SPICY SHRIMP AND PASTA

Spicy Shrimp and Pasta image

I found the original recipe in an old (1990's) Southern Living Magazine. I changed a few things and tweeked a few things, and came up with this recipe. Hubby and I love it. I serve it hot, right out of the electric skillet with some crispy garlic bread.

Spicy Shrimp and Spaghetti Aglio Olio (Garlic and Oil) image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 22

2 pounds jumbo shrimp, peeled and deveined
1 lemon, juiced
1/4 cup chopped flat-leaf parsley (a couple of handfuls)
1 teaspoon crushed red pepper flakes
4 cloves garlic, crushed and peeled
Coarse salt, about 1 teaspoon
2 tablespoons (a couple of generous drizzles) extra-virgin olive oil
1/4 cup (4 turns around the pan in a light stream) extra-virgin olive oil
1 (2-ounce) tin anchovy fillets
6 to 8 large cloves garlic, crushed and minced
1/2 teaspoon crushed red pepper flakes
1/4 cup finely chopped flat leaf parsley, a couple of handfuls
Coarse salt
1 pound spaghetti, cooked to al dente
Tomato and Onion Salad, as an accompaniment
Crusty bread, as an accompaniment
5 medium plum tomatoes, halved lengthwise, gently seeded, and thinly sliced
1 small white skinned onion, peeled, halved lengthwise, and thinly sliced
1/4 cup chopped flat-leaf parsley (a couple of handfuls)
A generous drizzle extra-virgin olive oil, about 2 tablespoons
Coarse salt and black pepper
Crusty Bread, as an accompaniment

Steps:

  • Combine shrimp with next 6 ingredients and toss to coat shrimp evenly.
  • Heat a large, nonstick skillet over medium high heat, then add half of the shrimp. Cook shrimp 3 minutes until pink and just firm. Remove shrimp to a warm platter and repeat process with remaining shrimp.
  • Return pan to heat and reduce heat to medium low. Add 1/4 cup extra-virgin olive oil. Add anchovies, garlic, and pepper flakes to oil. Break up anchovies with a wooden spoon until they melt away into the oil and garlic mixture.
  • Toss spaghetti in the pan with parsley and the garlic oil, then season with a little coarse salt, to your taste. Top servings of garlic and oil spaghetti with spicy shrimp and serve with Tomato and Onion Salad and Crusty Bread.
  • Prep your garlic and parsley for aglio olio and set them, as well as drained pasta and remaining ingredients all within arm's reach of your stove top.
  • The aroma will be intense! Cooked anchovies have a salted-nutty (rather than fishy) taste that compliments the garlic as it sweetens and softens.
  • Toss the tomatoes and onions with the chopped parsley, oil, salt, and pepper. Let stand while you prepare dinner, about 20 minutes. Re-toss and serve salad with crusty bread for mopping up juices and oil.

SPICY SHRIMP & PENNE PASTA

Spicy Shrimp & Penne Pasta image

I created this creamy pasta dish when I needed to use up some marinara. Red pepper flakes give it a little heat, which my family loves. It's super versatile, so try it with chicken, or simply stir in some fresh basil, too. -Lorri Stout, Gaithersburg, Maryland

SPICY SHRIMP PASTA IN GARLIC TOMATO CREAM SAUCE

Spicy Shrimp Pasta in Garlic Tomato Cream Sauce image

Italian-style pasta with spicy shrimp smothered in a homemade garlic tomato cream sauce. Easy shrimp pasta recipe that you can make at home any time with easy ingredients!

