Italian Cheese-Stuffed Meatloaf image

Cut slices of this juicy meatloaf, intensely flavored with herbs and prepared roasted peppers, to reveal a luscious center of melted cheeses.

2 eggs
1 1/2 lb lean (at least 80%) ground beef
2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
  • Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.

1 1/2 lbs ground beef
26 -28 ounces spaghetti sauce, ragu chunky garden style is what I recommend
1 egg
1/4 cup plain breadcrumbs
2 cups of shredded mozzarella cheese
1 tablespoon finely chopped fresh parsley
salt and pepper, however much desired
wax paper

Steps:

  • Preheat oven to 350°F.
  • In large bowl mix beef, 1/3 cup of sauce,egg, and bread crumbs.
  • Season with salt and pepper.
  • Roll out wax paper on table and flatten mixture on it.
  • Shape into a rectangle.
  • Sprinkle 1 1/2 cups of cheese and parsley down center leaving 3/4 inch border.
  • Then roll the meatloaf like a jelly roll tightly and be sure when rolling to pull the wax paper off.
  • Press and seal the ends closed put in to pan.
  • Bake uncovered 45 minutes. Pour remaining sauce and cheese on top and bake an additional 15 minutes or until cheese is melted.

  • In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. 2 pounds lean ground beef
1 cup pasta sauce
½ cup Italian-style bread crumbs, or more as needed
¼ cup minced onion
¼ cup ketchup
1 egg, beaten
2 large cloves garlic, minced
½ teaspoon oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly mix beef, pasta sauce, bread crumbs, onion, ketchup, egg, garlic, oregano, salt, and ground black pepper together using your hands in a large bowl.
  • Spread 1/2 the meat mixture into the bottom of a loaf pan. Spread mozzarella cheese over the center of the meat. Spread remaining meat mixture over the cheese, pressing edges of meat together on the sides to seal in the cheese.

Steps:

  • Combine ground beef, one cup spaghetti sauce, eggs, breadcrumbs, onion, parsley, salt and pepper.

  • Spread 1/3 in the bottom of an ungreased 9x5 inch loaf pan.
  • Cover with half of the Mozzarella cheese.

1 cup seasoned dry bread crumb
1 teaspoon minced garlic
1/2 cup of your favorite pasta sauce, homemade or in the jar
1 cup chopped onion
1/4 cup chopped fresh basil
3/4 lb lean ground beef
1/2 lb hot Italian sausage
1 cup cubed mozzarella cheese, in about 1/4 inch pieces
additional pasta sauce, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
  • Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
  • Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
  • Serve with rice, spaghetti, or scalloped potatoes.

3/4 lb bulk Italian sausage
1 egg
1 can (8 oz) pizza sauce
1/4 cup Progresso™ Italian style bread crumbs
1/4 teaspoon pepper
2 cups shredded 6 cheese Italian cheese blend (8 oz)
2 cups loosely packed fresh spinach leaves

Steps:

  • Heat oven to 350°F. In large bowl, mix ground beef, sausage, egg, 1/2 cup of the pizza sauce, the bread crumbs and pepper.
  • On foil, pat mixture to12x8-inch rectangle. Sprinkle evenly with cheese; gently press into meat. Top with spinach. Starting at short end, roll up tightly, using foil to start roll and tucking in spinach leaves; seal ends. Place seam side down in ungreased 12x8-inch (2 quart) glass baking dish.

8 slices bacon, divided
1 pound ground beef
¼ cup dry bread crumbs
1 egg, beaten
1 clove garlic, minced

1/2 cup onion (diced)
1/2 cup red bell pepper (diced)
2 cloves garlic (minced)
1 lb ground beef
1 lb Italian pork sausage (mild or spicy)
2 tbsp Italian seasoning
1/2 cup ricotta cheese
1/4 cup parmesan cheese
1/2 cup breadcrumbs
1 cup marinara sauce

Steps:

  • Preheat the oven to 375°F.
  • Add the olive oil to a large skillet on the stove over medium high heat.
  • Add the onion and bell pepper, saute 4 minutes. Add the garlic and saute for an additional minute.
  • Add the cooked onion, bell pepper and garlic to a large bowl with the ground beef, Italian sausage, Italian seasoning, ricotta cheese, parmesan cheese and breadcrumbs, combine well.

3/4 c. crushed saltine crackers
1/2 c. chopped onion
2 cans tomato sauce (8 oz each)
1 tsp salt
1/8 tsp ground black pepper
1/2 tsp dried oregano
2 c. shredded Mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl combine all ingredients EXCEPT cheese and 1 can tomato sauce. Shape mixture into a 10'' x 12'' rectangle on a piece of wax paper. Sprinkle 1 1/34 c. cheese over the meat.
  • Roll up the meat, beginning on the long side of the rectangle and pulling back the wax paper as you go. Press ends to seal. Place on large baking sheet.

