SPICY ROLL-UPS
A quick and easy party staple! I got this recipe from my cousin's wife. It can be adapted-less or more olives and less or more hot sauce.

Steps:
- In a medium bowl mix cream cheese, chopped olives and pepper sauce.
- Spread a thin layer of the mixture on each tortilla. Starting at one end, gently roll tortilla into a tight tube. Wrap with plastic wrap and chill until ready to serve. To serve, slice into 1 inch slices. Serve slices on their side.

Steps:
- Heat oven to 375ºF.
- Stir first 2 ingredients into sauce. Remove 1/2 cup of the pasta sauce mixture; place in large bowl. Add chicken, 1 cup mozzarella, Parmesan and eggs; mix lightly. Spread 1/2 cup of chicken mixture along the length of each noodle; roll up.
- Spread 1/2 cup of the remaining pasta sauce mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with lasagna roll-ups, seam sides down. Cover with remaining pasta sauce mixture; sprinkle with remaining mozzarella.
- Bake 25 min. or until heated through.

SPICY BROCCOLI-CHEDDAR ROLL-UPS
You've got the appetizer thing all wrapped up-or should we say rolled up? And all you need is broccoli, cheese and some handy-dandy phyllo dough.

Steps:
- Heat oven to 375ºF.
- Combine first 3 ingredients. Stack 4 phyllo sheets, spraying each layer with cooking spray before covering with next sheet. Cover remaining phyllo sheets and set aside until ready to use.
- Spread about 1/3 cup broccoli mixture onto one short side of phyllo stack. Fold in long sides of stack, then roll up starting at topped short side. Place, seam side down, on parchment-covered baking sheets; spray lightly with cooking spray. Cover loosely until ready to bake.
- Repeat with remaining phyllo sheets and filling.
- Bake 14 to 16 min. or until golden brown. Cool slightly. Transfer to cutting board. Use serrated knife to cut each log into 6 slices.

Steps:
- Season the chicken breasts with salt, half of the cumin, and 1 tsp of the chili powder. Add chicken to a skillet and add about 1 cup of water. Cover and cook on med-high heat until cooked through. Add more water if necessary. Once the chicken is cooked, cool slightly and shred with 2 forks.
- In a mixing bowl, combine cream cheese, drained tomatoes, cheese, remaining spices, garlic, cilantro and scallions. Mix together until well-incorporated. Add cooled chicken and stir together.
- Lay out tortillas and divide mixture evenly in the center of each. Spread into a thin layer leaving the edges clean. Roll each tortilla tightly. Do not fold in the ends like you would with a burrito but leave them free. Use a sharp knife to cut into 1" thick slices and transfer to a serving platter. (The end pieces will likely unroll a little so just eat the extras). Cover with plastic wrap and refrigerate until ready to serve.

SOBA NOODLE COLD ROLLS WITH SPICY SESAME SAUCE
Steps:
- For the rolls: Cook the soba noodles according to the package directions in salted water until al dente. Drain and rinse the noodles under cold water.
- Fill a large wide bowl with very warm water. Dip one rice paper wrapper into the water and allow it to soften for a few seconds. Then carefully remove it from the water.
- Top the wrapper with a piece of lettuce, a small handful of the soba, a few pieces of tofu, peach or mango, cucumber, carrot, bean sprouts and a few mint and cilantro leaves.
- Fold in the edges of the wrapper and roll up like a burrito, pressing edge to seal. Set aside into a reusable container lined with a damp paper towel. Continue with the remaining wrappers and ingredients.
- For the dipping sauce: Whisk together the lime juice, sriracha, soy sauce, honey, ginger, sesame seeds and sesame oil.
- Store the rolls and sauce in resealable containers in the fridge until ready to serve, or portion out for lunch. Cut the rolls in half just before serving with the dipping sauce.
SPICY SPRING ROLLS
Steps:
- In a very hot wok, briefly saute the ginger, garlic, green onion and chili paste in the oil. Add the bean sprouts, carrots, savoy cabbage, red pepper and mushrooms and cook at high heat until the vegetables begin to soften. Add the mirin, hoisin sauce and soy sauce. Remove from heat and let cool in a bowl at room temperature. Place the spring roll wrappers under a damp cloth to keep them moist. Place wrappers one at a time on a hard surface with one corner pointing towards you. Spoon cooled ingredients into the center. Add a tablespoon of grated cucumber and a sprinkle of cilantro.
- Fold the side corners into the center. Fold the bottom into the center, making sure the three corners are touching each other. To finish, roll the wrapper away from you and up over the final corner. Store rolls under a damp cloth until ready to fry. Heat enough oil to cover the rolls, and fry seam side down until golden brown. Drain on paper towels and serve with your favorite dipping sauce.

- Place cream cheese in medium sized bowl and allow to sit out to soften a bit.
- Using a garlic press press shallot into cream cheese.
- Remove seeds from red and serrano chilies and dice them very finely.
- Dice chives.
- Dice olives.
- Mix all of the above together.
- Spread in an even layer on tortillas making sure to spread to about 1/8" of the edges.
- Roll it up like a jelly roll.
- Place the rolls in the fridge or freezer depending on your time constraints to firm rolls.
- Take out of fridge or freezer and slice into 1" rounds.
- ENJOY!