Provided by Julia

Categories     Main Course

Time 45m

Number Of Ingredients 14

2 tablespoons olive oil
1 pound shrimp (without shells, and deveined)
1/4 teaspoon crushed red pepper
1/4 teaspoon paprika
1/4 teaspoon salt
1 small onion (finely chopped)
4 garlic cloves (minced)
2 cups canned crushed tomatoes
1/4 cup water
1/2 cube chicken bullion ((I used Knorr))
1 tablespoon basil
1/4 teaspoon oregano (dried)
1/2 cup heavy cream
8 oz penne pasta ((for gluten free version, use brown rice penne))

Steps:

  • Heat olive oil in a large skillet on medium-high heat. Add shrimp and cook on one side for about 1 minute, until shrimp turns pink on that side. While it cooks, sprinkle the top of shrimp with crushed red pepper, paprika and salt to cover every single shrimp. Make sure not to crowd the shrimp in the skillet, otherwise moisture will form and shrimp won't sear right. And, don't skimp on spices. Using spatula turn shrimp over to the other side and cook for about 2 more minutes.
  • Remove shrimp to a plate, being careful to leave all the oil in the skillet.
  • To the same skillet, add chopped onion and minced garlic and cook on medium high heat in the olive oil that will have a nice reddish color from paprika and crushed red pepper. Cook for about 2 minutes, occasionally stirring, until onions soften.
  • Add crushed tomatoes and chicken bullion cube dissolved in 1/4 cup boiling water. Add basil and oregano, mix, bring to boil and reduce to simmer. Simmer for about 10-15 minutes, mixing occasionally and crushing all tomatoes into very small bites, until the sauce reduces just a bit. Season with more red pepper and salt, if needed. In the end, while on simmer, add heavy cream, mix it in, and immediately remove from heat.
  • In the mean time, bring a large pot of water to boil and cook pasta al dente according to the package instructions. Drain.
  • Add back the cooked shrimp and cooked and drained pasta to the skillet with the sauce. Mix everything well to combine. Reheat on low simmer, if needed. Do not bring to boil or high heat as it might affect the sauce texture. Add more salt and pepper if necessary.
  • When serving, I like to sprinkle the top of pasta with just a touch of crushed red pepper.

EASY SPICY SHRIMP PASTA - LOW FAT

Easy Spicy Shrimp Pasta - Low Fat image

Adjust red pepper as desired! Romantic little recipe for two that wont leave you too full to flirt! Yummy garlic and wine sauce coat the shrimp and pasta. A salad and some crusty fresh bread would be very nice with this and a nice chablis or chardonnay wouldn't hurt either! I came up with this after totally revamping a recipe found on healthycookingrecipes.com. "PLEASE adjust the seasonings to make it perfect for you and DO let me know how you change it up." Enjoy! UPDATE! Yes, as listed portion is quite large as you would find in a restaurant. Feel free to reduce the amount of pasta to save calories. We always have leftovers which is fine by me! I remove the shrimp to reheat. Zap pasta in micro for a few minutes then add the shrimp on top for about 20 seconds to remove the chill! Also feel free to experiment! More tomatoes, canned tomatoes (just use organic or add a pinch of sugar) less red pepper, more red pepper. You get the idea. Enjoy!

Time 15m

Yield 2 serving(s)

Number Of Ingredients 12

1/2 lb shrimp, peeled and deveined
8 ounces pasta, any kind- makes a generous serving, feel free to cut back but keep the amounts in all other ingredie
2 garlic cloves, minced, add more if you like garlic
3 green onions, chopped
1 lemon, juice and zest, only use about 2 Tbsp juice
1 -2 teaspoon red pepper flakes (adjust to taste) or 1 -2 jalapeno pepper, diced (adjust to taste)
1 teaspoon dried basil, crushed or 1 tablespoon fresh basil, chopped
1 teaspoon salt
1/4 cup dry white wine
1 medium large tomatoes or 1 pint cherry tomatoes, chopped
salt
fresh cracked pepper

Steps:

