
These smoky, spicy Sloppy Joes are made completely from scratch -- no ketchup or seasoning packets -- and they make an easy weeknight dinner.

Steps:
- In a medium bowl, using your hands, mash the beef with the baking soda. Let it sit on the counter for 20 to 25 minutes to tenderize.
- Preheat the oven to 350°F and set a rack in the middle position.
- Heat the butter in a large skillet over medium heat until bubbling. Add the onion, bell pepper, and garlic and cook, stirring frequently, until softened, 4 to 6 minutes.
- Add the beef, salt, pepper, smoked paprika, cumin, oregano, and dry mustard and cook, breaking up meat with wooden spoon, until mostly brown, about 3 minutes. Add the tomato sauce, tomato paste, Worcestershire sauce, and hot sauce. Reduce the heat and simmer, uncovered, until the sauce is thickened, about 10 minutes.
- Meanwhile, butter the inside of the buns and place on a baking sheet, butter side up. Toast in the oven until warmed through and lightly crispy, about 5 minutes.
- Taste the sloppy Joe mixture and adjust seasonings. (If you like your Sloppy Joes sweet, feel free to add 1 teaspoon of brown sugar.) Spoon the mixture onto the toasted hamburger buns and serve.
- Freezer-Friendly Instructions: The meat mixture can be frozen for up to 3 months and reheated in the microwave om on the stovetop until hot.

SPICY SLOPPY JOES
My personal sloppy joe recipe, well loved by all who've eaten it. Not too spicy for the kids, but just spicy enough to make it interesting for the adults.

Steps:
- Brown meat, add in onion and garlic. Saute until onion and garlic have some color.
- Add rest of ingredients (except for buns), and simmer for at least an hour.
- Serve on hamburger buns with whatever condiments you prefer.

SPICY GARLIC BREAD SLOPPY JOES
This recipe uses three types of fresh chile. When preparing the chiles, it's usual to remove the seeds and the membrane as that is where the most intense heat lies. Of course, if you like your food super-hot and spicy, add the seeds and the membrane too!

- Heat the olive oil in a large pot over medium-high heat. Add the beef and brown, seasoning with a pinch of salt and pepper, 8 to 10 minutes. Drain off all but a couple tablespoons of the fat.
- Add the onion, chiles, garlic and tomato paste to the pot. Stir and cook for a minute to combine and cook the tomato paste slightly. Add the stock, ketchup, balsamic glaze, brown sugar, chili powder and mustard. Season with another pinch of salt and pepper. Stir to combine, cover and simmer over medium-low heat for 10 to 12 minutes to deepen the flavor.
- Meanwhile, bake the garlic bread according to the package instructions on a sheet pan lined with foil. Remove from the oven then preheat the broiler.
- Taste the meat mixture and adjust seasoning as needed. Divide the meat mixture over the top of the baked garlic bread. Next, top each with two slices of the provolone. Broil until the cheese has melted and browned, about 2 minutes.
- Garnish with the chopped parsley and serve.
SPICY VEGAN SLOPPY JOES
Mushrooms make these kicked-up sloppy Joes ultra-meaty. But there's no meat here, making this vegan sandwich one of the lightest sloppy Joes you'll probably ever make.

- Pulse the mushrooms in batches in a food processor until finely chopped. Set aside.
- Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, 1 tablespoon beer and 1/4 teaspoon salt and cook, stirring frequently, until the onions are lightly browned, about 5 minutes. Add the walnuts and peppers and cook, stirring occasionally, until the peppers are crisp-tender, about 3 minutes. Add the mushrooms, 3/4 teaspoon black pepper and chipotle powder and cook, stirring frequently, until the mushrooms are just cooked through, about 5 minutes.
- Add the remaining beer, the ketchup, tomato paste and 1/8 teaspoon salt and cook while stirring until the sauce is the consistency that you like, about 2 minutes.
- Spoon the mixture onto each bun. Serve with toppings if desired.

- In a large skillet cook ground beef, onion, and garlic till meat is brown and onion is tender.
- Drain off fat.
- Meanwhile, in a 3 1/2 or 4 quart crockery cooker combine tomato juice, catsup, water, brown sugar, jalapeno peppers, mustard, chili powder and Worcestershire sauce.
- Stir in meat mixture.
- Cover; cook on low heat setting for 10-12 hours or high heat setting for 3-5 hours.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- Heat oil in a large nonstick skillet over medium-high heat. Cook turkey in batches until no longer pink, breaking into crumbles, 8-10 minutes per batch. Transfer meat to a 5- or 6-qt. slow cooker. In the same skillet, cook the onion and green pepper until tender, 2-3 minutes. Add garlic, Worcestershire and red pepper flakes; cook 1 minute longer. SPICY SLOPPY ITALIAN JOES!
This is my version of open-faced sloppy joes. I probably make this 2-3 times a month...DH loves it so! To make this a fast, weeknight meal I use a sloppy joe packet and frozen Texas toast garlic bread slices with 5 cheeses(of course, you don't have to get the kind with cheese). You could also use a loaf of garlic bread and cut into large pieces after baking if you prefer. Enjoy!

- Bake Texas toast style garlic bread slices per package directions. (I like the kind with cheese!).
- Brown meat (breaking up into crumbles), onion, peppers, and garlic in a large skillet over medium high heat until veggies are soft and meat is cooked through. Drain grease if necessary.
- Add dry sloppy joe packet and spaghetti sauce to meat mixture. Stir well to combine.
- Reduce heat to medium. Let sauce simmer until reduced to desired consistency, about 5-10 minutes (we like ours super saucy, so I only simmer about 5 min).
- I serve these open-faced, so spoon sloppy joe mixture over baked garlic bread pieces and top with parmesan cheese.

- Brown the meat, breaking it up, until all fat has disappeard.
- Lower heat to medium and add the Hot Shot, salt, chili powder and flour.
- Mix well to distribute the flour throughout the meat.
- Stir in the tomato soup, Worcestershire sauce and brown sugar.
- Continue to simmer and stir until thickened.
- The longer you let it simmer, the better the flavors will bond.
- It will thicken a bit more during cooling.
- This feeds 5 good eaters.