1/2 cup quick cooking oats
1/2 teaspoon Italian seasoning
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 medium onion, diced

3 string cheeses, cut in half crosswise
2/3 cup ketchup
1 Tablespoon packed brown sugar
1 teaspoon yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Line a large baking sheet with aluminum foil and spray with nonstick cooking spray.
  • In a large bowl, combine egg, milk, oats, Italian seasoning, salt and pepper; stir until well combined. Let sit for 5 minutes to allow oats to absorb liquid. Add onion and ground beef, mixing well. Grabbing baseball-sized portions, form mixture into six small meatloaves (the loaves will shrink slightly as they bake). 1 (18 ounce) can Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
2 sticks mozzarella string cheese
1 lb extra lean ground beef (at least 93%)
1 egg
1/4 cup sliced green onion (4 medium)

Steps:

  • Heat oven to 350°F In large bowl, stir bread crumbs and 1 cup of the cooking sauce until well mixed; let stand 5 minutes.
  • Meanwhile, cut twelve 1/2-inch pieces from cheese sticks (store remaining portion of cheese stick for another use). *Regular mozzarella cheese, cut into 1/2-inch cubes, can be substituted. Easy Cheese Stuffed Meatloaf Recipe image

This amazing stuffed meatloaf has gooey melted cheese inside! So easy to make, nobody can resist the hot cheesy goodness! This is going to be your favorite meatloaf ever!

2 lbs ground beef or turkey
6 cheese sticks (or more if desired)
1/4 cup bread crumbs (optional)
1 small onion (grated)
1/4 cup ketchup
1 1/2 tsp salt
1/4 tsp pepper

Steps:

  • Preheat the oven to 375F.
  • Line the baking sheet with foil or parchment paper.
  • In a bowl, mix the ground meat, bread crumbs, grated onion, salt and pepper.
  • Put half of the meat mixture on a baking sheet and shape into a loaf.
  • Put the cheese sticks on top of the meat mixture.
  • Cover the cheese sticks with the remaining meat mixture and shape into a meatloaf.
  • Put the ketchup on top and spread it to cover the meatloaf with ketchup.
  • Put in the oven and bake for 1 hour.

This is just one of my favorite meatloaves. New pix and slightly tweaked ingr., THE BEST MEATLOAF I'VE EVER EATTEN.

3 lb ground beef, round or sirloin
16 oz italian sausage, sweet
1/2 c celery, minced
1/2 c sweet onion, finely chopped
4 clove garlic, minced
1 c mushrooms, chopped
1/2 c crackers, finely crushed
1 c sundried tomatoes
1 Tbsp mustard, bold & spicy
2 Tbsp worcestershire sauce
2 eggs
1 tsp granulated garlic
1 tsp italian seasoning
1 tsp dried basil
1/2 tsp black pepper
8-10 slice bacon, cut in half
2 pkg budding ham slices ( or proscutto)
6-8 oz provolone. grated
6-8 oz parmesan, grated

Steps:

  • 1. Over low heat, using a little olive oil, saute onions, celery, & garlic till tender.
  • 2. In a large bowl add beef, sausage, (cooled onion, celery, & garlic), mushrooms, crackers, sundried tomatoes, mustard, worchestshire, seasonings eggs.
  • 3. Pat meat out, on a large piece of foil, into a rectangle shape. Place the ham slices from the center outward over most of the meat, leaving an ledge around the meat with nothing on it so you can seal it.
  • 4. Place cheese ontop of ham slices.
  • 5. Using foil as "rolling tool" start rolling meat mixture up over cheese. Seal ends well.
  • 6. You should have a nice log when finished.
  • 7. Place bacon strips on top, wrap foil around loaf, place in baking pan. Bake at 375 for one hour, remove foil from top and sides, bake 30 min more. Broil for a few minutes if bacon needs more browning.

  • Preheat oven to 425 degrees then line a half or quarter sheet pan with foil and spray with nonstick spray. Set aside.
  • Add torn bread plus grated onion and juices into a large bowl then stir to combine and let sit for a minute. Add parmesan cheese, egg, garlic, parsley, and lots of salt and pepper then stir to combine. Crumble ground beef on top then use your hands to combine ingredients. Divide mixture into four equal portions then form each portion into an oval. Use your finger to press an indentation into the center lengthwise then place a halved cheese stick inside the indentation and close the meat around it.
  • Place mini meatloaves onto prepared baking sheet then spread a couple Tablespoons marinara sauce on top. Bake for 22-25 minutes or until cooked through. Serve with additional warmed marinara sauce if desired.
