Spicy Roasted Butternut Squash Noodles image

These spicy roasted butternut noodles would be a nice addition to your table this holiday season. They are equally good without the red pepper flakes if you are sensitive to heat.

1 (4 pound) butternut squash
2 teaspoons extra-virgin olive oil
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
½ teaspoon crushed red pepper flakes
1 tablespoon grated Parmesan cheese
1 teaspoon chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Peel butternut squash using a vegetable peeler. Cut the bottom round end off and reserve for later use. Make noodles using the thickest blade of a sturdy spiralizer.
  • Place butternut squash noodles in a large bowl. Add olive oil, salt, pepper, and crushed red pepper flakes. Toss until evenly combined. Divide noodles between 2 large baking sheets.
  • Roast in the preheated oven for 8 minutes. Flip noodles and roast for 4 minutes more.
  • Transfer noodles to a serving dish and garnish with Parmesan cheese and parsley.

Butternut squash noodles are a nutritious alternative to pasta. These tasty roasted vegetable noodles will transform any dish. Here's how to make this gluten-free recipe!

4 cups spiralized butternut squash noodles
3 tbsp olive oil
1/4 tsp sea salt
1/4 tsp fresh ground pepper
1/8 tsp chili flakes (optional)
2 tbsp fresh chopped basil
1/4 cup freshly grated Parmesan cheese

Steps:

  • Heat the oven to 400 and line a baking sheet with parchment paper.
  • Spread the spiralized noodles onto the baking sheet, drizzle with the olive oil and toss well. Add the sea salt, fresh pepper, and chili flakes (if using) and toss again well to combine.
  • Spread the noodles evenly again and roast in the oven for 12-15 minutes, stirring, and rotating the baking sheet at the halfway mark. You want the noodles to be tender and starting to brown in parts but be careful they don't burn.
  • Remove from the oven and serve warm. Top with fresh basil followed by freshly grated Parmesan cheese. Serves 4 as a side dish.
