Udon Noodles With Spicy Shrimp image

A combo of recipes from Cooking Light and The Big Bowl Cookbook. You can also use spaghetti instead of the udon noodles.

2 lbs large shrimp, peeled and deveined
1 teaspoon lime rind, grated
3 tablespoons fresh lime juice
3 tablespoons soy sauce
3 tablespoons red curry paste
1 tablespoon vegetable oil
1 1/2 cups red bell peppers, julienne-cut
1/2 cup green onion, thinly sliced
1/3 cup fresh cilantro, minced
1 cup fresh bean sprout
8 ounces uncooked udon noodles, cooked
6 tablespoons chopped peanuts

Steps:

  • Butterfly each shrimp, cutting to, but not through, the outside of the shrimp. Set aside.
  • Combine lime rind and next five ingredients; stir well.
  • Combine 1/3 cup of marinade with shrimp in a large plastic zip bag and marinate shrimp for 30 minutes in fridge.
  • Combine remaining 1/3 cup marinade, bell pepper, and next 4 ingredients in a large bowl, tossing to coat.
  • Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add shrimp, saute 5 minutes or until done. Combine shrimp with pasta mixture and toss gently. Sprinkle with nuts.
  • Serve warm or chilled.

I absolutely LOVE this recipe!! When I first got married, the best investment I made was sending away for 6 teeny little coil-bound Campbell's Soup cookbooks. Nowadays, I don't use them much anymore, but this is one recipe that's still a favourite. You won't believe how tasty and quick this is!!

2 cups water
2 tablespoons soy sauce
1 teaspoon ground ginger
1/4-1/2 teaspoon crushed red pepper flakes or 1/4-1/2 teaspoon cayenne
1/4 teaspoon garlic powder (or 1 tsp. minced fresh garlic)
2 (3 ounce) packages chicken-flavor oriental noodles (like Mr. Noodles, Ichiban, etc.)
1 lb medium shrimp, shelled and deveined
1 cup green onion, cut in 2-inch pieces
chopped fresh parsley
green onion, brushes
orange peel
lemon slice

Steps:

  • In a 10-inch skillet over high heat, combine water, soy sauce, ginger, pepper, garlic, and HALF of ONE soup seasoning packet (reserve remaining 1-1/2 packets for other use). Heat to boiling.
  • Add noodles, shrimp and green onion pieces. Return to boiling.
  • Reduce heat to low and cook 5 minutes, or until shrimp are pink and opaque and noodles are tender. Stir occasionally to separate noodles.
  • To serve, arrange mixture on platter. Sprinkle with parsley and garnish with green onion brush, orange peel and lemon slice, if desired.

The first time I had sauteed udon noodles, I fell in love. Most try udon in soups, but the flavors from a hot pan and excellent sauces make this spicy stir-fried version so much better. I mixed together my concoction of Asian flavors and produced this lovely dish that is great for family, friends, and guests. I promise you they will love it more than your generic Asian takeout.

½ cup soy sauce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
2 tablespoons brown sugar
1 ½ tablespoons Sriracha sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon garlic powder
1 teaspoon freshly ground black pepper
3 boneless pork loin chops, cut into bite-sized pieces
2 (7 ounce) packages fresh udon noodles
2 cups chopped broccoli florets
1 tablespoon olive oil, or more as needed
½ onion, finely chopped
4 cloves garlic, finely chopped, or more to taste
3 tablespoons bean sprouts, or to taste
3 tablespoons julienned carrot, or to taste
2 tablespoons diced green onion, or to taste

Steps:

  • Mix soy sauce, oyster sauce, hoisin sauce, brown sugar, Sriracha, rice vinegar, sesame oil, garlic powder, and pepper together in a small bowl. Combine 1/2 of the marinade with pork in a bowl. Refrigerate, 4 hours to overnight. Reserve remaining marinade for noodles.
  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water for 2 minutes; add broccoli to blanch slightly and continue to boil until noodles loosen, about 1 minute more. Strain and set aside.
  • Heat olive oil in a wok or deep pan over medium heat. Add onion and garlic; stir-fry until translucent, about 5 minutes. Add pork, bean sprouts, and carrot; stir-fry until pork is no longer pink, about 5 minutes. Add drained udon noodles and broccoli. Pour in remaining marinade and toss noodles to absorb flavors, 2 to 3 minutes. Add green onion; toss lightly, 1 to 2 minutes.

6 tablespoons unseasoned rice vinegar
6 tablespoons soy sauce
3 tablespoons vegetable oil

2 teaspoons sesame oil
1 tablespoon finely grated peeled ginger
1 teaspoon kosher salt, plus more to taste
2 cups snow peas, thinly sliced (about 8 ounces)
1 pound udon noodles
1 pound shrimp, peeled, deveined
1/3 cup coarsely chopped roasted salted peanuts
1/4 cup coarsely chopped fresh cilantro

Steps:

  • Whisk chile, garlic, vinegar, soy sauce, vegetable oil, peanut butter, sesame oil, ginger, and 1 tsp. salt in a large bowl. Add snow peas and toss to combine.
  • Cook udon in a large pot of boiling salted water according to package directions. Add shrimp 3 minutes before noodles are done and cook, stirring occasionally, until shrimp are pink and cooked through. Drain noodles and shrimp and add to dressing; stir vigorously to combine.
  • Transfer noodle mixture to a serving bowl or platter. Top with peanuts and cilantro. Serve immediately or at room temperature.

  • Once the shrimp is in the oven, heat 1 tablespoon oil in a large wok (if you don’t have a wok, a non-stick skillet is just fine). Sauté the cabbage over medium-heat, until the edges are browned (about 4 minutes). Reduce the heat to medium low and cook the cabbage until tender (another 4 minutes). Remove the cabbage to a large bowl and carefully wipe down the skillet with a dry paper towel to remove any browned bits.
  • While the cabbage is cooking, prepare the noodles as directed by the package instructions. Once ready, add the cooked noodles to the bowl of sauteed cabbage and toss with 2 teaspoons of sesame oil.