  • Boil the pasta in salted water until it is done to your liking.
  • Drain well reserving about 1 cup of pasta water. You might not use it all.
  • Place pasta in serving bowl or divide among two dinner bowls.
  • While pasta water is heating zest, juice lemon and reserve 2 Tbspn. This recipe will go FAST!
  • After adding pasta to boiling water, sprinkle a small amount of olive oil in a cold nonstick skillet and smear around with your CLEAN fingers. (Massage oil left on your fingers into your hands - it will make them silky soft.).
  • Turn heat on to medium high and let the pan warm for a minute or two. You want the pan to be hot but not scortching when you hold your hand over the surface.
  • Add the shrimp, garlic, onion, lemon rind, and pepper and cook stirring constantly for 2-3 minutes. Shrimp will just start to turn opaque but not yet pink.
  • Add tomatoes, salt, basil, lemon juice, and white wine. Stir and cook for another 2-3 minutes or until shrimp turn pink. (If using dried basil crush in hand before adding to pan to release oils. A different herb can be substituted if you prefer- just use the same quantity.).
  • Add in as much of the 1 cup reserved pasta water as you like- if any- to make as much sauce as you would like.
  • Taste sauce and adjust seasonings to your taste. If you would like a more onion or garlic flavor, add onion or garlic powder.
  • Spoon over drained pasta and garnish with fresh black pepper or additional pepper flakes if desired.
  • Other nice garnishes would be a little chopped parsley or green onion as well as a sprinkling of fresh grated parmesan.
  • Light the candles, top off the wine glasses and serve!

  • PASTA: Bring a large pot of water to a boil, salt the water, and cook the pasta minus 1-2 minutes from the package directions, drain and set aside.
  • SIMMER: In a saute pan, heat the olive oil over medium-high heat. Slice the remaining 4 cloves of garlic into slices. Add the garlic along with the red pepper flakes to the oil and allow the garlic to sizzle for about 1 minute. Add ¾ cup of shrimp stock and bring to a simmer before adding in all the tomatoes. Stir to combine and when the tomatoes start to simmer, season with salt and black pepper. Cover, lower the heat to low and cook for 10 minutes. Remove the lid, raise the heat back to medium, and continue to cook for 5 minutes until the sauce thickens.
  • FINISH: Add the shrimp and let the shrimp cook for 2 minutes, then add the butter and stir it in so that it just melts into the sauce. Continue to cook until the shrimp is almost done, about another 30-60 seconds. Check for seasonings, season with additional salt, pepper, and red pepper flakes if desired. Add the prepared pasta and toss. If the sauce is too thick, you can add a little bit of the remaining shrimp stock to thin. Sprinkle with chopped parsley and parmesan cheese before serving.

  • Bring a large pot of salted water to a boil. Cook the noodles to al dente according to package instructions.
  • Meanwhile, heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat (a big wok works too). Once the oil is hot, add the broccoli, red and yellow bell peppers, and salt. Let cook for 2 minutes, then add the shallot. Continue cooking until the vegetables are crisp-tender and the shallot is beginning to brown, about 3 additional minutes. Add the garlic and cook just until fragrant, about 30 seconds.
  • Stir in the pasta sauce. Bring the sauce to a gentle boil. Reduce the heat so that the sauce simmers gently. Stir in the shrimp and let simmer until the shrimp are cooked through—they will go from gray/blue to pink and opaque—about 5 minutes.
  • Drain the pasta and immediately add it to the sauce. Toss to coat the noodles in the sauce and evenly distribute the shrimp and vegetables (a pair of tongs is very handy for this). Sprinkle with parsley and Parmesan. Enjoy immediately.

  • Add salt to pot of water and bring to a boil. Cook pasta to al dente doneness. Before draining, scoop out at least 1/2 cup of the cooking water. Drain pasta and set aside.
  • While the pasta is cooking, cook the shrimp and sauce. Combine shrimp with cajun seasoning and olive oil in bowl. Toss to combine.
  • Heat large skillet over medium high heat. Add butter and melt. Add shrimp in a single layer and cook until golden brown on each side, turning only once. You may have to cook shrimp in two batches to allow enough room. Once done cooking, transfer cooked shrimp to a clean plate and reduce heat to medium low.
  • Add heavy cream to pan and scrape bottoms to release any food that is stuck to the bottom. Allow cream to bubble. Reduce heat to low and stir in parmesan cheese to melt. Add cooked pasta and shrimp and stir to coat. If sauce needs to be thinned, add pasta water, one tablespoon at a time, until desired consistency is achieved.
