SPICY ROASTED BABY DUTCH YELLOW® POTATOES

This is a great side dish for an egg breakfast.

Number Of Ingredients 6

2 pounds Baby Dutch Yellow® Potatoes (DYP's), washed and cut in half
(or substitute with Peewee Potato Medley or Pee Wee Dutch Yellow® Potatoes)
2 Serrano Peppers, sliced into rings
1/4 cup Extra Virgin Olive Oil
1 teaspoon Kosher Salt
1 teaspoon Fresh Ground Pepper

Steps:

  • Preheat oven to 425ºF. In a mixing bowl, combine all ingredients.
  • Pour onto a baking sheet and place in the oven. Roast until fork tender and golden brown, about 15-20 minutes. Serve hot.

This is the first recipe I kind of put together myself. I was just trying to use up some potatoes. Omit the onions if you want. I was just trying to get rid of those, too, haha. I also based this on what we had in the house, so it only serves 2. But you can easily double or triple it, I'm sure.

2 red potatoes
1/4 yellow onion, chopped
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
pepper

Steps:

  • Preheat oven to 450º F.
  • Combine all ingredients in a plastic bag. Shake until well mixed.
  • Empty into a baking dish and cook for 30-40 minutes depending on how crispy you like your potatoes.

1 tablespoon Dijon mustard
1 tablespoon vegetable oil
1 clove garlic, minced
1 teaspoon dried tarragon
1/4 teaspoon paprika
1/8 teaspoon red pepper flakes
2 large potatoes, peeled and cut in 1 inch pieces
salt, to taste (optional)

Steps:

  • Combine mustard, oil, garlic, tarragon, paprika, and pepper flakes.
  • Wash potato pieces and pat dry with paper towels.
  • Add to spice mixture and toss to coat well.
  • Very lightly grease a baking sheet.
  • Add potatoes in a single layer.
  • Bake in a preheated 350F oven for approximately 35 minutes or until potatoes are tender.
  • Sprinkle with salt, if desired.

I found this recipe on a bag of baby Dutch yellow potatoes that I recently bought for a different recipe. THIS recipe sounded so good that I changed my menu and prepared this instead. It was a hit with my family. Although it states "baby DUTCH yellow potatoes", I'm sure that this would work as well with any variety of baby potatoes. I haven't tried it with larger potatoes cut down to size. I used fresh lemon juice and I really think that this made the recipe so I can't vouch for it if you use the bottled stuff.

1 1/2 lbs dutch yellow potatoes, halved
1/2 cup butter, melted
2 teaspoons garlic, minced
1 teaspoon salt
juice of one whole lemon
1 tablespoon parmesan cheese, grated

Steps:

  • Preheat oven to 350°.
  • Place potatoes in an 8" X 8" baking dish.
  • In a small bowl, combine melted butter, garlic, salt and lemon juice. Pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  • Bake, covered, for 30 minutes. Uncover and bake and additional 10 minutes or until golden brown.
